From apples to pumpkins to dark leafy greens, fall is everyone's favorite time to cook, so I'm sharing more than 20 Perfect Fall Recipes!

We all do it. What’s that, you ask? We all wait for the time of year when everything is pumpkin spice. Don’t try to deny it. Even if you think things like pumpkin spice breakfast sausage and pumpkin spice pasta sounds nauseating (no argument there), I dare you to argue with the fact that by the time pumpkin spice completely dominates everything around us, we’re ready for the cold weather, the holidays, and all of the cooking that goes along with it. We may not all like to eat all pumpkin, all the time, but fall is such an extraordinary time to breakout the crockpot, let those soups, stews, and chilis simmer, create freezer meals and casseroles, and make goodies with pumpkin.  I’ve rounded up a ton of fall recipes to give you some inspiration in the kitchen. Whether you're making a kid friendly family dinner or preparing a big meal to delivery to another family, this Cheesy Sausage Pasta Bake is sure to please!Some variation of spaghetti inevitably makes it onto our family dinner table at least once each week. What can I say? We are a family that values tasty hot food, good conversation, and PASTA! Last night I decided to make a classic pasta bake.

Whether you're making a kid friendly family dinner or preparing a big meal to delivery to another family, this Cheesy Sausage Pasta Bake is sure to please!

I ended up using this new Homestyle Thick and Hearty Traditional Sauce. I’m not sure if you’re tried RAGÚ® Homestyle sauce, but this is their thickest sauce, and you can tell because it hugs the pasta. This is their boldest flavor yet because they peel, chop and simmer the ingredients and use a special blend of herbs (basil, fennel, oregano and black pepper) to layer and build the flavor. Even better, they don’t use artificial flavors, artificial colors or high fructose corn syrup.

Its one thing to mix up some pasta and sauce, but adding just the right amount of spicy Italian sausage and smothering it with some fresh shredded cheese and you end up with one heck of a meal!

A secret little tradition of my own is to make dinner early in the day and leave the final step, the melting, til the very end right before I serve it all up to the family. That way I can get the hard part out of the way and enjoy a glass of wine before we even sit down to eat. Enjoy!

Ingredients
  • 16 ounces whole wheat penne pasta
  • 12 ounces spicy italian sausage
  • 1 medium red onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup red wine
  • 2 (23 ounce) jars pasta sauce
  • 8 ounces shredded italian cheese blend
Instructions
  1. Cook pasta according to instructions. Reserve 1 cup of the cooking water prior to draining pasta.
  2. While pasta is cooking, cook sausage and onion over medium high heat in large skillet until sausage turns crumbly and golden brown, about 10 minutes. Add garlic, stir, and allow to cook for a couple more minutes.
  3. Add red wine to sausage and scrape bottom of skillet to remove any pieces that stuck to pan. Add pasta sauce and allow mixture to simmer over low heat until pasta is ready.
  4. Combine cooked pasta and sauce in casserole dish. Add enough of the reserved pasta water to make the pasta barely moist. Top with shredded cheese, cover, and heat in preheated 400 degree F oven until cheese has melted, about 10 minutes. Serve hot.

You see how these things happen?

If you're looking for a rich and satisfying pasta dinner, this Ham and Pea Pasta Carbonara will quickly become a family favorite!I had never made pasta carbonara but I had been obsessed with the idea of trying it. If you’ve never had a mac n cheese where egg yolk was incorporated into the sauce to make it rich and creamy, well – you’ve been missing out. If you shy away from having egg yolk in foods like homemade aioli where its not exactly cooked, you need to step out of your comfort zone and give it a try. A whole world of rich food awaits!

I didn’t tell my family that this sauce had egg yolk in it for fear that they’d be turned off, and they (husband and kids included) thought this was one of the best dinners I had ever served. I mean, what’s not to love? Flavorful smokey ham, vibrant green peas, pasta – no descriptive words needed there, and a rich and creamy parmesan sauce. Yields: 6 servings
Ingredients
  • 1 pound spaghetti
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 8 ounces ham, thinly sliced
  • 10 ounces peas, steamed
  • 1-2 cloves garlic, minced
  • 3 eggs
  • 1 cup parmesan, grated
  • 3/4 cup heavy cream
  • salt and pepper, as desired
Instructions
  1. Ensure all ingredients are chopped/measured/prepared before you start cooking. The goal is to time the recipe so that the pasta has finished cooking at the same time the ham, pea, and onion mixture is done.
  2. Cook pasta in large pot of boiling water.
  3. Heat butter and oil in large saute pan and cook onion over medium high heat until golden brown, about five minutes. Add ham, peas, and garlic and cook long enough to heat through.
  4. Meanwhile in a separate bowl, combine eggs, parmesan and heavy cream. Whisk to combine.
  5. Prior to drain pasta, add about 1/2 cup of the cooking water to a measuring cup in case it is needed to thin the sauce later on.
  6. Drain hot pasta and return to pot. Add hot ham and pea mixture. With the heat off, add the egg mixture to the hot ingredients and stir very well to combine. The hot ingredients will cook the egg enough to turn it into a wonderful sauce without scrambling the egg. Season with salt and pepper, as desired.

Fettuccine with Salmon Dill Cream Sauce made with smoked salmon, fresh dill, lemon and heavy cream is an insanely delicious and easy to make pasta dinner.

I feel this post must start with a warning: This meal is dangerous. Why? Well, not only does it taste absolutely heavenly, but it is super easy to make. But why would that be dangerous, you wonder. Two words: pasta and heavy cream.  Well, technically that was three words. Is it good for your hips? No. But is it worth that minute on your lips? Most definitely.

I first enjoyed this recipe at a pasta making class I took. It wasn’t a professional class at a culinary institute. As you might know, I’m a completely self taught chef and photographer and have learned everything purely through trial and error. It was one of those hands on cooking classes where you go with a date or a friend, make a few dishes, and get to eat what you make in the class. This happened to be a homemade pasta class and I’ve wanted some kitchenaid pasta rollers ever since. In fact, they’ve been not-so-subtly on my Christmas wish list for two years in a row now and he has yet to deliver. Hopefully third time’s a charm and I’ll get them this year! So, this class was originally going to be a double date for my husband and I and another couple. For some reason, that other couple had to bail out so it turned into a regular date for the hubs and I. Unfortunately, I got a horrible case of the stomach flu about five days before the class and subsequently couldn’t hold anything down that entire time. The first day I felt normal again was the day of this class, but by that time my husband was right in the middle of his stomach flu, but there ain’t nothing that will keep me away from freshly made pasta, so off I went!  Fortunately, I was able to get my sister to go with me at the last minute. Unfortunately, four rounds of pasta courses at the tail end of the stomach flu weren’t as enjoyable as I had imagined it would be. On the bright side, they sent us home with the recipes and I was able to recreate everything at home once I was fully recovered!

The reason this recipe was so amazing was because it used smoked salmon. Why had I never thought of doing this before? There are occasions where I make salmon and it turns out perfectly, but there have been plenty of times where I try to make a pasta dish like this and the salmon is either over cooked or the whole dish tastes too fishy. Using smoked salmon in a dill-filled lemony cream sauce like this is absolute perfection, and considering the whole dinner comes together in just minutes, your hips and thighs will be cursing you for ever finding this recipe!

Ingredients
  • 1/2 of a large sweet onion, like Vidalia or Walla-Walla, diced
  • 1 tablespoon butter
  • 1 large bunch of dill, de-stemmed and chopped
  • 8 ounces cold smoked salmon
  • 1 cup heavy cream
  • 1-2 tablespoons lemon juice
  • 8 ounces linguini
Instructions
  1. Cook the pasta in plenty of water until it is done. Consider not adding salt to the water this time, since the salmon sauce may be on the salty side.
  2. To make the salmon dill cream sauce, sauté the onion in butter over medium high heat until golden brown. Reduce heat a bit and add the dill, salmon and cream. Gently heat until the cream is infused and stir until the salmon flakes. Add the lemon juice and stir.
  3. Gently toss the pasta in the warm sauce and voila! Ready to serve.

You guys, I can’t begin to tell you how giddy I am that summer is here!  Just a few more weeks of school and then we have an entire season of long hot days, the swimming pool, BBQs, camping adventures, fireworks – you name it!  Without fail, our summer calendar seems to fill up, and we’re not even that social!  I mean, during the winter months its almost like we go into hibernation. We are a cheese loving family. Ooey, gooey, creamy, melty, aged, or hard – I love all kinds of cheese. Love might just be an understatement. I think if I had any health issues that prevented me from eating dairy, I might just have to go on a hunger strike all together. I love cheese so much that I’d even be willing to give up gluten before I gave up cheese. Cow’s milk, goat’s milk, sheep’s milk – its all wonderful in my opinion. I’ve raised two cheese loving kiddos as well. They know a good thing when they see (or taste) it! If you don’t believe me, just search “cheese” or “cheesy” on my blog and you’ll come up with tons of recipes. Some of my favorites are my cheesy loaded mashed potato casserole, cheesy green chile chicken lasagna, cheesy bacon ranch jalapeno poppers, cheesy ham & broccoli tater tot casserole… and the list goes on and on. You will never find my deli drawer without at least 4 different variations of cheese. In fact, my mouth is watering right now just looking at all of these cheesy photos. Enjoy!

Let me start by saying that a Meyer lemon is no ordinary lemon. If you’re not familiar with this variety, all you have to do is google “what is the difference between a meyer” and the rest of the sentence “lemon and a regular lemon” pops up. See? You weren’t the only one who didn’t know. I’ll save you the time and post the link to the info here. If you’re not in the mood to read all about it, I can sum it up in just a couple of words: meyer lemons just taste better. If ever given the choice, choose a meyer lemon over your standard basic lemon. Just like you should choose a Hood strawberry over your standard-available-year-round-grocery-store strawberry. There’s just no comparison.

The incredible flavor in this pasta comes from just the right amount of meyer lemon along with leek and heavy cream. Aren’t leeks gorgeous? I just love thinly sliced leeks. They make all things better.

And yes, I did mention heavy cream. If you’re dieting, pasta isn’t really your friend anyway. But this pasta? Prepare to just throw your food log out the window if you’re going to indulge in this little plate of heaven. There’s a ton of heavy cream in this pasta, which is part of the reason it tastes so good. But go on – you only live once and its okay to splurge every so often (or every week, in my case). Make yourself feel less guilty and serve it with grilled chicken and asparagus. You know I can rationalize anything. My entire family loved this, and I’m certain yours will too.

Yields: 4-6 servings
Ingredients
  • 1 pound pasta of your choice
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 leek, sliced thin
  • 1 teaspoon (about 2 cloves) minced garlic
  • 2 cups heavy cream
  • 2 teaspoons Meyer lemon zest
  • 1 teaspoon chopped rosemary
  • 1/2 cup grated Pecorino Romano
Instructions
  1. Boil at least 4 quarts of salted water. Cook the pasta according to the package directions, drain, and keep warm.
  2. Meanwhile, in a large skillet, heat the butter and olive oil over medium heat. When the butter is melted, add the leeks to the pan. Saute, stirring often until the leeks are softened and just starting to brown.
  3. Add the garlic and saute another minute or two.
  4. Add the heavy cream and reduce heat to medium low. Cook the cream until reduced by about half. Once the cream is reduced, add the lemon zest, rosemary, and cheese. Serve warm.

I am a lover of salmon. I live in the Pacific Northwest, which means that I am surrounded by salmon lovers. The problem is that I’ve never really been happy with the way I cook salmon. It usually ends up overdone or too fishy tasting. I know it sounds weird to say fish is too fishy tasting, but I’m sure you know what I mean. While the salmon was baking and the water was boiling, I added a handful of fresh spinach to a couple of bowls.

I drained the pasta, set it aside, and then added butter, oil, and garlic to the pot where I cooked all those wonderful ingredients just until the garlic started to turn golden brown. Then came the capers, lemon juice and zest, the cooked pasta, and some fresh basil to the pot. You can see where this is going.

Right about the time the pasta portion was completely done and starting to wilt the fresh spinach, the salmon was done.

I topped each bowl with a filet and served with a wedge of lemon.

I’ll never forget the look on my husband’s face when he took his first bite. He said “wow, this salmon is really good!” and he had a total look of surprise on his face. Wanna know why? Ingredients
  • Bumble Bee SuperFresh® Salmon with Garden Pesto
  • 8 ounces pasta (I used peppered basil)
  • 2-3 cups fresh spinach
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 large clove garlic, minced
  • zest from one lemon
  • 2 tablespoons lemon juice
  • 2 tablespoons capers
  • small handful of fresh basil
Instructions
  1. Cook the Bumble Bee SuperFresh® Salmon with Garden Pesto according to the package instructions.
  2. While the salmon is cooking, cook the pasta in salted boiling water according to the instructions.
  3. Add the fresh spinach to two bowls.
  4. When the pasta is done cooking, drain it and set aside. Add the butter, olive oil, and garlic to the pot and cook the garlic until golden brown, about 2-3 minutes. Add the zest, lemon juice, capers, and cooked pasta to the pot. Toss to combine.
  5. Add the hot pasta to the bowls on top of the spinach. Top with a hot salmon filet.

Traditions are intensely personal and make us who we are. They help us learn about ourselves and connect us across generations. My husband and I both feel that family meal time is sacred and we’ve started building our own traditions around the family dinner table that we hope our kids will continue to carry on when they eventually start their own families. Every Friday night during dinner we have a tradition where we say something we love or a good memory about each person at the table, including ourselves. It has become a weekly ritual that our kids look forward to. For our last Friday night dinner, I was craving pizza but was too lazy to pick one up. Who’s too lazy for that? I wanted the wonderful taste of pizza, but was in the mood to be a bit more creative. I always have pizza ingredients on hand because we eat it so often, so this pasta ended up being a no brainer.

I also knew that I didn’t want to have a ton of dishes, so I figured out how to make the whole thing in one pot. Making a one pot pasta meal is actually quite genius because all you have to do is add all the ingredients you would if you had cooked the pasta separately, but instead you just throw the uncooked pasta in the pot along with everything else and some additional water. Voila!

Even without the melted cheese, this pasta would have been amazing. I mean, how can you go wrong with pasta, sauce, seasoned meats and fresh basil. But once you make it more pizza-like, it turned into something that was beyond amazing.

Ingredients
  • 13 ounces spicy italian sausage, removed from casing
  • 1 small onion, diced
  • 1/2 red bell pepper, diced
  • 2 cloves garlic, minced
  • 3-4 ounces pepperoni, divided
  • 1/4 cup artichoke hearts
  • 1/4 cup fresh basil
  • 1 (14 ounce) jar Ragu pasta sauce
  • 1 1/2 cups water
  • 8 ounces pasta
  • 8 ounces mozzarella, grated
  • 1/4 cup sliced black olives
Instructions
  1. In dutch oven over medium high heat, cook sausage with onion and pepper until meat is slightly browned, 10-15 minutes. Add garlic and half the pepperoni, stir, and cook for another 2-3 minutes.
  2. Add artichoke hearts, basil, pasta sauce, water, and pasta. Stir well and cover. Cook over medium high heat for 7-10 minutes until pasta is tender. While pasta is cooking, preheat oven to 425 degrees F.
  3. When pasta is cooked, cover with shredded mozzarella as well as remaining pepperoni and olives. Bake in preheated oven for 5-10 minutes until cheese has fully melted.
