I talk about game day food all the time on my blog. Do I ever watch football?  Nope. Not ever, you ask? Nope. Not interested. There are two things I absolutely love about having football on the tv, however.  First is the food (so obvious, right?). What’s not to love about cheese, barbecue, dips, and drinks?  Nothing.  I love every single thing about game day food. I beg you have to know what the second thing I love about having football on tv, right?  Well, its the really cool overhead shots and the fact that they move that line on the ground with each play. Or each down.  Whatever.  I don’t know how it works.  It just blows my mind that they can make that line move under their feet.  I know its digital, but it sure looks real.

I have no idea who’s playing in this year’s superbowl.  I don’t know if its even been determined yet. The only thing I know is that good food and football watching go hand in hand.  Below you’ll find recipe ideas that will make any game day watching experience grand. Enjoy!

Even I couldn’t resist when I was making this. I made a very poor decision to make them when I was pretty hungry, and the result was me burning the roof of my mouth because I shoved one in my face a few minutes before I should have because I simply couldn’t wait.

Let’s just talk about how easy these are to make for a minute. All you have to do is cut the kielbasa into equal sized pieces. I always welcome math and geometry challenges in the kitchen when I’m cooking. Same thing with the dough, and there’s just something satisfying about cutting puff pastry with a pizza cutter. Call me crazy, but that was my favorite part.

Then you wrap each little piece of meat up with a strip of dough and bake. I don’t even bother with an egg wash. How else could I have called these two ingredient wrapped kielbasa bites, after all?

Serve them up warm with toothpicks for grabbing and a nice stone ground mustard for dipping and I guarantee your guests will call these their favorite appetizer on the table!

Yields: 18 pieces
Ingredients
  • 1 (12 ounce) kielbasa
  • 1 pre-made puff pastry sheet
Instructions
  1. Cut kielbasa into 18 even sized pieces. Start by dividing in half, then each half into thirds, then each chunk into thirds.
  2. Cut puff pastry into 18 even sized strips. Do this by first rolling out puff pastry to flatten a bit but still maintain the square shape. Then, cut the square into three long strips, then cut each strip into thirds, and finally cut the length of each of those strips in half.
  3. Preheat oven to 400 degrees F.
  4. Wrap each piece of kielbasa with a strip of dough. If dough is not sticky enough to seal on its own, you may wet your fingers with water to help it seal. Put each piece, seal side down, on a baking sheet.
  5. Bake in preheated oven for 20-22 minutes, until golden brown.
  6. Serve warm with stone ground mustard. Any remaining appetizers can be stored in an airtight container in the refrigerator.

Who doesn’t love shrimp? For that matter, who doesn’t love a tasty little two-bite appetizer? Well, if the general population is anything like my family, then they will love these tasty little treats.

This recipe starts with little tortilla rounds that you cut out from corn tortillas. Don’t throw away the scraps! Just put them back in the bag and fry them up for a different meal. Aren’t they cute?

The shrimp is amazing. Kind of crazy what a little butter, garlic, and spices can do to wild caught shellfish. Stack them up with some avocado and a squeeze of lime and watch them fly off the platter!

Yields: 15 tostadas
Ingredients
  • 15 corn tortillas (1 tortilla per shrimp)
  • 1/2 cup vegetable oil
  • 1 cup refried beans
  • 1 cup mild salsa
  • 1/2 large avocado
  • 10 ounces raw jumbo shrimp, shells and tail removed, deveined
  • 2 tablespoons oil
  • 1-2 cloves garlic, minced
  • 1 teaspoon chili powder
  • cilantro and fresh lime, for garnish
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
Instructions
  1. Using a round 3" cookie cutter or the rim of a glass, cut enough tortilla rounds for the amount of shrimp you have. Save tortilla scraps for another meal.
  2. In a heavy 9" skillet, heat oil over medium high heat. Once the oil is hot enough where a small piece of one of your scraps boils when added (this is a good way to test), add a single layer of rounds and fry on both sides until golden brown, 2-3 minutes per side. Drain on a paper towel.
  3. Add a small amount of beans to each tostada round. You can spoon them on, but I added them to a sandwich bag, snipped off the corner, and piped them on like I would frosting.
  4. Spoon a layer of salsa on top of the beans.
  5. Thinly slice the avocado and add some to each tostada.
  6. To cook the shrimp, discard the oil from the tortillas (just pour it out, no need to wipe the pan). Over medium high heat, melt the butter with the chili powder, cumin, and salt. Add the shrimp in a single layer and cook until the tops start to look a very opaque pink, 4-5 minutes. Turn them over and continue cooking another 2-5 minutes until cooked through. Remove from heat and place one shrimp on each tostada.
  7. These appetizers can be eaten cold or, if preferred, warm in 300 degree F oven for 10-15 minutes until heated through prior to serving.

I’ve written about my love/hate relationship with football countless times before. Do I enjoy watching football? Not really. But do I love everything else about the sport that really has nothing to do with the sport? Heck yeah. I love the parties. I love the excitement. And mostly, I love the food.  I have about a bazillion game day recipes on my site. Some of my favorites include game day beer chili, bacon jalapeno potato bites, football fondue, game day punch, bacon wrapped jalapeno poppers, deviled eggs, bacon jalapeno mac n cheese, loaded cheezy pizza dip… there are just too many others to mention.  If you ever see me “watching” the big game, you’ll know I’m just there for the food and the company.  I couldn’t tell you the name of a single professional football player, or even a team’s home city. Last fall my friend hosted a “Pumpkin Dinner Party” where all guests had to bring a dish, sweet or savory, that had pumpkin in it. What a fun night that was! The hostess, herself, made a pumpkin cheese ball and, with my glass of wine in hand, I couldn’t stay away from it. That party had all sorts of delicious food, but the cheese ball was my absolute favorite.

There are lots of recipes out there that tell you to make your cheese ball with shredded cheese and cream cheese. To me, that’s boring and not super delicious. The addition of the third Gournay cheese makes this cheese ball irresistible.  I used freshly roasted pumpkin because I happened to have some in my refrigerator, but you can easily use canned pureed pumpkin. The addition of the smoked paprika and cayenne not only adds to the flavor, but it makes it more orange in color.

Because I let my cheese get real soft before mixing in order to make the final cheese ball very well mixed, I had to wrap it up and stick it in the refrigerator. Be sure to let it get cold enough so that its easy to shape into a pumpkin. I was a little too eager and could have waited a bit longer, but I really wanted to eat it!  This cheese ball pairs perfectly with white or red wine.

And if you’re worried about it tasting like pumpkin, I honestly couldn’t taste it. I put it in for color and also because I couldn’t call it a pumpkin cheese ball without some pumpkin puree in it, now could I?

Ingredients
  • 1 (5.2 ounce) package garlic & fine herb Gournay cheese, softened
  • 3 ounces cream cheese, softened
  • 1 cup shredded extra sharp cheddar
  • 3 tablespoons pumpkin puree
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
Instructions
  1. Combine all ingredients in the bowl of a stand mixer with the paddle attached and mix on medium speed until well combined, about 5 minutes.
  2. Wrap tightly in plastic wrap and refrigerate or freeze until cold enough to mold into a pumpkin shape.
  3. Set on cheese board and shape into a pumpkin. Use a stem from a bell pepper to complete the look. Serve with wine and crackers.

I don’t know why, but I was on a mission to make jello treats that looked like candy corns. I don’t know when this desire came about, but it turned into an obsession. I get a little OCD from time to time, and I was hell bent on making these. For the longest time, though, I had no idea how to shape them. I knew that Wilton made small cone shaped chocolate molds but I didn’t want to make a ton of little teeny ones. Then I found these cone shaped paper cups and thought they would be perfect!

When I brought them home, I ran into my next problem – how was I going to make them stand perfectly upright? Turns out my small mason jars were perfect. I didn’t have a full dozen so I had to use some shot glasses as well. I lightly sprayed the inside of each paper cup with oil and then wiped any excess out just to make them peel away from the paper without issue and it worked perfectly!

The finished jiggly jello candy corn was quite pointed at the tip, and I didn’t think that was the most accurate depiction of a candy corn. Plus, I put too much white in the bottom of each cup and didn’t think it was as proportional as I wanted. Don’t worry, I put the correct recommended proportions in the recipe so yours will look even better! I decided to snip the ends off because every candy corn I’ve ever eaten (and there’s been too many to count) has had a blunt, not a pointy, tip.

They actually set rather easily. That was probably because I used A LOT of gelatin. The final product was definitely a cross between a gummy and jello.

I made these kid friendly by using water, but you can easily replace some of the water with vodka to make an even more fun adult version. I’d love to see a party game where people throw back a few of the adult variety jiggly jello candy corns!

For fun, I cut one in half and thought it looked even prettier! They definitely hold their shape.

Orange Layer:

  • 1 small (3 ounce) package lemon flavored jello
Instructions
  1. Prepare 12 paper cone shaped cups by placing in small mason jars. Lightly spray the inside of each with oil and remove the excess. Set them on a baking sheet to easily move them in and out of the refrigerator.
  2. In a small saucepan, combine water and gelatin and allow to rest for 1-2 minutes. Turn heat to low and heat just until gelatin has fully dissolved. Remove from heat and stir in sweetened condensed milk. Add one teaspoon of the mixture to the bottom of each paper cone. Place in refrigerator for at least 30 minutes to allow them to set.
  3. When you're ready for the orange layer, combine water and gelatin and allow to rest for 1-2 minutes. Turn heat to low and heat water, gelatin, and orange jello mix just until everything has fully dissolved. Remove from heat and stir in half of the white mixture. This should make it a creamy orange color. Divide the entire orange mixture into each of the 12 paper cones on top of the white layer (there should be about 2 1/2 tablespoons each). Return them to the refrigerator for at least 30 minutes to allow them to set.
  4. When you're ready for the yellow layer, combine water and gelatin and allow to rest for 1-2 minutes. Turn heat to low and heat water, gelatin, and lemon jello mix just until everything has fully dissolved. Remove from heat and stir in the remaining white mixture. If the white mixture has partially set, you may microwave it for 5-10 seconds to make it liquid again. This should make it a creamy yellow color. Divide the entire yellow mixture into each of the 12 paper cones on top of the white layer (there should be about 2 1/2 tablespoons each). Return them to the refrigerator for at least 30 minutes to allow them to set.
  5. Once they have completely set, peel away the paper. You can set them out whole or slice into layers. Either way their fun.
Notes
* you can easily substitute out 2/3 of the water for vodka if you'd prefer to make a fun adult party version of these treats.

Now, this fruit “salsa” is nothing like your typical salsa, meaning it is not spicy. It is pretty much how I make my fruit salad. I just call it fruit salsa because I cut the fruit up super small so that you can scoop it up with a cinnamon chip, just like you would your typical chips and salsa. You can use any fruits you want, but I always recommend picking fruits that you know would go well together. For example, chopped up grapefruit would be pretty awful in this mix. As you can see, I used all sorts of delicious fruits – boysenberry, banana, peach, blueberries, mango, raspberries, kiwi, and blackberries. I like to toss in tiny pieces of fresh mint because it tastes incredible but also adds to the “salsa” look. The secret ingredient that ties it all together is a spoonful of lemon curd. Once you mix this stuff into any fruit salad, you’ll never go back.

Next I made my cinnamon sugar tortilla chips. I kinda winged it here but they turned out really well. I just slathered butter on both sides of flour tortillas, cut them into triangle shapes, sprinkled cinnamon and sugar on top, then broiled on low until they were golden brown. Delicious!

Yields: 2 cups salsa
Ingredients
fruit salsa (all fruit peeled and chopped small):
  • half mango
  • peach
  • banana
  • berries (raspberries, blueberries, blackberries, etc.)
  • 2 kiwis
  • fresh mint leaves
  • 1 tablespoon lemon curd
cinnamon chips:
  • 2 large flour tortillas
  • 1 tablespoon butter
  • 4 tablespoons sugar
  • 1 teaspoon cinnamon
Instructions
  1. To make salsa, toss fruit and mint leaves in lemon curd until evenly mixed.
  2. To make the cinnamon chips, set oven broiler to low. Coat both sides of tortillas with butter. Slice into strips and then alternate angles of cuts to create triangles. Toss buttered triangles in cinnamon and sugar. Spread evenly on baking sheet and broil on low until barely golden brown, then turn slices and brown on the other side until golden brown for a total of 5-10 minutes cook time.
  3. Garnish salsa with additional mint.

I love me an easy-to-make drink. Portland has some majorly talented bartenders drink artists that use all sorts of weird ingredients and bitters. In fact, Portlandia did a great skit a few seasons ago that perfectly depicted this town’s bar scene. As much as I would like to put on a lab coat and look like a mad scientists when I’m making one of my tasty drinks, I just don’t have the time to extract my own black walnut bitters or candy the root of some foreign vegetable as garnish. I really like a drink that you can just pour into a glass and serve. I’ll even avoid shaking it in a cocktail shaker if I can get away with it, because one less dish to wash is one less dish to wash, wouldn’t you agree? This is one of those drinks. I’m not a beer drinker. I like some hard alcohol (vodka, tequila, gin… not whiskey), wine, and hard ciders. But, despite always wanting to have developed a love of beer, I just don’t like it. Perhaps my distaste developed when I drank way too much cheap and disgusting beer in my younger years which always led me to 1) do incredibly stupid things and then 2) barf. I can tell you that when I took a local Amber Ale (because almost everything we do here in Portland is to support local businesses) and mixed it with delicious pineapple juice and some Hansen’s Mandarin Lime soda (because its made with sugar and not HFCS), I was pleasantly surprised with how good it tasted. The juice and soda really lightened up the bitterness of the beer and I honestly think that other beer dis-likers like me would enjoy this drink.   2. If tailgating or making for a crowd, increase ratio of ingredients to fill pitcher or punch bowl. Don't forget the red solo cups to complete the effect.

This was one of those recipes where I made it not really knowing what I was doing, but I was extremely pleased with the outcome. I didn’t know if the ratio of ingredients I had purchased was correct, and my OCD brain was so excited when not only did everything divide perfectly between exactly 32 bites, but when placed in a double ring concentric circle on my pizza stone, they were perfectly spaced and nestled that little ramekin of marinara sauce in the middle perfectly. I’m so insanely weird about proper proportions that I may have found myself holding my knees, rocking back and forth in the corner had this not worked out. Pepperoni Pizza Pull Aparts take traditional pizza ingredients and turn them into a two bite appetizer perfect for any party or game day feast.

I’ve talked before about how much I love fat, but un-rendered fat makes me completely ill. Yucky. I feel the same way about floppy pepperoni. That’s why, among like a thousand other reasons, you’ll never see me buy one of those stuffed crust gargantuan floppy pepperoni filled Pizza Hut pizzas. No offence if you love those things. To prevent the floppy pepperoni, I laid mine out on a piece of foil and crisped them up in the oven for a few minutes first. I wasn’t sure if all of the ingredients would fit into each piece of dough, especially since I put an entire black olive inside each one, because everyone in our family loves olives. It worked out perfectly. Yeah, a couple of them had the ingredients peeking through a teeny bit and a few of them had the cheese leak out a wee bit, but that all adds to the final product. I had enough leftover pepperoni to tuck a piece in between every other ball. You’ll also find that 32 is a magic number because you just keep cutting things in half until you get 32 pieces (1 x 2 x 2 x 2 x 2 x 2). Math is fun. I almost always make pizza with my homemade pizza dough, but I was lazy wanted a bunch of herbs in my dough and they’re all dead in my garden right now, so I bought a pack of pre-made garlic herb dough at Trader Joe’s. Ingredients
  • 16 ounces pizza dough
  • 5 ounces pepperoni
  • 8 ounces fresh mozzarella
  • 6 ounces (drained weight) can of pitted black olives
  • 1/4 cup parmesan, grated
  • 1 cup marinara sauce
Instructions
  1. Preheat oven to 450 degrees F with pizza stone in the oven. If using metal baking sheet, do not preheat in oven.
  2. Arrange pepperoni on a sheet of foil and cook in preheated oven until crispy around the edges, about 5 minutes.
  3. On a lightly floured work surface, cut pizza dough into 32 equal portions (cut it in half, then each piece in half to make 4, then again to make 8, then again to make 16, then again to make 32). Do the same thing with the mozzarella. Drain olives.
  4. Flatten piece of dough and place pepperoni folded or torn into quarters, a piece of mozzarella, and an olive on dough. Wrap corners around and then press dough to completely cover ingredients. Squeeze to form into ball. Repeat with remaining ingredients. If you don't put a full piece of pepperoni in, you will be able to use the extra in between the balls in the cooking process.
  5. Remove hot stone from oven. Arrange dough into two concentric circles that touch, making the inside whole big enough for a ramekin of marinara sauce. Tuck any unused pieces of pepperoni in between the dough balls. Sprinkle the wreath with the parmesan cheese. Put the oven safe container of sauce in the middle and cook everything all at once until the dough starts to brown, about 15 minutes.
