Ingredients
1cupunsalted buttersoftened
8ouncescream cheesesoftened
1teaspoonpure vanilla extract
4cupsconfectioners sugar
1.2ouncefreeze dried blueberriescrushed (one whole package from Trader Joe's)
Instructions
Using stand mixer with paddle attachment, cream together 1 cup unsalted butter and 8 ounces cream cheese. Just when you think its well blended, scrape sides and continue mixing for another 2-3 minutes. Add in 1 teaspoon pure vanilla extract and mix well.
Add 4 cups confectioners sugar, 1 cup at a time, mixing well after each addition. Be sure to start off mixing slow and then increasing speed so you don't make a big mess.
Add crushed 1.2 ounce freeze dried blueberries and mix well.
Makes enough for a mountain of frosting on 12 cupcakes or a moderate amount on 24 cupcakes.
