Pomegranate Vinaigrette

This Pomegranate Vinaigrette is a fresh and healthy way to dress your dark leafy green salads.

  • 1/2 cup pomegranate arils
  • 1/3 cup extra-virgin olive oil high quality
  • 2 tablespoons white wine vinegar or white balsamic vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Freshly ground pepper to taste


  • Press pomegranate seeds thru a fine wire mesh sieve until you have 2 tablespoons of juice. Be prepared to get some splattered on your hand.
  • Add the olive oil, vinegar, sugar, salt and pepper to the pomegranate juice. Whisk until blended. Makes 1/2 cup. Add to your favorite salad.
