    Wilted Garlic Spinach

    Hot and flavorful Wilted Garlic Spinach is an easy and healthy side dish that compliments any dinner, and the best part is that it takes minutes to prepare.

    I've always loved spinach. Watching Popeye squeeze that green stuff out of the can and into his mouth actually would make my mouth water. When I was a kid, we only ever ate frozen spinach. I don't think I even knew what fresh spinach looked like until I was an adult. This wilted garlic spinach is so simple and easy to make, yet its the perfect vegetable side dish. The trick to perfection is to cook the garlic low and slow. This will infuse the flavor in the butter without burning it. Then, all it takes to wilt the spinach down is to cover it with a lid and let it steam for awhile.  When I make my homemade salmon patties, I almost always make this spinach to go right alongside it.  These greens also go tremendously well with some horseradish mashed potatoes.wilted spinach with garlic on white dish

    Ingredients

    • 2 tablespoons butter
    • 3 cloves garlic (minced)
    • 10 ounces fresh spinach
    • salt and pepper to taste

    Instructions

    • In large pot, melt butter over low heat. Add garlic and cook over very low heat just until golden. Add spinach and toss in garlic butter to coat, then cover tightly with lid. Continue to cook over low heat until spinach is completely wilted, about 3-5 minutes. Drain off any excess liquid before serving.

    Notes

    Spinach cooks down by a lot. If you've never cooked fresh spinach, don't be caught off guard by the major difference in volume.

      I think I would like to have my spinach just dumped on a plate then pour over the creamed spinach sauce because it sounds so good.
