Puff Pastry Wrapped Baked Brie with Caramelized Onions
This Baked Brie, topped with balsamic caramelized onions and wrapped in a puff pastry crust, is a rich and elegant appetizer.

- 4 tablespoons butter
- 2 medium yellow onions sliced thin
- 1 teaspoon kosher salt
- 1/2 teaspoon pepper freshly ground
- 1 teaspoon granulated sugar
- 2 tablespoons balsamic vinegar
- 1 teaspoon fresh thyme
- 13.4 ounce brie wheel size can vary but this is what I found at Costco
- 9 ounce puff pastry I used one sheet from a Trader Joe's Puff Pastry package
- 1 egg slightly beaten
Melt butter in large sauté pan over medium high heat. Add onion slices with salt and pepper, toss to coat in melted butter, and then stir occasionally only to prevent burning.
Cook until the onions turn a deep golden brown and have caramelized. This can take 15-25 minutes. Once caramelized, add the sugar and balsamic vinegar.
Stir to combine and cook for several more minutes until all of the moisture has evaporated. Set aside and allow to cool.
Unfold puff pastry sheet and set out on large cutting board. Roll the puff pastry to a large enough square so that it can fully wrap around the brie, onions, and fresh thyme. Set the brie wheel on the center of the puff pastry and top with the caramelized onions.
Pull the corners up on the puff pastry so that they meet in the middle and crimp together to form a tight seal. If there are any openings, the brie will spill out when you bake it.
Use a pastry brush to cover the puff pastry. This will give you a rich golden brown color as it cooks. You need not use all of the egg.
Carefully transfer the covered brie to a baking sheet lined with parchment paper or a silicon mat. Bake in a preheated 400° F oven for 30-40 minutes or until it is golden brown. Serve warm with sliced apples.
