Easy Bean and Bacon Soup

Ingredients

  • 8 ounces bacon ends and pieces cooked
  • 1 small onion diced
  • 2 carrots chopped
  • 1 stalk celery chopped
  • 1 15 ounce can black beans, drained and rinsed (I used Trader Joe's Cuban Black Beans)
  • 1 14 ounce can plum tomatoes, with juice (I used half of a 28 ounce can)
  • 1 1/2 cups beef broth
  • 1 teaspoon salt
  • pepper as desired

Instructions

  • Cook bacon according to post instructions. Set cooked bacon aside on a paper towel to drain and reserve a tablespoon of the bacon drippings.
  • Saute the onion, celery, and carrot in the bacon grease over medium heat, stirring occasionally, until slightly brown, 5-8 minutes.
  • Add all remaining ingredients except for the bacon. Cook over medium heat 20-30 minutes until the veggies are nice and tender.
  • Use a potato masher to mash the soup. This will thicken it up and make it more stew-like.
  • Top with bacon.
