Because the weather has been so cold, we’ve been doing a lot of baking to go with all the tea drinking in my house. The result was a perfectly moist muffin with just the right hint of tea and vanilla. I can’t even begin to tell you how wonderfully comforting this hot muffin was with a thin pad of butter along with my afternoon cup of tea. That, plus my new electric blanket and my book, was pure heaven.

Ingredients
  • 8 tablespoons unsalted butter (1 cube)
  • 1 Pure Leaf Black Tea with vanilla tea bag
  • 1 vanilla bean, split
  • 2 1/2 cups flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 1 teaspoon pure vanilla extract
Instructions
  1. Preheat oven to 425 degrees F and grease muffin tins with butter or muffin liners with cooking spray.
  2. In a medium sized pan over medium heat, melt the butter with the tea bag and vanilla bean over medium heat. Swirl occasionally to ensure butter is cooking evenly and the flavors of the tea and vanilla are infused. As the butter melts, it will begin to foam and the color will get darker. Continually scrape bottom of pan to release any brown specs. Once you start smelling the nutty aroma, remove browned butter from heat and allow to cool.
  3. In a large bowl, sift together flour, sugars, baking power, baking soda, and salt.
  4. In a separate bowl, whisk eggs, buttermilk, vanilla, and mostly cooled browned butter together. Make a well in the dry ingredients and pour in the liquid ingredients. Fold together and do not over mix.
  5. Spoon batter into greased muffin tins and bake in preheated oven for 5 minutes. Without opening the oven door, reduce heat to 325 degrees F and continue cooking until golden brown, about 15-25 minutes (mine took longer because I used a stone muffin pan). When done cooking, immediately remove from muffin tins and allow to cool on cooling rack.

I made these pumpkin scones and they made me oh-so-happy. Not only were they super soft, delicious, and easy to make, but they were the first pumpkin spice recipe of the season!  Don’t worry – I’m sure I’ll be making dozens more. But one cannot fully enjoy a scone without a hot cup of tea.

Ingredients
scones:
  • 2 cups all-purpose flour
  • 1/3 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 tablespoon pumpkin pie spice
  • 1⁄2 teaspoon salt
  • 1/2 cup (1 stick) very cold unsalted butter
  • 1⁄2 cup canned pumpkin
  • 3 tablespoons half and half
  • 1 large egg
  • 1 teaspoon vanilla extract or vanilla paste
Glaze:
  • 2 cups confectioners sugar
  • 4 tablespoons half and half
  • 1/2 teaspoon vanilla paste (optional)
  • 1/2 to 1 teaspoon pumpkin pie spice
Instructions
  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Combine flour, brown sugar, baking powder, salt, and spices in a large bowl. Using a pastry knife, fork, or food processor, cut butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious. Set aside.
  3. In a separate bowl, whisk together pumpkin, half and half, and egg. Fold wet ingredients into dry ingredients. Form the dough into a ball.
  4. Pat out dough onto a lightly floured surface and form it into a 1-inch thick rectangle. Use a large floured chef's knife to slice the dough into half lengthwise and then into thirds going the other direction to yield 6 squares. Then, cut each of those squared diagonally to create 12 triangular slices of dough. Place on prepared baking sheet by transferring using a floured spatula.
  5. Bake for 14 to 16 minutes in the top rack of the preheated oven. Do not open oven door until cooking time is almost complete. Scones should begin to turn light brown and be done cooking within a couple minutes of being able to smell them. Immediately remove from baking sheet and place on wire rack to cool.
  6. While the scones are cooling, make the glaze. Mix the powdered sugar and half and half together until smooth with the vanilla paste, if using.
  7. Use a whisk to drizzle a layer of plain glaze over the top of each scone, reserving a third to half of the glaze for the spiced version.
  8. Add pumpkin pie spice to remaining glaze and drizzle remaining glaze over each scone using a whisk. Allow the icing to dry before serving (at least 1 hour).

  • 5 fresh sage leaves

  1. Add all ingredients except water to a tea strainer or tea bag. Boil one cup water and allow to mixture to steep for at least 5 minutes.

One of my most favorite things to do in this world is to enjoy afternoon tea. There’s something about having my own pot of tea with a huge tower of treats that completely tickles my fancy. I’ve always shied away from making things that involve butter + flour + technique. You know, things like pie crust and biscuits. Slowly but surely I’ve gotten better at improving my technique and my poor thighs have paid the price.Buttermilk Lemon Scones are quite simple to make and turn out light and fluffy if made with a delicate touch. They're perfect for Mother's Day brunch.

I use my handy dandy food processor to mix up the dough. I am totally out of my comfort zone when I dump the dough on the mat for shaping because it is so under mixed at that point. See? Its all about the technique. Ingredients
  • 3 cups all purpose flour
  • 3 tablespoons sugar
  • 2 tablespoons baking powder
  • 1/4 teaspoon salt
  • zest from one large lemon
  • 3/4 cup (1 1/2 sticks) unsalted butter, cold, cut into 1" cubes
  • 1 whole egg
  • buttermilk (about a cup, see instructions)
  • 2 cups raspberries (I used frozen and then smashed them into tiny pieces)
  • large sparkly sugar crystals for the top
Instructions
  1. Preheat oven to 375 degrees F. Prepare your baking sheet by lining with parchment paper.
  2. Add flour, sugar, baking powder, salt, and lemon zest to a food processor with the dough attachment in place. Pulse a few times to combine the ingredients.
  3. Add cold butter cubes and pulse until the mixture has little pea sized dough balls.
  4. Using a glass (or see through) measuring cup, add the egg and lightly beat. Then, add enough buttermilk such that the combined volume of the egg and the buttermilk is 9 ounces. Stir to combine.
  5. Slowly add the buttermilk egg mixture to the dry ingredients while pulsing after each pour just to combine. Be very careful not to over mix. Turn out dough onto a lightly floured surface. Not all of my dough was combined and I worked it together once on the counter. Divide the dough into two parts and pat the dough so that it is about 1" thick. Add the raspberry pieces to the top of half of the dough and then fold the dough over. You can incorporate the raspberries any way you choose, just be careful not to overwork the dough. Slice across or cut into biscuits (I made two rounds and then sliced each one into 8 scones).
  6. Sprinkle the scones with the sparkly sugar and bake in preheated oven for about 15 minutes until lightly golden brown.
  7. Serve with whipped cream, butter, or creme fraiche as well as fruit preserves.
