Have you ever heard of fry sauce?  Its basically ketchup and mayonnaise mixed together. Simple enough, right? I used to be a Best Foods girl growing up but since I slowly transitioned to doing 90% of my shopping at TJ’s, I stick with they’re mayo now and its mighty fine. I have a new love affair of Portland Ketchup. It is so freaking good. If you are able to get your hands on some, I suggest you do.

If I order a burger at a restaurant, I’ll get it with everything. That usually entails some sort of sauce and I love it. But at home I’m usually a little more boring and just stick with ketchup. Not my husband. He likes it as messy as possible. He’s always slathering mayo and ketchup on his burgers. I made some pretty outstanding spicy turkey burgers and wanted a good sauce to slather on the bun as well as for our rings. I love to make homemade aiolis from scratch, but then there are other times that I really just want to make something tasty that only takes about 2 minutes to prep. This fry sauce was it!

Writing a post to tell you to mix ketchup and mayo and then stopping at that point would be silly. No. One must add a little something extra to make it fabulous. This is where the chipotle and green chile come in. On their own, each add immense flavor and spice, but when mixed together your mouth will be very delighted, so say the least.
