What I do make, however, are simple drinks that taste good. What more do you need, really?

If you want a fancy drink with black walnut bitters and habanero infused absinthe, you’re best bet is to visit any of the trendy bars in Portland, Oregon. You’ll never see me come up with something crazy like that. What you will see are drinks like this Cranberry Fizz.

I basically make a simple syrup by cooking these things together, but I take it a step farther and continue cooking until I end up with a thick ruby red syrup.

Yields: 2 drinks
Ingredients
  • 1 cup unsweetened cranberry juice
  • 1/2 cup granulated sugar
  • juice from one orange
  • 2 shots vodka
  • 12 ounces sparkling water
Instructions
  1. In a medium saucepan over medium heat, combine cranberry juice, sugar, and orange juice and cook until reduced by half while swirling occasionally, about 15 minutes.
  2. Store in refrigerator until ready to use.
  3. To make cocktail, combine sweetened cranberry syrup with vodka. Mix well. Divide between two ice filled glasses. Top with sparkling water.

Guess what? I’m  not a real fan of beer. I’ve always wanted to be because its such a social drink. What do you order when you go out with friends? Beer. What do you drink when you’re watching the game? Beer. What do you see when you open the cooler? Beer. As many times as I’ve tried to like it, however, I’ve never enjoyed it as much as I want to.

Now, this is a real shame, especially since I live in the Pacific Northwest where there are more micro breweries per capita than anywhere else in the country. I don’t actually know this to be completely factual, but I’d be willing to make that claim in a bet.

I have found something beer related that I absolutely love, though: the beer cocktail. I saw an article at the end of last year that talked about the up and coming food trends and beer cocktails was on the top of the list. After making this Citrus Beer Sangria, I have a new found love for beer.

To me, most beers are rather bitter. Just like I can’t drink hard alcohol on its own, I absolutely love it when its mixed into a wonderful cocktail creation. Beer is no different. The trick is finding complimentary flavors to balance out the bitter, earthy, hop flavor of a good beer.

Traditional sangria combines fresh fruit muddled with hard alcohol and is later topped with something like wine. I followed the same basic principals with this recipe but chose grapefruit, orange, lemon and lime (all citrus) as my fruit, used vodka as my hard alcohol, and incorporated pineapple juice to add some sweet to all the tartness of fruit. Don’t get me wrong – this alone would have made a tasty treat. Once that beer was added, however, it took the cocktail to a whole new level. There were so many different flavors and notes that danced around with each taste.

I’m especially fond of pitcher drinks because they’re so easy when entertaining a crowd. Plus, have you ever seen a prettier drink than this one with all that fruit swimming around? I think we can all agree that the very best part of a good sangria is eating the fruit at the end. Yum!

Its been awhile since I’ve made a cocktail. Too long, if you ask me. I had this wonderful Deep Eddy Cranberry Vodka sitting in my cabinet far too long and it was just begging me to drink it. It really was. This particular vodka is made from real New England cranberries and is all-natural handcrafted vodka from Austin, TX. Next to Portland, OR, the best place in this country you can go for amazing food and spirits would have to be Austin.

This Cranberry Screwdriver with cranberry vodka, freshly squeezed orange juice, and a splash of Grand Marnier is a delicious and easy to make cocktail.

I love a tasty screwdriver, so I thought I should make a festive screwdriver. Its pretty much your standard screwdriver which is vodka + OJ, but this drink was way better than a boring old plain screwdriver.

This Cranberry Screwdriver with cranberry vodka, freshly squeezed orange juice, and a splash of Grand Marnier is a delicious and easy to make cocktail.

You can shake this cocktail with ice to really mix it well and get it ice cold, but I’m lazy and usually don’t want to clean an extra dish if I don’t have to, so I just added all the ingredients to the glass.

Start with a couple ounces of the cranberry vodka and top it off with some fresh squeezed orange juice. I happened to have some tasty cara cara oranges and juicing two of them gave me exactly the amount I needed. A little splash of Grand Marnier really finishes this lip smacking drink off.

Not only is it quite tasty, but it packs a great punch and its pretty. How can you go wrong?

You all love my funny stories, right? Well, I’m not so sure they’re always funny, but I like to write about the story behind a recipe, what I was thinking when I made it, etc. I had been wanting to make this caramel apple pie shot for weeks now. Maybe even months. I have a bottle of Wild Roots Apple & Cinnamon Infused Vodka and I absolutely love making cocktails with it. This delicious shot literally took me 53 seconds to make, but for whatever reason I hadn’t found the right time to make it. Turns out, the one day I decide to make it was when there was hardly any daylight left, but the husband really really wanted it.

If you didn’t know, I take all of the shots for my blog with natural window light. I have flashes – three very nice ones to be exact – but they are for the sole purpose of photographing weddings. I just prefer the look and feel of natural window light for my food photos. Well, considering the dark grey Oregon dusk sky was out and getting darker by the minute, I did what I could to use any remaining window light and shot the photo above at ISO 3200, still severely underexposed.  I pulled the exposure up a good 3-4 stops in LR and tried to reduce the grain. Now it just looks moody and intentionally grainy, right?

How about the two shots above? Those were nearly all black before I pulled them out in LR. Photographing in next to no light is very stressful for me. I don’t like it one bit. Well, for my final shot that you see below, I finally got that darn flash out. Sure, it worked. It even gave my photos a different kind of look that I may or may not like. But for now, I think I’ll shoot to taking all of my photos during the day, which means that my weekends will be busy photographing food because by the time I get home from work, its pretty dark out this time of year. The good news is that this sweet shot is super delicious. There’s my story.

I don’t know why, but I was on a mission to make jello treats that looked like candy corns. I don’t know when this desire came about, but it turned into an obsession. I get a little OCD from time to time, and I was hell bent on making these. For the longest time, though, I had no idea how to shape them. I knew that Wilton made small cone shaped chocolate molds but I didn’t want to make a ton of little teeny ones. Then I found these cone shaped paper cups and thought they would be perfect!

When I brought them home, I ran into my next problem – how was I going to make them stand perfectly upright? Turns out my small mason jars were perfect. I didn’t have a full dozen so I had to use some shot glasses as well. I lightly sprayed the inside of each paper cup with oil and then wiped any excess out just to make them peel away from the paper without issue and it worked perfectly!

The finished jiggly jello candy corn was quite pointed at the tip, and I didn’t think that was the most accurate depiction of a candy corn. Plus, I put too much white in the bottom of each cup and didn’t think it was as proportional as I wanted. Don’t worry, I put the correct recommended proportions in the recipe so yours will look even better! I decided to snip the ends off because every candy corn I’ve ever eaten (and there’s been too many to count) has had a blunt, not a pointy, tip.

Wouldn’t you say they turned out super cute?  How fun would these be set out at a Halloween party?

They actually set rather easily. That was probably because I used A LOT of gelatin. The final product was definitely a cross between a gummy and jello.

I made these kid friendly by using water, but you can easily replace some of the water with vodka to make an even more fun adult version. I’d love to see a party game where people throw back a few of the adult variety jiggly jello candy corns!

For fun, I cut one in half and thought it looked even prettier! They definitely hold their shape.

Ingredients
White Layer, will be divided after mixing:
  • 1 cup water
  • 2 packets Knox gelatin
  • 7 ounces (half a can) sweetened condensed milk
Orange Layer:
  • 1 cup water
  • 1 packet Knox gelatin
  • 1 small (3 ounce) package orange flavored jello
Yellow Layer:
  • 1 cup water
  • 1 packet Knox gelatin
  • 1 small (3 ounce) package lemon flavored jello
Instructions
  1. Prepare 12 paper cone shaped cups by placing in small mason jars. Lightly spray the inside of each with oil and remove the excess. Set them on a baking sheet to easily move them in and out of the refrigerator.
  2. In a small saucepan, combine water and gelatin and allow to rest for 1-2 minutes. Turn heat to low and heat just until gelatin has fully dissolved. Remove from heat and stir in sweetened condensed milk. Add one teaspoon of the mixture to the bottom of each paper cone. Place in refrigerator for at least 30 minutes to allow them to set.
  3. When you're ready for the orange layer, combine water and gelatin and allow to rest for 1-2 minutes. Turn heat to low and heat water, gelatin, and orange jello mix just until everything has fully dissolved. Remove from heat and stir in half of the white mixture. This should make it a creamy orange color. Divide the entire orange mixture into each of the 12 paper cones on top of the white layer (there should be about 2 1/2 tablespoons each). Return them to the refrigerator for at least 30 minutes to allow them to set.
  4. When you're ready for the yellow layer, combine water and gelatin and allow to rest for 1-2 minutes. Turn heat to low and heat water, gelatin, and lemon jello mix just until everything has fully dissolved. Remove from heat and stir in the remaining white mixture. If the white mixture has partially set, you may microwave it for 5-10 seconds to make it liquid again. This should make it a creamy yellow color. Divide the entire yellow mixture into each of the 12 paper cones on top of the white layer (there should be about 2 1/2 tablespoons each). Return them to the refrigerator for at least 30 minutes to allow them to set.
  5. Once they have completely set, peel away the paper. You can set them out whole or slice into layers. Either way their fun.

* you can easily substitute out 2/3 of the water for vodka if you'd prefer to make a fun adult party version of these treats.

My easy, delicious, and perfect for fall Honeycrisp Sangria is made with the most incredible locally produced apple cinnamon infused vodka and hard cider.  

There are only two kinds of apples in this world: Pink Lady, which is available in the spring, and Honeycrisp, which fill the farmers markets here in the Pacific Northwest starting in August. My love affair with the honeycrisp apple has to do with the fact that they are large, crisp, juicy, and a perfect balance of sweet and tart. Their flesh is white and doesn’t brown easily. They’re what I use to make my no sugar vanilla bean apple sauce and my apple compote cheesecake. They are wonderful. So wonderful, in fact, that I wouldn’t dare combine them with any products that weren’t extremely high quality. I made this undeniably delicious honeycrisp sangria with the help of two awesome companions, both locally produced and distributed right here in Portland, Oregon.  The first is Wild Roots Apple & Cinnamon Infused Vodka.  I first tasted the berry varieties of Wild Roots vodka at the farmers market a couple years ago and was blown away by the taste and quality. Since then, I’ve made countless tasty cocktails with their vodka. You definitely need to try them if you haven’t yet already. Second, I tried Reverend Nat’s Hard Cider. Since I’m not a beer drinker, I have a special place in my heart for hard cider. I actually found this cider at Trader Joe’s and they told me it was produced right here in town and was the best hard cider I’d ever taste. Like usual, they were right. I tortured my poor husband for about a week because I had it in the refrigerator but wouldn’t let him crack it open until I made this drink.My easy, delicious, and perfect for fall Honeycrisp Sangria is made with the most incredible locally produced apple cinnamon infused vodka and hard cider.  

This lovely cocktail starts by soaking that beautiful chopped honeycrisp apple in the vodka along with some orange peel. Now, if you’re in a hurry, you can let the apple swim for as little as 15 minutes, but I’m a big fan of letting the fruit really absorb all of that vodka goodness, so I prefer to let them soak in their chilled bath for at least a few hours or even over night. My easy, delicious, and perfect for fall Honeycrisp Sangria is made with the most incredible locally produced apple cinnamon infused vodka and hard cider.  

When you’re ready to serve your cocktail, you add your simple syrup, lemon juice, and apple cider (I use honeycrisp cider, of course) to your apple vodka mixture. Then, you divide the apples and the liquid between two glasses.

Garnish with an orange peel twist and enjoy! Of course, although this recipe is only for two servings, there’s nothing stopping you from making this for a crowd. If you need help with the math, just let me know. Your job is just to make sure you have all the right ingredients on hand. Ingredients
  • 4 ounces apple vodka (I recommend Wild Roots)
  • 1/2 large honeycrisp apple (about 1/2 cup, cubed, skin on)
  • orange peel (just the orange outer peel, not the white pith)
  • 1 ounce simple syrup
  • 1 ounce lemon juice
  • 4 ounces apple cider (honeycrisp recommended), chilled
  • 1 bottle hard apple cider (I recommend Reverend Nat's)
Instructions
  1. In a small bowl or glass, combine vodka and cut apples with orange peel. Let steep for a minimum of 15 minutes or up to 24 hours in the refrigerator (longer is better).
  2. When ready to serve, add simple syrup, lemon juice, and apple cider. Stir well to combine.
  3. Spoon steeped fruit into two glasses and divide remaining liquid evenly between the two glasses as well. Discard the orange peel.
  4. Top each glass with hard cider.
  5. Garnish with fresh orange peel or a cinnamon stick. Enjoy!

This Refreshing Raspberry Mule combines lime sweetened raspberry puree with vodka and ginger beer to create a tasty, refreshing, and easy to make cocktail.

This cocktail was a bit of a no brainer. It was easy to throw together. A traditional Moscow Mule is the combination of lime juice, vodka, and ginger beer. I just prettied it up a bit by adding tart raspberries and sweet simple syrup. You could totally make this kid friendly by omitting the vodka because ginger beer, after all, has no more alcohol than root beer does. I made this drink for my husband and asked him to describe it for me. He thought long and hard and he finally came up with his answer: “good”. Not super helpful when I was searching for words to include in my description of how wonderful it is.  After some more prying, I finally got him to say “refreshing”, so that is why I called it a Refreshing Raspberry Mule. Ingredients
  • 1 cup raspberries (12-15)
  • 1 ounce lime juice
  • 1 ounce simple syrup
  • 3 ounces vodka
  • 3 ounces ginger beer
Instructions
  1. Combine raspberries, lime juice, and simple syrup in blender and process until smooth, about 30 seconds. Pour mixture through a fine mesh sieve to separate any seeds. Combine strained raspberry juice with vodka. Refrigerate or freeze until ready to serve.
  2. When ready to serve, combine vodka raspberry juice with ginger beer in an ice filled glass. Enjoy!
Notes
If you don't have simple syrup on hand, its easy to make. Just combine equal volumes of water and sugar in a saucepan and heat while swirling just until sugar dissolves. Cool before using and store in air tight container in the refrigerator.

Okay, I’m well aware that most everyone reading this post doesn’t have Marionberry Vodka on their liquor shelve, let alone knows what a marionberry is. If you live in Oregon, you most certainly know what a marionberry is. If you don’t know, allow me to tell you. A marionberry is a cross between the Chehelem and Olallie blackberries that was developed at Oregon State University. Berries are huge here in my neck of the woods, and marionberries account for half of all the blackberries grown in this gorgeous state. And despite what you might think, I’m not one of those types who knows these random facts… I can usually thank wikipedia for any fun fact I post on this blog.

I was at the Farmer’s Market one Sunday last summer, as I am every Sunday, and Wild Roots had a stand next to ProFarm Produce where I pick up my CSA produce box. They were offering samples. Well, I couldn’t be rude and decline, so of course I did the nice thing and sampled all of the infused vodkas they had to offer. Wow. It was like drinking the best marionberry jam that ever existed. I’m not writing a sponsored post either. They didn’t pay me to write about their vodka. In fact, they have no idea who I am. But I have no problem telling you about products or brands that I love. I don’t know if they ship or not, but if you can get your hands on some of this stuff, you will agree its fantastic. They have a lot of recipes on their website, too, which I used to make this cocktail (but I tweaked it a bit to add more of a sweet and tart lemonade taste).

I’m sure there are lots of places to find berry infused vodka or you could always make your own, but this stuff really is amazing. Isn’t it the most beautiful color too? Absolute perfect for Valentine’s Day, or summer time, or when the kids or at school.  Who am I kidding. This is a good drink any time!

Ingredients
  • 2 ounces marionberry vodka
  • 1 ounce simple syrup
  • 1 ounce lemon juice
  • top with champagne
Instructions
  1. To make simple syrup, combine equal parts of sugar and water in a pot, heat until fully dissolved, then chill.
  2. In a tall ice filled glass, pour in berry infused vodka, simple syrup, and lemon juice. Swirl glass to mix. Top with champagne. That's it!
