Vinaigrette:

fresh blueberries

white balsamic vinegar

fresh lemon juice

high quality olive oil

shallot
minced

freshly ground black pepper
Summer salad:
4
cups
salad greens
1/2
cup
blanched asparagus
chopped
1/2
cup
sugar snap peas
chopped
1/4
cup
goat cheese
crumbled
1/4
cup
fresh blueberries
1/4
cup
slivered almonds
Instructions
To make vinaigrette, combine all ingredients in blender. Process until smooth.
1 cup fresh blueberries,
2 tablespoons white balsamic vinegar,
1 tablespoon fresh lemon juice,
2 tablespoons high quality olive oil,
1 shallot,
8 leaves fresh basil,
1/4 teaspoon salt,
freshly ground black pepper
To make salad, pile as much or as little of the salad ingredients, according to preference, in a large bowl and top with vinaigrette.

1/2 cup blanched asparagus,
1/2 cup sugar snap peas,
1/4 cup goat cheese,
1/4 cup fresh blueberries,
1/4 cup slivered almonds
