  • 14.5 ounces coconut milk (full fat, not light)
  • 1 cup strawberries (about 10 small strawberries, stems removed)
  • ¼ cup pure maple syrup
  • ½ cup chia seed

To garnish:

  • Additional chopped fresh strawberries
  • Sweetened toasted coconut (if desired)


  • Combine coconut milk, whole strawberries, and maple syrup in blender. blend until smooth.
  • Stir in chia seed and refrigerate until it gels, about two hours.
  • To serve, layer pudding with chopped strawberries and toasted coconut. Enjoy!
