Instructions
Toast the coconut and pecans: This step is optional but highly recommended. Preheat oven to 350°F. Spread 1 cup shredded sweetened coconut and 1/2 cup raw pecans onto a baking sheet. Toast in preheated oven for 15 minutes, stirring every few minutes to ensure everything browns evenly and does not burn. Allow the coconut and pecans to cool completely completely.
Make the base: In the bowl of a stand mixer or in a standard bowl using a hand mixer, beat 4 ounces cream cheese until light and fluffy. Mix in 8 ounces sour cream, 2 tablespoons granulated sugar, and 1 teaspoon vanilla extract and beat until smooth.
Mix in the remaining ingredients: Fold in 11 ounce can mandarin oranges in light syrup, 2 cups fresh pineapple, the toasted pecans and coconut, and 1 1/2 cups mini marshmallows.
Notes
Can be served immediately but best if refrigerated and chilled overnight, then served the next day.
