HOW TO MAKE MARRY ME CHICKEN

WHAT YOU'LL NEED:

+ Sundried tomatoes + Chicken breasts + Butter + Onion + Heavy whipping cream + Pasta + Italian seasoning

Prep sundried tomatoes: Separate sundried tomatoes from oil with a colander. Reserve oil for the recipe. Then measure out about ½ cup of sundried tomatoes and dice into tiny pieces.

Prep chicken: Place boneless skinless breasts in between two pieces of plastic wrap. Use a meat mallet to flatten to about a ½" to ¾" uniform thickness. Set tenderized chicken on a plate and cover both sides with salt and pepper.

Dredge in flour: Add flour to a shallow dish and dredge both sides of each piece of chicken in the flour. Shake off any excess. Set flour-coated chicken on a clean dry plate and discard excess flour.

Brown chicken: Heat a large cast iron skillet. Add 3 tbsp of reserved sundried tomato oil to pan. When oil is hot, add chicken pieces. Allow to cook until golden brown. Move around to prevent sticking. Tent with foil when done to keep warm.

Cook  pasta: When the chicken is just about done, add pasta to boiling water. It should be done right around the same time the chicken and cream sauce are done.

Sauté onions and garlic: Add 2 tbsp of oil to hot pan along with diced onion. Stir to coat in oil and continue to occasionally stir to prevent burning. After about 5 mins, add garlic and allow to cook for another couple of mins.

Create sauce: Reduce heat to medium. Add chicken stock and heavy cream to pan. Stir with flat bottom wooden spoon to deglaze. Add minced ½ cup of sundried tomatoes, Italian seasoning, and finely grated parmesan cheese. Stir well to combine.

Cook with chicken: Add cooked pieces of chicken back to sauce. Reduce heat to lowest level. Turn chicken pieces. The sauce is ready to serve when the chicken is heated through and has an internal temp of 165°F. Taste the sauce and season with salt and pepper.
