I was in the mood for something boozy and something tropical. I was staring at the coconut rum in my cupboard, daydreaming about my upcoming tropical vacation. Then, I just threw a few things in the blender and I was pleasantly surprised with the outcome.
This frothy drink consists of three simple ingredients: coconut rum, fresh lime juice, and coconut cream (ice doesn’t count as an ingredient, does it?). Its not a sweet drink. The lime definitely makes it a bit tart, but I like it that way. The tart flavor actually took my husband off guard because he saw the drink and just expected a sweet coconut flavored concoction. He did like it, but it took him a minute or two to wrap his mind around the tart coconut lime combination. I’m long overdue for a relaxing tropical vacation and I finally got our escape to Hawaii scheduled. I am well prepared to drink a variety of tropical cocktails during that week for the sole purpose of food blog inspiration. Hey – its a valid reason, wouldn’t you agree? Same goes for the constant amount of delicious food I’ll be shoving into my face. Basically, if I’m not floating in the warm tropical waters or sleeping, I plan on eating and/or drinking at all times. <<< THAT is my ideal vacation.
Coconut Lime Daquiri
- 4 ounces cream of coconut
- 1 ounce fresh lime juice
- 2 ounces coconut rum
- Blend all ingredients until smooth. Serve immediately.
