This Easy Quadruple Berry Cobbler with blueberries, blackberries, boysenberries, and raspberries is the perfect summer time dessert that everyone will love.

This recipe is super similar to my blackberry cobbler, but the different kinds of berries definitely make it interesting!

I got the cutest little all occasion cards that actually have a blackberry cobbler recipe listed on the front. Don’t you think every card should contain a recipe? I do. This was a different recipe than what I use for my typical cobbler, but I wanted to give it a try for two reasons: 1) it had the word easy in the title and during these summer days I’m all about things being as easy as possible and 2) I had exactly 4 cups of blueberries, blackberries, boysenberries, and raspberries in my refrigerator that had to be cooked up STAT, otherwise I’d have a big fuzzy mess to clean up.

You have to admit, exquisite Oregon berries are probably the best in the world. Don’t even try to argue with me about the validity of that fact. I will win.

This recipe starts with fresh berries sprinkled with some fresh lemon juice. Easy peasy. Then, the topping is a mixture of egg, sugar and flour. I used a jumbo egg, in fact it was one of those freaky ones that had two yolks in it, and the topping mixture was still pretty dry. Just letting you know so you don’t freak out that its not the consistency of cake batter. The nifty little recipe card above said to drizzle with butter. I wasn’t sure if that meant to melt it or to dot it. I went with the slice-thin-and-distribute-evenly method.

And here’s how beautiful the final cobbler was. Is your mouth watering? Mine is.

As soon as I was done taking my photos, I devoured every last bit that was in the dish. I earned it after spending those long 5 minutes putting it all together and then waiting patiently for it to bake, don’t you think?

Ingredients 

  • 4 cups berries
  • 1 tablespoon lemon juice
  • 1 cup flour
  • 1 cup sugar
  • 1 large egg
  • 6 tablespoons butter

Instructions 

  • Preheat oven to 375 degrees F.
  • Add berries to a 9×9 baking dish. Toss with lemon juice.
  • In small bowl, combine flour, sugar, and egg. Mixture will be crumbly. Cover berries with mixture.
  • Slice butter into thin slices and spread as evenly as possible on top of cobbler mixture.
  • Bake in preheated oven for 45-50 minutes until golden brown.

    This recipe is both delicious and allows variety. The first time I made it with all berries. Today I had some past ripe nectarines which I mixed with frozen blueberries, yum! I think any fruit combo would work.
