When you add fresh ginger to anything, it gives it a real bite, but the flavor is quite energizing at the same time. When I made this drink, the ginger flavor really came through, but that was because I shredded up my ginger with my microblade instead of chopping it up with a knife. More surface area = more flavor. If you want the ginger to come across a bit milder, I recommend chopping it into larger pieces. Then you top with blueberry juice. Then, you have to make a critical decision: do you top with sparkling apple cider or do you top with sparkling wine? I suppose it depends greatly on who will be enjoying the cocktail/mocktail. If you’re undecided, you could always add a little of each and call it a day. Whatever tickles your fancy. Yields: 2 drinks
Ingredients
  • 1/2 cup blueberries
  • 1 tablespoon ginger, minced (the smaller the mince, the more intense the ginger flavor)
  • 1 tablespoon sugar
  • juice of 1/2 lemon
  • 1 cup blueberry juice, chilled
  • 1 cup sparkling wine (or substitute sparkling apple juice), chilled
Instructions
  1. Mash blueberries with ginger, sugar, and lemon juice. Allow the flavors to blend for at least five minutes, then press through a fine mesh sieve to discard the solids.
  2. Divide the mixture between two champagne flutes. Top with blueberry juice, then sparkling wine.

This simple cocktail is made from three of my most favorite cocktail ingredients. No wonder I thought it was so tasty! Coconut rum is fabulous. You know how your sense of taste and smell can take you back to any memory stored in that noggin of yours? Well, coconut rum makes me think of only fond memories of sitting on the beach in Hawaii.

Raspberries are also a favorite of mine. Heck, I’m a fan of just about every kind of berry. They’re too much money for me to splurge on fresh berries this time of year, plus I’ve become such a berry snob living in the Pacific Northwest that I prefer to eat a berry only if I picked it myself. Fortunately, frozen berries (that I picked myself, of course) worked smashingly well for this cocktail.  And finally, you can’t have a bellini without sparkling wine. That, or champagne (if you wanna get technical) makes most every drink better.

  • 2 ounces coconut rum, chilled
  • 3-4 raspberries
  • Sparkling wine
Instructions
  1. Mix raspberries and coconut rum by mashing fruit completely. Allow to chill together if you have the time. Strain seeds through a fine mesh strainer into a chilled champagne glass. Top off with sparkling wine.

I’m all about easy cocktails. Sure, I’ve had some tasty treats that were more like a complicated chemistry experiment to create, but the busy-me loves the pour-it-into-a-glass-and-enjoy kind of a cocktail.  I will tell you, though, that I’m not a huge beer fan, especially dark beers. I want to like them, but they are just too bitter for my liking. I love to cook with beer, but maybe someday when I grow up I’ll like drinking them. I do, however, love champagne. Before this drink, though, I had never opened a champagne bottle on my own. Perhaps my phobia has to do with the fact that I grew up in a little mountain community with an elevation of 6500 feet, but I am completely afraid of opening champagne bottles as well as those tubes of peel-and-pop biscuits. They scare the dickens out of me. I was so proud of myself when I overcame my fear and actually got this bottle open without hurting myself or having an anxiety attack.

I was also pleasantly surprised that I thought this drink was good. The champagne totally mellowed the bitterness of the beer. The entire drink was smooth and quite good. I served this one to my husband during dinner to accompany some bangers and mash and some Irish cheddar stout bread.  I suppose I’m getting in the mood a wee bit early for St. Patrick’s Day. Get it? A wee bit? You just have to picture me saying that like an Irishman. Man, I’m funny.

Instructions
  1. Combine champagne and Guinness in a glass. Use a chilled glass if you can. Give it a stir and enjoy!
