In one pot, boil water with salt over high heat. Add the oats, stir, and reduce heat to medium low. Stir occasionally.
In a separate pot, combine pears, vanilla bean, and maple syrup. Heat over medium heat, smashing the pears and vanilla bean while stirring. Cook until very soft and tender, about 10 minutes.
Once oatmeal is done, add pear mixture to the oats. Top with pomegranate seeds and walnuts.
