Oh yes. Beer Bacon Cheddar Soup has everything a rich and delicious soup should have including pale ale, applewood smoked bacon, & a cheddar gruyere blend.
Cook bacon ends and pieces according to directions in post (only use half the pack for this recipe). Remove the bacon from the pot and set aside. Discard all but 2 tablespoons of the bacon grease.
Heat the bacon grease over medium high heat. Cook onion and celery until soft, about 5-7 minutes. Add garlic and cook for another 1-2 minutes. Add butter, melt, then add flour and stir. Allow the flour to cook for several minutes. Add beer and chicken broth. Bring soup to a bowl and allow to boil and cook down for about 15 minutes.
Turn heat to low, add heavy cream and cheese, stir until well blended and the cheese has melted.
