This Raspberry Moscow Mule is a fruity twist on the classic cocktail. It is sweet, tart, and incredibly refreshing. It comes together quickly with just five simple ingredients and makes a great summer drink for one or a crowd.
Combine 1 cup raspberries, 1 ounce lime juice, and 1 ounce simple syrup in blender and process until smooth, about 30 seconds.
Pour mixture through a fine mesh sieve to remove any seeds. Combine the strained raspberry juice with 3 ounces vodka. Refrigerate or freeze until ready to serve.
When ready to serve, combine vodka raspberry mixture with 3 ounces ginger beer in an ice filled glass. Enjoy!
Notes
No blender? Muddle the raspberries thoroughly with the lime juice and syrup, then strain.
Making it for a crowd? Just multiply the raspberry-lime puree and vodka by the number of servings you need, then mix with ginger beer right before serving. Tip: Mix the raspberry-vodka base in a pitcher and keep it chilled. When guests arrive, pour it over ice and top each glass with cold ginger beer.
Want to keep it alcohol-free? Skip the vodka and pour the raspberry puree over ice with ginger beer for a super fun mocktail.
