Perhaps it’s because we get stuck in a rut where we just put the standard fixin’s on our burgers or we get bored dipping our fries in plain old ketchup. Ask anyone – fry sauce makes most things better. Its a proven scientific fact. Know what else people love? Bacon & jalapeno!

Much like peanut butter & jelly, chocolate + wine, and chips & salsa, bacon was pretty much made to be paired with jalapeno. Let me rephrase. Bacon is perfectly fine on its own. Rather, jalapeno was made to be paired with bacon. Yeah, that’s better.

I feel kind of funny giving you a recipe for fry sauce because it’s mayonnaise and ketchup. We don’t really need a recipe for that, now do we? I suppose the point of this post is more of an idea than a recipe. Because, after all, you can change the quantities of each ingredient and still have something delicious to dip your fries in or smother your burger in.

Speaking of burgers, this is actually a burger that is made of 50% grass fed ground meat and 50% ground up applewood smoked bacon. Yes, you read that right. I fed my family beef and bacon burgers for dinner on a white bun with french fries and fry sauce. Before you brand me as the worst mother ever, I’ll have you know that my kids each drank a glass of freshly pressed juice made from beet greens, apple, carrot, lemon, ginger, and pomegranate seeds before dinner. It’s all about balance, amIright?

Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons cooked crisp bacon, minced
  • 2 tablespoons fresh jalapeno, minced
Instructions
  1. Mix all ingredients together and serve immediately. Use as a dip for fries or onion rings or as a spread for sandwiches and burgers.

If you know me, you know I love my beets.  I had never tried a beet until I was a full fledged adult. I hadn’t even tried them pickled. Beets, like many other vegetables were simply foreign to me. I grew up in a world of canned and frozen veggies. I’m sure I would never have even been willing to try one when I was younger. Fortunately, once I finally started eating beets, I immediately loved them. My kids do too, which has opened up a whole new world for us.

I’ve used them plenty in salads, smoothies, and savory dishes, but I also love to use them in baked goods. Much like cooking with pumpkin, zucchini, or carrot, beets add the most velvety and moist texture.

I even used beets in the icing because, after all, you can’t have pink cinnamon rolls without pink icing.

Everyone loves a good red velvet recipes, but to get a deep red color, you often need to put an abundant amount of artificial dye in your food. I try to avoid that at all costs. If you need anything to turn red, beets are your answer. In addition to natural color, you get to enjoy all of the super food properties from the beets too. I call that a win-win situation.

I was a little worried these cinnamon rolls wouldn’t turn out. I basically had to guess at the total amount of flour to add and based my decision purely on how sticky the dough was as I was kneading it. Then, I was worried when I checked on it after about a half hour had passed into the rising time and it hadn’t grown much, but it really took off after that and quickly doubled in size. By the time I rolled it out, I knew they would be wonderful. The dough, by that point, was so luxuriously soft and the color just couldn’t be beat.  Get it? Beat? Beet?  Funny.

Old fashioned cinnamon rolls are definitely a labor of love due to the amount of time and patience they take, but they are so worth it!

Ingredients
CINNAMON ROLLS:
  • 1 cup (1 large) roasted beets (reserve juice for icing)
  • 1 cup buttermilk
  • ¼ cup warm water, about 105 degrees
  • 1 teaspoon granulated sugar
  • 4½ teaspoons active dry yeast (two 0.25-ounce packets)
  • 1 egg, lightly beaten
  • ½ cup granulated sugar
  • ¼ cup (1/2 cube) melted butter
  • ¼ teaspoons fine grain sea salt
  • 4 1/2 to 5 cups all purpose flour
  • 2 tablespoons cocoa powder
FILLING:
  • 6 tablespoons unsalted butter, softened
  • ¾ cup sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon cocoa powder
ICING:
  • 2 cups confectioners sugar
  • 1-2 tablespoons milk
  • reserved beet juice
Instructions
  1. To roast your beet, wrap in aluminum foil and cook in 400 degree F oven until tender, about 1 hour. Once cool to the touch, you can cut away skin and top with sharp paring knife. Reserve any juice for the icing.
  2. Combine cooled and peeled roasted beet and buttermilk in blender and puree until smooth.
  3. In the bowl of a stand mixer, dissolve the sugar in warm water and sprinkle over the yeast. Let stand until yeast begins to foam, about 5 minutes. Add the beet mixture, egg, sugar, butter, and salt and mix together with paddle attachment.
  4. Add about half of the flour along with the cocoa powder and continue to mix with the paddle attachment. Switch to the dough hook attachment and add the rest of the flour. Knead until dough comes together and forms a ball, about 5 minutes. Transfer dough to a lightly greased bowl and cover in a warm room. Let rise for 1½ to 2 hours until doubled in size.
  5. In a small bowl, use a fork to mix together the sugar, cinnamon, and cocoa powder for the filling.
  6. Divide dough into two portions. On a lightly floured surface, roll each portion into a rectangle about 13" by 20". Spread half of the softened butter on each rectangle and sprinkle with cinnamon sugar mixture, leaving a ½-inch border around the edges. Roll up dough lengthwise into tight logs and place the logs seam side down. Gently cut each log into 12 pieces using a serrated edge knife. Place all 24 rolls on a large parchment lined baking sheet.
  7. Lightly cover rolls and allow rolls to rise again for 30 minutes.
  8. Preheat oven to 400. Bake for 14-18 minutes, until light golden. Do not over bake.
  9. While rolls are cooking, whisk together confectioners sugar, milk, and beet juice in small bowl. Add just enough milk to get it to your preferred consistency.
  10. When rolls, are done cooking, remove from oven and allow to cool slightly before covering with icing.
  11. Store leftovers in the freezer wrapped in foil and reheat in the oven when ready to serve.

Transform a beef roast along with some sauteed peppers and onions and provolone into these tasty Philly Cheesesteak Sliders.I knew before I even started making these little sandwiches that my husband was going to love them. I would say hamburgers are his meat-wrapped-in-bread meal of choice, but these little Philly Cheesesteak Sliders might just come in at a close second. My kids even loved them. That is, after they picked out the peppers and onions because that’s just what they like to do.

Transform a beef roast along with some sauteed peppers and onions and provolone into these tasty Philly Cheesesteak Sliders.I happened to use my pressure cooker to cook my roast, but if you don’t have one or prefer to start cooking something in the morning and have it ready when you come home after work, the slow cooker is the way to go. Whichever way you cook it, you end up with very tender pieces of meat. Now, I really like using a rump roast because its very lean and there’s literally no fat I have to worry about biting into. The problem with lean meat is that it can taste dry, even when cooked in liquid. That is why I have absolutely no problem using butter for the veggies as well as on the buns. I also loved the way the cooking liquid tasted on the sandwiches when I cooked it down a bit but was still able to preserve all the amazing flavor.

I wasn’t sure if the sour dough taste would be too strong for these sliders, but it actually was wonderful, plus the texture of the bread held up really well with all the liquid and they didn’t fall apart.

Use your pressure cooker or slow cooker to transform a roast along with some sauteed peppers and onions and provolone into these tasty Philly Cheesesteak Sliders.

Ingredients
  • 1 (2-3 pound) rump roast
  • 2 cups beef broth
  • 1 (1.12 oz) onion dip mix packet
  • 1 teaspoon garlic powder
  • 2 yellow onions, sliced thin
  • 1 green bell pepper, seeds removed and sliced thin
  • 1 yellow bell pepper, seeds removed and sliced thin
  • 6 T butter, divided
  • 16 heat-and-serve sour dough rolls
  • 5 ounces sliced provolone
Instructions
  1. Slice roast into thin pieces. This works best if the meet is partially frozen. Combine the meat with the beef broth, onion dip mix, and garlic powder. You can cook the meat by using a pressure cooker or slow cooker. If using the pressure cooker, cook on high pressure for 10 minutes and then allow to naturally release pressure for 10 minutes before quick releasing the remaining pressure. If using the slow cooker, allow to cook on low 5-6 hours. Remove cooked meat from liquid and set aside. Cook liquid over medium heat, uncovered, until reduced by half. Set aside.
  2. Using 2 tablespoons of the butter, saute the onions and peppers over high heat in a large saute pan stirring only occasionally just until golden brown, about 10 minutes. Set aside.
  3. Split the rolls. Melt the remaining 4 tablespoons of butter and spread on open surface of the rolls. Heat in preheated 350 degree F oven for about 10 minutes until they just begin to turn golden. Remove rolls from the oven.
  4. Assemble the sandwiches by layering the meat with the reduced cooking liquid, topped with the sauteed peppers and onions, and finally with the sliced provolone. Cover with tops of rolls and continue cooking in preheated oven until cheese has fully melted, about 10 minutes. Serve warm.

However you choose to eat their bread, they can guarantee those you are serving will be grateful.

If you’ve never had a California Club, the ingredients are simple. In fact, it can vary in many ways but there are two ingredients that will define it as a California Club – avocado and sprouts. Now, I much prefer alfalfa sprouts, but they aren’t so easy to find these days. If you aren’t able to find them, microgreens are very similar in taste and texture and make a good substitute. The remaining ingredients are what you’d typically find in a regular club sandwich – turkey, ham (I’m calling the ham part optional because I chose not to include it), bacon, tomato, cheese, mayo, and of course – exceptional bread that not only holds this monster of a sandwich together, but bread that compliments all the wonderful components of this sandwich.

One of the reasons this Butter Bread works so well with this massive sandwich is because it is physically possible to eat if you smash the whole thing down. I watched my husband devour this sandwich in less than five minutes and I couldn’t believe he was able to fit each bite in his mouth. It was quite impressive.

Ingredients
  • 3 slices Martin’s Old-Fashioned Real Butter Bread
  • 4 slices herb roasted turkey
  • 4 slices cooked bacon
  • 4 slices cheddar cheese
  • 1 ripe avocado, thinly sliced
  • 1 ripe tomato, thinly sliced
  • handful of sprouts or microgreens
  • mayonnaise, as desired
Instructions
  1. To layer triple decker sandwich, arrange two slices of your tasty Martin’s Old-Fashioned Real Butter Bread on a flat surface, leaving the third slice for the top.
  2. Divide all remaining ingredients in half and assemble on the two slices of bread. Stack them together and top with remaining piece of Butter Bread.
  3. You may need to hold sandwich together with a bamboo stick as this sandwich will be tall and delicious!

I love to mix up traditional homemade dinners along with a few healthy shortcuts. Using items from the freezer isle not only cut down on my prep time (hello, chopping), but frozen foods like vegetables are always flash frozen when they’re at their peak ripeness, so I would say they’re a much better option than the limp carrot or slimy asparagus in the bottom drawer of my refrigerator.

For this meal, I partnered with Kroger to remind busy families everywhere that the frozen aisle provides delicious meal ideas and solutions that provide value and are healthy. For my chicken pot pie, I went to Fred Meyer and picked up two bags Birds Eye Steamfresh veggies – the sweet peas as well as the gold & white corn, carrots, and asparagus mix. I can’t eat pot pie without a healthy amount of peas!  These veggie packs are awesome because they’re small enough that you’ll never waste half of an uneaten bag to freezer burn and you can’t get more convenient than just throwing the entire bag in the microwave! Aren’t all those bright and colorful veggies gorgeous?

  • two butter pie crusts
  • 2 tablespoons olive oil
  • 1 to 1 1/2 pounds boneless skinless chicken thighs
  • 1 medium yellow onion, diced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups chicken broth
  • 1 cup milk
  • two Birds Eye single packs frozen vegetables (about 20 ounces total)
  • 2-3 teaspoons salt to taste
  • freshly ground pepper
Instructions
  1. Preheat oven to 425 degrees F.
  2. Using a heavy bottom pot or dutch oven, heat oil over medium high heat. Cook chicken until golden brown, about 5 minutes on each side. Remove from pan and set aside on plate. Once chicken cools a bit, shred the meat.
  3. Add onion to dutch oven. While the onions cook and release moisture, scrape the bottom of the pan to release any of the chicken that stuck.
  4. Add butter and flour. Stir and allow to cook for several minutes until fragrant.
  5. Stir in chicken broth and milk. Allow to come to a boil and stir well until the gravy thickens. Add shredded chicken and frozen vegetables and allow to cook in gravy just until vegetables are no longer cold. Add salt and pepper, to taste.
  6. Line a nine inch pie pan with your first crust. Add the chicken filling as full as you can. Add the top crust and pinch the edges together. Cut a few slits in top crust to allow steam to escape.
  7. Cook in preheated 425 degree F oven for 15 minutes, then reduce the heat to 375 degrees F and continue cooking until the crust is golden brown, about 30 more minutes.

These Buffalo Cauliflower Bites taste so much like traditional chicken wings, but are a healthy vegetarian version perfect for a light snack.I’ll admit, cauliflower has not been one of my favorite foods, but much like beets, broccoli, and squash, I have grown to like it throughout my adult years. After I made this recipe, I would actually dare to say that I loved it.

These Buffalo Cauliflower Bites taste so much like traditional chicken wings, but are a healthy vegetarian version perfect for a light snack.I paired my spicy and flavorful buffalo cauliflower bites with a rich and creamy blue cheese dressing as well as some cool, crisp celery sticks that helped mellow the heat from the hot sauce.  Overall, it made a healthy snack. I’m not going to lie – I love a good chicken wing. But, when you think about all that delicious skin that makes the chicken wing so wonderful, replacing it with something like cauliflower is often a good choice.

Ingredients
  • 1 head cauliflower
  • 1/2 cup flour
  • 1/2 cup water
  • 1 T olive oil
  • 1 T garlic powder
  • 1/2 tsp salt
  • 2/3 cup (5ml jar) hot sauce (I prefer Frank's Red Hot)
  • 2 tablespoons butter, melted
Instructions
  1. Preheat oven to 450 degrees F. Heavily grease baking sheet with butter. Divide cauliflower into bite sized chunks.
  2. In a large bowl, combine flour, water, olive oil, garlic powder and salt until well combined. Add cauliflower and gently toss to coat each piece evenly. Transfer coated cauliflower to prepared baking and bake in preheated oven for 15 minutes, turning once halfway through cooking time. Remove from oven.
  3. In large bowl, combine hot sauce and melted butter. Add partially cooked cauliflower and gently toss to evenly coat. Return cauliflower to baking sheet and continue cooking for an additional 20-25 minutes, turning once, until pieces start to turn golden brown.
  4. Remove from oven and serve warm with blue cheese dressing and fresh celery sticks.

I talk about game day food all the time on my blog. Do I ever watch football?  Nope. Not ever, you ask? Nope. Not interested. There are two things I absolutely love about having football on the tv, however.  First is the food (so obvious, right?). What’s not to love about cheese, barbecue, dips, and drinks?  Nothing.  I love every single thing about game day food. I beg you have to know what the second thing I love about having football on tv, right?  Well, its the really cool overhead shots and the fact that they move that line on the ground with each play. Or each down.  Whatever.  I don’t know how it works.  It just blows my mind that they can make that line move under their feet.  I know its digital, but it sure looks real.

I have no idea who’s playing in this year’s superbowl.  I don’t know if its even been determined yet. The only thing I know is that good food and football watching go hand in hand.  Below you’ll find recipe ideas that will make any game day watching experience grand. Enjoy!

I’m a huge fan of champagne. Its one of those drinks that tastes wonderful and gives me quite the buzz. It took me a few years spanning from my early 20s to my early 30s, but I’ve finally perfected the rate and volume at which I can consume champagne to reap the maximum benefit without any of the horrible side effects. There’s another life goal I can scratch off the list!

You know I’m a fan of pomegranates. Its one of those wondrous foods that I completely adore, yet didn’t try until I was well into my adulthood. You know, like beets. I’m not sure I had even heard of a pomegranate, as a matter of fact, until I had been adulting for a good decade or so. Then, once I saw one, it probably took a few years before I found the courage to actually crack one open and extract the seeds.

Now everyone knows mimosas are a classic drink, and I enjoy them morning, noon, and night. Who says they have to be a breakfast drink? Not me. But a basic OJ + champagne cocktail is boring, if you ask me. My secret ingredient to an amazing mimosa is a splash of Grand Marnier. Then, you can totally play around with your creativity and make cocktails like this one. Why not try a grapefruit mimosa?  That’s another favorite.

The best part about this drink, in my opinion, are the pomegranate seeds soaking on top. If you ask me, a bowl of fresh pomegranate seeds soaking in champagne should be considered a complete meal.

Ingredients
  • 2 ounces pomegranate juice
  • 2 ounces orange juice
  • 1 ounce Grand Marnier
  • champagne
  • 10 pomegranate arils
Instructions
  1. In a champagne flute, combine pomegranate juice, orange juice, and grand marnier. Top with chilled champagne and continue to slowly add until the glass if filled. Add pomegranate arils (seeds) at the end.
  2. Serve and enjoy!

I adore salmon. In fact, I hadn’t realized how many salmon recipes I actually had on my own blog until I did a quick search. I suppose living in Portland, Oregon, has spoiled me. I also love little appetizers that can be enjoyed in two attractive bites or shoved entirely in my mouth when no one is looking. I love these little crostinis because they really couldn’t be easier to make, but they’re just so darn pretty! Doesn’t garnish make everything better?

I modeled this recipe after my smoked salmon dip which is the food equivalent to crack, in my opinion. Seriously, don’t put that stuff in front of me because I will shock and awe everyone around me when they see how much salmon dip I can consume.

Similar to my dip, this recipe has cream cheese, fresh dill, a little kick from fresh jalapeno, and lemon juice. If you’re eating salmon, you must have lemon and dill. That’s just a fact. Don’t even try arguing with me. I also do love me some capers with fish. All the flavors blend together oh-so-perfectly.

Yields: 2 dozen
Ingredients
  • 1 baguette, sliced 1/4 inch thick
  • 2 tablespoons olive oil
  • 5 ounces wild smoked salmon
  • 8 ounces cream cheese, room temperature
  • 1 jalapeno, minced
  • 4 sprigs fresh dill, stems removed and minced
  • 1 lemon, juiced
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon salt
  • Garnish with capers and more fresh dill
Instructions
  1. Preheat oven to 350 degrees F. Coat both sides of bread slices with olive oil. Arrange in single layer on baking sheet and bake in preheated oven for 15 minutes, turning after about 10 minutes. Allow to cool.
  2. Arrange toasts on a platter with a piece of salmon on top of each one.
  3. In a small bowl, mix together cream cheese, jalapeno, dill, lemon juice, garlic, and salt. Either spoon a small amount on top of each crostini or squeeze out of a plastic bag with the corner snipped off.
  4. Top with capers and additional dill.

This rich and Creamy Chicken Soup, loaded with veggies, is a healthy and easy to make meal that your entire family will love.This is the time of year I love to cook big meals. Gone are the days of endless fresh and local produce choices. Winter time in the Pacific Northwest is a time when most everything stops growing and we have to rely on what I consider the basics for my fruit and vegetables. That is why I’m especially fond of hearty soups. Not only do they incorporate lots of fresh veggies, but they are so comforting and satisfying, its easy to forget that we still have many cold and wet months ahead of us before the local produce makes its way back.

This rich and Creamy Chicken Soup, loaded with veggies, is a healthy and easy to make meal that your entire family will love.This time of year I love stocking my freezer with prepared meals. I don’t know if it has to do with the possible threat of getting stuck at home because of that once a year snow storm, but it just makes me so happy to cook meals in big batches and store them for another day. This soup is a perfect freezer meal because you can double or triple the batch and then just freeze what you don’t plan on eating that night for another day. Not all soups, especially ones with pasta, freeze that well. This soup, however, does.

This rich and Creamy Chicken Soup, loaded with veggies, is a healthy and easy to make meal that your entire family will love.I prefer to use chicken thighs because the meat is so flavorful and it shreds really well. Even though I add a bit of olive oil to my pan, the chicken almost always sticks. Have no fear… the part that sticks to the bottom is the best part!  I use a little white wine to release all of that wonderful flavor and I can definitely taste it in the final soup. I prefer to chop all of my veggies by pulsing them in the food processor. Not only does that save me time, but I think having a wide variety of sizes, from minced to chopped, not only enhances the texture of the soup but also the taste.  I also continue to use the same pot to cook the chicken, then the vegetables, then the roux which turns into a cream gravy and then eventually the soup. By keeping all the ingredients going in the same pot, you don’t lose any of those wonderful flavors along the way.

Ingredients
  • 1 pound skinless chicken thighs
  • 1 tablespoon olive oil
  • 1/2 cup white wine
  • 5 T butter, divided
  • 1 onion, minced
  • 4 celery stalks, diced
  • 2 large carrots, peeled and diced
  • 3 cloves garlic, minced
  • 6 T flour
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 4 cups chicken broth
  • 1 teaspoon salt, to taste
Instructions
  1. In a heavy bottom dutch oven over medium high heat, cook chicken thighs in olive oil for about 15 minutes, flipping once. Remove from heat and allow to cool slightly on a plate. The chicken likely stuck to the pan. Deglaze the pan by adding the white wine over low heat and scraping the bottom of the pan until all of the cooked bits have been loosened. Transfer the cooked chicken bits in white wine to a separate cup.
  2. Add one tablespoon of the butter to the dutch oven and and set heat to high. Add onions, celery and carrot and allow to cook until slightly golden brown while stirring only occasionally for a total of about 10 minutes. While vegetables are cooking, shred chicken meat. When vegetables have finished cooking, remove them from the dutch oven and set them on the same plate as the chicken.
  3. Return the pan to the stove and melt the remaining 4T of butter over medium high heat. Add the garlic and allow to cook for about a minute, then add the flour and stir to combine to make a roux. Allow to cook for a few minutes until fragrant.
  4. Add the milk and heavy cream to the roux and whisk constantly until thoroughly mixed. Allow to cook while constantly whisking until thickened. Whisk in the chicken broth. Add shredded chicken and cooked vegetables to the broth and stir. Add salt, to taste, and pepper, as desired.
  5. Serve with a warm crusty bread or some rosemary crackers.
