Roasted Beet Chevre Crisps

Roasted Beet and Chèvre Crisps are delicious bite sized appetizers made of roasted garlic and beets over creamy goat cheese. Perfect for Fall entertaining.

Ingredients

  • 1 bunch beets peeled and chopped
  • 1 head of garlic skin removed
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil divided
  • 4 ounces goat cheese
  • Crackers I used Trader Joe's Pita Bite Crackers
  • Fresh sprigs of thyme

Instructions

  • Preheat oven to 400 degrees F.
  • In a small baking dish, toss peeled and chopped beets and garlic cloves in olive oil. Roast in preheated oven until very tender, stirring occasionally, about 30-40 minutes. Remove from oven and allow to cool completely.
  • Process roasted beets and garlic in a food processor along with additional tablespoon of olive oil until smooth, scraping sides when needed.
  • Goat cheese is hard to spread when its cold, so heat in microwave for only 5 seconds.
  • Arrange crackers in a single layer. Either spread goat cheese on crackers or put in small plastic bag, snip the corner, and squeeze cheese into a circle. Repeat with garlic beet puree.
  • Top each crisp with a small sprig of fresh thyme.
