This easy and refreshing Watermelon Gin Fizz made with perfectly sweet fresh juice is the perfect cocktail to enjoy during brunch or a sunny afternoon.

I live in the Pacific Northwest. We have a very short yet impeccable growing season during the summer and early fall. The berries grown here are some of the best in the world. The apples are amazing. And did you know that Hermiston watermelons are, in my opinion, the best damn watermelons on the planet. The problem is that they are only available during a few short sweet weeks during August. The rest of the year, grocery store watermelons are available, but they just don’t compare. This is how this watermelon gin fizz came to be.

You see, I bought one of those mini watermelons at the store. We buy and eat a ton of fruit in our house. My kids are basically fruit monsters. I cut up the watermelon and gave the kids a whole bunch during breakfast and neither liked it very much. It was just okay. So what do I do when I have a just okay watermelon?  I run it through the blender and mix it up with booze and some other tasty delights.

The result is a super easy to make and refreshing cocktail. So, next time you have an average watermelon, just toss it in the blender and whip up a tasty drink instead of forcing yourself to eat anything that’s less than wonderful.

Equipment

Ingredients 

  • 3 ounces watermelon juice
  • 2 ounces gin
  • 1/2 ounce lime juice
  • 2 ounces ginger ale

Instructions 

  • Run your cut pieces of watermelon through the blender to turn into a juice. Strain through a fine mesh strainer to remove any seeds or fibers.
  • Add watermelon juice, gin, and lime juice to an ice filled glass. Top with ginger ale.
  • Garnish with fresh mint or basil.

Notes

A little watermelon goes a long way. I used 2/3 of a very small watermelon and ended up with 4 cups of juice.
