Watermelon Mint Agua Fresca

Watermelon Mint Agua Fresca is quick and easy to make and extra refreshing on a hot summer day. Blend watermelon, water, and simple syrup with mint to enjoy!

Ingredients

  • 4 cups watermelon cubes
  • 1/4 cup sugar
  • A couple of sprigs of mint about 10 leaves
  • water
  • ice

Instructions

  • Make simple syrup: combine 1/4 cup water and 1/4 cup sugar in pot over low heat. Bring to boil and reduce heat to lowest possible setting while maintaining a boil. Cook 2-3 minutes. Remove from heat and add mint leaves, stems removed, and allow time for syrup to cool and infuse with mint.
  • Blend watermelon, 1 cup water, 1 cup ice, and mint infused simply syrup until smooth. Serve over ice.
  • Optional: add vodka or tequila for a tasty summer cocktail

Notes

The proportions in the recipe are completely variable depending on your tastes. I used leftover watermelon I had sitting in the frig and it amounted to 4 cups so that's what I used. The sugar made this very sweet which complimented the booze nicely, but without booze you may prefer less sugar.
I used a seedless watermelon and just blended them up.
