Nothing says fall quite like apples, and what better way to celebrate the change in seasons than with these soft and delicious homemade Applesauce Muffins.
Preheat oven to 350°F. Prepare 12 muffin cups with paper liners or grease them with butter.
In a large mixing bowl, combine 2 cups all-purpose flour, 1 cup walnuts(coarsely chopped), 2/3 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 tablespoon pumpkin pie spice.
In a separate bowl, combine 1/4 cup canola oil, 1 large egg, and 2 cups unsweetened applesauce.
Add the wet ingredients to the dry ingredients and stir just until combined. The batter will be very thick.
Spoon batter into muffin cups.
Bake for about 25 minutes or until a toothpick inserted comes out clean. Remove the muffins from the muffin tins as soon as they are cool enough to handle and allow them to fully cool on a wire rack.
