These oven baked Breakfast Potatoes are soft and tender on the inside, crisp on the outside, and extremely flavorful. Quick, easy, and perfect every time!
Preheat oven to 400°F. Prepare rimmed baking sheet by lining with parchment paper.
Chop: Cut 2 pounds potatoes and 1 small yellow onion into bite sized pieces, skin optional
Soak: Place potatoes and onions in large bowl of cold water for at least 10 minutes (up to overnight). Drain, rinse, and shake off excess water. (Note: You have the option to only soak the potatoes and not the onion. This will allow you to start cooking the potatoes first which will prevent the onions from getting overly cooked and will also result in a stronger onion flavor.)
Prepare potatoes: In large bowl, combine all ingredients and toss well to evenly coat potatoes and onion with 1-2 tablespoons olive oil and 2 tablespoons fresh rosemary, 1 teaspoon smoked paprika, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground pepper.
Bake: Arrange in single layer on prepared baking sheet. Bake in preheated oven until tender and golden brown, flipping half way through cooking time, for a total of 30-40 minutes. (Note: If adding onions separately, cook the seasoned potatoes for about 15 minutes, and then add the onions and continue cooking until done.)

Variations:
Types of potatoes: The best potatoes to use are either red potatoes or Yukon golds. This is because their skin is thin enough to leave on. Russet potatoes can be used but may taste best if some or all of the skin is removed. If sweet potatoes are your preferred breakfast food, you can certainly use them as well.
Vegetables: In addition to the onion, bell peppers also make a fantastic addition. Either green bell pepper or red bell pepper work best. Want a more mild version of onion? Try swapping the yellow onion out with red onion or scallions.
Seasonings: For additional flavor, you can add garlic powder, cayenne pepper, onion powder, red pepper flakes, chili powder, hot sauce, or other fresh herbs.
Cooking Tips:
Add onion later: Cook potatoes without onion (and bell pepper, if using) for about 15 minutes before adding the vegetables. This will prevent the vegetables from over-browning.
Air Fry or Convection: If your oven has a convection setting or if you have an air fryer, you can use that to make these easy breakfast potatoes even more crispy. Note cooking time may be reduced.
