Vinaigrette:
1cupfresh blueberries
2tablespoonswhite balsamic vinegar
1tablespoonfresh lemon juice
2tablespoonshigh quality olive oil
1shallotminced
8leavesfresh basilamount can vary based on preference
1/4teaspoonsalt
freshly ground black pepper
Summer salad:
4cupssalad greens
1/2cupblanched asparaguschopped
1/2cupsugar snap peaschopped
1/4cupgoat cheesecrumbled
1/4cupfresh blueberries
1/4cupslivered almonds
Instructions
To make vinaigrette, combine all ingredients in blender. Process until smooth.
1 cup fresh blueberries, 2 tablespoons white balsamic vinegar, 1 tablespoon fresh lemon juice, 2 tablespoons high quality olive oil, 1 shallot, 8 leaves fresh basil, 1/4 teaspoon salt, freshly ground black pepper
To make salad, pile as much or as little of the salad ingredients, according to preference, in a large bowl and top with vinaigrette.
