Oh yes. Beer Bacon Cheddar Soup has everything a rich and delicious soup should have including pale ale, applewood smoked bacon, & a cheddar gruyere blend.

Ingredients

  • 8 ounces bacon ends and pieces
  • 2 small stalks of celery finely chopped
  • 1 small onion finely chopped
  • 2 large cloves garlic minced
  • 2 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 bottle 12-ounce beer (I used an Oregon pale ale)
  • 3 cups chicken broth I used homemade
  • 1 cup heavy cream
  • 12 ounces cheese grated (I used Trader Joe's Cheddar Gruyere blend)
  • Salt to taste
  • Freshly ground pepper

Instructions

  • Cook bacon ends and pieces according to directions in post (only use half the pack for this recipe). Remove the bacon from the pot and set aside. Discard all but 2 tablespoons of the bacon grease.
  • Heat the bacon grease over medium high heat. Cook onion and celery until soft, about 5-7 minutes. Add garlic and cook for another 1-2 minutes. Add butter, melt, then add flour and stir. Allow the flour to cook for several minutes. Add beer and chicken broth. Bring soup to a bowl and allow to boil and cook down for about 15 minutes.
  • Turn heat to low, add heavy cream and cheese, stir until well blended and the cheese has melted.
  • Serve with diced jalapeno and beer bread.
