Vanilla Pear Prosecco, made with fresh pears, whole vanilla beans, and a crisp bubbly Prosecco, is the perfect fall and winter holiday cocktail! Vanilla Pear Prosecco will tickle your taste buds. Partly because of the sweet vanilla bean infused pear nectar, partly because of the light and airy Riondo Prosecco bubbles. I’m always looking for easy cocktail ideas that are perfect for two occasions: 1) Entertaining. Who doesn’t like going to a dinner or holiday party and having an assortment of delicious cocktails to choose from? 2) Whenever. You never know when I want to relax after a long day or sit out on the porch and enjoy the sunset. For these reasons, I love my “whenever” cocktails and to qualify as a “whenever” cocktail, they have to be easy enough to make… whenever! Vanilla and pear are two flavors that go together perfectly. When combined with the light, fruity, and subtle sweetness of Riondo Prosecco, you have yourself a match made in heaven. Prosecco cocktails can be tailored to the season. During the summer, I love to incorporate summer fruits and herbs. During the fall and winter, when entertaining is at its peak, I love to incorporate seasonal favorites like apple, pear, and cranberry. Riondo Prosecco Cocktails make holiday entertaining a bit more bubbly. My favorite part about this Vanilla Pear Prosecco cocktail, aside from the lovely and mouthwatering bubbles, is the vanilla bean. It’s just lovely to watch them dance around in the light and airy bubbles! This cocktail recipe is super easy to make. Basically, all you do is cook down some pears with vanilla bean, water, sugar and lemon. The more ripe the pear, the sweeter and smoother the syrup will be. Then, once you strain the syrup, all you need to do is refrigerate it until it’s ready to serve. This makes your entertaining as well as your “whenever” cocktails even easier because all you have to do is combined the chilled syrup with your Riondo Prosecco and you’re set!MY OTHER RECIPES
- 2 whole vanilla beans, split
- 2 pears, chopped, stem and seeds removed
- 3 cups water
- 2 tablespoons sugar
- 2 tablespoons lemon
- Riondo Prosecco
To make the syrup, combine the vanilla beans, pear, water, sugar, and lemon in small saucepan. Bring to a boil and then simmer over low heat until the pear completely breaks down, about 15 minutes.
Strain the syrup through a fine mesh cylinder and discard pear skin while reserving vanilla bean for garnish. Chill until ready to serve.
To serve, add 1-2 tablespoons of chilled syrup to each glass and top with Riondo Prosecco.
