This Refreshing Raspberry Mule combines lime sweetened raspberry puree with vodka and ginger beer to create a tasty, refreshing, and easy to make cocktail.

This cocktail was a bit of a no brainer. It was easy to throw together. A traditional Moscow Mule is the combination of lime juice, vodka, and ginger beer. I just prettied it up a bit by adding tart raspberries and sweet simple syrup. You could totally make this kid friendly by omitting the vodka because ginger beer, after all, has no more alcohol than root beer does. I made this drink for my husband and asked him to describe it for me. He thought long and hard and he finally came up with his answer: “good”. Not super helpful when I was searching for words to include in my description of how wonderful it is.  After some more prying, I finally got him to say “refreshing”, so that is why I called it a Refreshing Raspberry Mule. Ingredients 

  • 1 cup raspberries 12-15
  • 1 ounce lime juice
  • 1 ounce simple syrup
  • 3 ounces vodka
  • 3 ounces ginger beer

Instructions 

  • Combine raspberries, lime juice, and simple syrup in blender and process until smooth, about 30 seconds. Pour mixture through a fine mesh sieve to separate any seeds. Combine strained raspberry juice with vodka. Refrigerate or freeze until ready to serve.
  • When ready to serve, combine vodka raspberry juice with ginger beer in an ice filled glass. Enjoy!

Notes

If you don't have simple syrup on hand, its easy to make. Just combine equal volumes of water and sugar in a saucepan and heat while swirling just until sugar dissolves. Cool before using and store in air tight container in the refrigerator.
