Preheat oven to 400 degrees F.
In a small baking dish, toss peeled and chopped beets and garlic cloves in olive oil. Roast in preheated oven until very tender, stirring occasionally, about 30-40 minutes. Remove from oven and allow to cool completely.
Process roasted beets and garlic in a food processor along with additional tablespoon of olive oil until smooth, scraping sides when needed.
Goat cheese is hard to spread when its cold, so heat in microwave for only 5 seconds.
Arrange crackers in a single layer. Either spread goat cheese on crackers or put in small plastic bag, snip the corner, and squeeze cheese into a circle. Repeat with garlic beet puree.
Top each crisp with a small sprig of fresh thyme.
