This Pumpkin Pie Martini is a perfect Fall cocktail. It is so rich and creamy that it really does taste like pumpkin pie, but with a boozy kick.

I’ve said it a million times and I’ll say it a million more – I love Fall.  Its probably my favorite time of year.  The days are still warm but the sun is lower in the sky so you can feel the warmth on just one side of your body.  The evenings and mornings are cool.  Boots are fashionable yet again.  The days are shorter and the kids are more willing to go to bed at their set bedtime.  The leaves are every color between vibrant red to dark purple.  And, quite possibly most importantly, everyone is ready to hunker down and cook and eat until New Year’s Day.

I’ve been doing a ton of Fall cooking lately.  My most popular recipe (which was a bit of a shock to me) was my vanilla bean honeycrisp applesauce.  I’ve made quite a few things with squash like a Buttercup Squash Cake as well as some awesome squash risotto.  I’ve gone a bit crazy with the pumpkin, too, making things like coconut macaroon pumpkin pie (well, actually, my friend made that), pumpkin fruit dip, pumpkin hazelnut pancakes, baked pumpkin donuts, and I have other recipes that have yet to be posted that feature the beautiful orange Fall fruit.

I couldn’t leave the pumpkin out of a cocktail, now could I?  There are so many amazing Fall cocktails to enjoy beyond the super cool Halloween ones like a vampire cocktail or a zombie shooter.  For this particular drink I used fresh roasted pumpkin. Because of that, I had to run it through the blender a few times to get it to be as smooth as I wanted.  If you use canned pumpkin, or pumpkin that you roasted but pureed in the food processor already, you should be good with one whirl though your blender.  The Kahlua add just the right amount of richness to bring it to the next level.  My husband said he could barely taste the booze, but he’s also the kind of dude that can sip anything full strength (not me).  So join me in celebrating Fall and make a pumpkin pie martini!

Instructions 

  • In a blender, process pumpkin puree, half and half, brown sugar, pumpkin pie spice, and vanilla until smooth.
  • On a small plate, combine fine sugar and remaining pumpkin pie spice. Wet the rim of a martini glass and then roll it in the cinnamon sugar blend.
  • Add pumpkin mixture to cocktail shaker with ice. Pour in Kahlua and Vodka. Shake until chilled, about 20 seconds.
  • Strain mixed drink into glass. Serve immediately.
