Ingredients

coconut milk
full fat, not light

cup
strawberries
about 10 small strawberries, stems removed
1/4
cup
pure maple syrup
1/2
cup
chia seeds
To garnish:
additional chopped fresh strawberries
sweetened toasted coconut
if desired
Instructions
Combine
14.5 ounces coconut milk
,
1 cup strawberries
, and
1/4 cup pure maple syrup
in blender. blend until smooth.
Stir in
1/2 cup chia seeds
and refrigerate until it gels, about two hours.
To serve, layer pudding with
additional chopped fresh strawberries
and
sweetened toasted coconut
. Enjoy!
Notes
This pudding stores beautifully in the fridge for a few days.
Portion it out into jars and it’s ready whenever you are.
