Ingredients
- 24 ounces canned salmon 3-8oz cans with no skin/bones or 2-14.75 cans with skin/bones, drained, red or pink salmon
- 2 eggs if the patties won't hold their shape, you'll need to add another egg, egg yolk, or a tablespoon of mayonnaise
- 6 green onions minced
- 1/2 cup panko bread crumbs
- 1/2 cup grated parmesan
- 1 lime juiced
- 4 tablespoons avocado oil can use olive oil, increase oil if you like them extra crispy
Instructions
- Drain salmon. If using canned salmon that contains bones and skin, you can either remove them or crush the bones and mix everything together.
- In a large bowl, combine the 24 ounces canned salmon, 2 eggs, 6 green onions, 1/2 cup panko bread crumbs, 1/2 cup grated parmesan, and the juice from 1 lime. Use your hands to combine the mixture. Form them into 8 patties that are no more than one inch thick. If making salmon burgers, you can make the patties larger to fit the bun.
- Heat a large skillet over medium-high heat. Add the 4 tablespoons avocado oil. When the oil is hot enough to bubble when a bread crumb gets tossed in, add your salmon patties. Be sure to leave enough room to allow space in between each patty. If your pan isn't large enough, you may need to cook them in two batches. Cook until golden brown, about 5-10 minutes, then flip and cook until golden brown on the other side.
- Serve warm. They also taste excellent cold on top of salad.

Great recipe. Cook time of 5-10 minutes way to long that ended up burning the patties. for me. Probably should be half that time.
Cook time definitely can vary depending on your stove and your pan. I cook on induction and it can be very different than electric or gas.
Excellent. Added red pepper an and a bunch of herbs from my garden and did not use the cheese minimal Panko. They came out really tasty. I doubled the recipe and froze the leftovers. they came out great in the air fryer.

Can we freeze leftover cooked patties? Or will freezing ruin the texture such that it will not be good? I’m okay with it not being as crispy, but if it gets actually weird, I’d like to know
We made these tonight with 6 tb Hellman’s vegan mayonnaise as an egg substitute (allergies), baking them (took about 30 minutes total), 3 packets of true lime + 2 TB water, and extra oil for baking. My toddler enjoyed the uncooked mix with some crackers (no raw egg= safe) as well as the cooked version. Thank you for this easy recipe we can make with pantry staples and, with our modifications, enjoy two ways.
Apologies for the late reply! Summer has had me away from the computer for a bit… You can freeze them but I would recommend getting all of the air out of the packaging to prevent freezer burn. I think they’re better frozen uncooked, but cooked is fine.
This is the exact recipe my grandfather used to use, only he used Saltine crackers. Brings me back to childhood. Great comfort food for me. Excellent recipe.
I don’t own a cast iron skillet ( although I could have borrowed mom’s ) , but these turned out delish all the same ! Great recipe when you’re trying to make something for supper quickly, but still want something tasty. Also very economical ! I’ve printed this one , it will be used again.
