When you make this cool and refreshing Blackberry Gin Fizz, your taste buds will sing. It is a perfect afternoon drink with the right amount of sweet.
I’m not a huge boozer. No really, I promise! I do, however, find myself craving certain cocktails. Okay, maybe I’m a bit of a boozer. My favorite? A spicy bloody mary (coming soon). But sometimes, like on a hot late summer afternoon, you just need something refreshing. Oregon is known for its incredible berries. What better way to honor this gorgeous fruit than to let it absorb some sugar and gin and then transform it into something that makes my mouth very happy?

I’m not gonna lie. Straining out all those wretched blackberry seeds through a fine mesh strainer was a serious pain. But to savor a refreshing cocktail that is just the right amount of sweet and with the right amount of tart and of course the right amount of booze? Totally worth it.
Blackberry Gin Fizz
- 1 cup fresh blackberries
- 2 tablespoons sugar
- 1/2 cup gin
- 1 lime
- Club soda or lemon lime soda*
Puree blackberries with 1 tablespoon water in blender. Smash puree through a fine strainer into a glass and discard remaining seeds and pulp.
Add 2 tablespoons sugar, 1 teaspoon zest from lime, juice from lime, and gin. Allow to macerate for a good 30 minutes.
Divide blackberry mixture between two glasses. Fill with ice. Top with soda. Garnish with fresh sprigs of basil or lime slices.
* I used Hansen's Mandarin Lime soda made with cane sugar. No corn syrup in this drink!
