This crunchy and gooey triple threat grilled cheese uses gouda and sharp cheddar melted in between two parmesan encrusted grilled pieces of sourdough.

Ingredients
2tablespoonsparmesanfreshly grated from a block or mince pre-grated
1tablespoonmayonnaise
8slicesbreadthick cut sourdough is the best, but Texas toast works great too
4thick slices sharp cheddarcan also use 4 ounces freshly grated
4thick slices goudacan also use 4 ounces freshly grated
Instructions
Prepare griddle: Preheat griddle to low heat. The best grilled cheese cooks low and slow so that it turns a golden toasty brown but the cheese is completely melted.
Prepare bread: Combine parmesan and mayonnaise. Spread evenly over one side of each slice of bread.
Cook sandwich: Place half of the prepared bread, with the parmesan and mayonnaise side down, on the hot griddle surface. Layer with slices of cheddar and gouda. Top with the remaining piece of bread, parmesan and mayonnaise side up.
Flip: When the bottom has turned a lovely golden brown, use a spatula to flip but do not press down on the sandwich. Allow the second side to toast until the bottom is golden brown and the cheese inside is fully melted.
Serve: Carefully cut in half with a serrated edge knife and serve immediately.
