Why This Recipe Works

  • Simple ingredients – All you need are the potatoes, some olive oil, a bit of salt, and some garlic. Of course, you can always add more seasonings or favorites like parmesan cheese, but they really don’t need anything more.
  • Easy clean up – You’ll only have to wash one bowl!
  • Even better leftover – They only thing better than a roasted fingerling potato is a twice baked fingerling potato. Plan on making extra if you want to enjoy leftovers.

Ingredients Needed

For the base recipe, you will only need fingerling potatoes, which are sometimes referred to as baby potatoes, olive oil, salt, and garlic. I chose to use a rosemary infused salt for extra flavor.

How to Make Roasted Fingerling Potatoes

  1. Coat potatoes: Using a large bowl, toss the potatoes with the olive oil and the salt. Save the bowl for later.
  2. Roast: For easy cleanup, line a small rimmed baking sheet with parchment paper. Add the prepared potatoes to the sheet in a single layer. Preheat oven to 400°F. Roast potatoes for about 30 minutes. You can give the sheet a shake half way through so that they are evenly crisp.
  3. Add garlic: Remove the potatoes from the oven, place them back in the bowl, add the garlic and toss them around to coat.
  4. Finish roasting: Pour them back on the baking sheet and scrape all of the oil and garlic out of the bowl and add it to the potatoes. Continue roasting them in the oven until the garlic is golden brown and fragrant, another ten minutes or so.

  • 1/2 teaspoon salt rosemary salt recommended
  • 3 cloves garlic minced
