I love Easter! I’m not exactly sure why, but I think it just has to do with the official start of Spring. I know living in Portland isn’t as bad as being in a region that is frozen over for the duration of winter, but I have to admit – I really struggle with the short rainy days and the low grey sky. It makes me feel claustrophobic and I’m pretty sure I have a legitimate case of seasonal depression and I know for a fact that I severely lack in the Vitamin D department this time of year. Perhaps that is why I love Easter so much. To me, Easter represents the return of color. Not only grey skies turning blue, but flowers of all colors blooming everywhere! That’s why I think its especially fun to make all sorts of Easter goodies. You can’t beat a delicious ham for Easter dinner, and I made the best damn whole bone-in ham that ever existed. And what do you do with that leftover ham? Make a delicious soup, of course! But before you can get dinner on the table, Easter brunch is what its all about and you can’t have brunch without eggs benedict. Finally, for some reason (I think it has to do with the bunny), Easter makes me think of carrot recipes – specifically things like carrot cupcakes and carrot cookies. YUM!
