This Two Ingredient Slow Cooker Shredded Chicken takes minutes to prepare and can easily serve a crowd for any game day celebration.
I make a lot of game day recipes on my blog. Why? Because I have a thorough understanding and appreciation for the importance of having really good game day grub that is not only delicious, but easy to make and can feed a crowd at a good party. You can’t get any easier than this shredded chicken. All you have to do is just add RO*TEL.
For this particular recipe, I ended up using both the HOT diced tomatoes with habaneros as well as the Mexican Lime & Cilantro variety. You’ll find the recipe at the end of this post, but I can pretty much sum it up in one sentence: cook two cans of RO*TEL for every pound of chicken in your slow cooker, shred, and serve. BAM. Easy. I’ve been making chicken like this for years and my entire family loves it. You can then use it in so many different ways to feed a crowd. Picture you throwing a huge basketball tournament party for a huge group of hungry friends. You make a ton of this shredded chicken. Then, you serve it to your buddies as spicy sliders, on top of nachos, mixed in with your favorite cheesy dip. The possibilities are endless, and you end up being a hero for making such awesome food.
I ended up using this round of chicken for some pretty, if I do say so myself, freaking delicious sliders. I started by making some homemade cornmeal rolls as buns. Just drain off any excess liquid and spoon your shredded chicken on top.
Then I topped it with some citrus cumin vinaigrette coleslaw.
Slap a lid on those bad boys, hold them together with a cute little slider stick, and pass them out to your friends while they’re cheering for their favorite team. Feed the people who are rooting for your non-favorite team first so that they’ll stuff their face and you’ll only hear cheering when your team scores.
I only ended up using two cans for this particular post because I was only feeding my family, not a group of friends. If you’re wondering what I used the third can for, I made these nachos for my husband. I wasn’t planning on taking a photo because they’re not really blog-worthy nachos (i.e. shredded cheese with a bunch of other toppings layered on to chips and microwaved until melty), but he took one bite and the first thing he said was “mmmm, yummy tomatoes” so I promptly took the plate away from him and snapped a quick picture.
- 1 pound chicken (I used chicken breast but you can use thighs or a combo of light and dark meat)
- two (10 ounce) cans RO*TEL (any variety)
- Place chicken and RO*TEL in slow cooker and set to high for 1 hour.
- Using two forks shred chicken as long as possible. Set heat to low and continue to cook shredded chicken for an additional hour.
- To serve, drain liquid and use shredded chicken and RO*TEL mixture for a variety of crowd pleasing recipes. Multiply recipe as needed depending on crowd size.
