Apparently, chia pudding isn’t a new thing. Sometimes I’m kind of behind on the trendy food curve, and this stuff probably became all the craze a couple of years ago. I’ve had a steady supply of chia seeds at my home for quite some time now because they’re a nutritional superfood. Bottom Line: Despite their tiny size, chia seeds are among the most nutritious foods on the planet. They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients. I’d throw the occasional tablespoon in my smoothie or on my oatmeal, but this is the first time I’ve actually made pudding with them.Strawberry Coconut Chia Pudding is an easy, tasty, healthy, paleo, nutrient packed snack that not only tastes great and fills you up, but its good for you!

To be completely honest – I really enjoyed this pudding. Not only did I think it tasted great, but I really liked the texture and it made me feel good. Because I blended some strawberries into the pudding as well as adding some after the fact, there was a perfect balance of strawberry and coconut flavors. I ended up eating it with even more fresh strawberries than what I show in my pictures and I thought the crunch from the toasted coconut I added was the perfect balance when combined with the texture of the pudding. This definitely qualifies as a fast, healthy, and delicious snack that both you and your kids will love!

Ingredients
  • 1 (14.5 ounce) can full fat coconut milk
  • 1 cup (about 10 small) strawberries, stems removed
  • 1/4 pure maple syrup
  • 1/2 cup chia seed
To garnish:
  • Additional chopped fresh strawberries
  • Sweetened toasted coconut, if desired
Instructions
  1. Combine coconut milk, whole strawberries, and maple syrup in blender. blend until smooth.
  2. Stir in chia seed and refrigerate until it gels, about two hours.
  3. To serve, layer pudding with chopped strawberries and toasted coconut. Enjoy!

Christmas is over and the new year is just around the corner. I don’t know about you, but while I’ve been eating my cooking and gulping my oh-so-delicious eggnog lattes, I’ve been daydreaming about all the changes I’ll be making with my eating habits. I do this to myself every year – eat whatever I want until my pants start to get tight in all the wrong places, then I make some changes.

This ABC pudding is good. A little weird, but still very good. I did not tell my kids that I put avocado in their chocolate pudding. I didn’t tell them that it was full of banana either. I did, however, give them each a small bowl for dessert and they both loved it. They devoured it. They licked the bowl clean. It wasn’t until I told them the next day that it had banana and avocado in it that they said it was disgusting. Go figure.

Now, you can probably make this paleo with some sort of paleo-friendly sweetener. I’m a brown sugar fan myself. I can’t go and replace all of my vices too soon, now can I? As long as the avocado and banana you use are perfectly ripe, meaning soft and at the peak of their flavor, and not overly ripe, meaning brown and mushy, than this will taste surprising like real chocolate pudding.   • 2 ripe avocados, peeled
  • 1 ripe banana
  • 1/2 cup cocoa powder
  • 1/2 cup brown sugar
  • 1/3 cup coconut milk
  • 2 teaspoons vanilla
Instructions
  1. Add all ingredients to the blender and blend on medium speed until creamy and smooth. Chill at least 30 minutes in the refrigerator until cold. Enjoy!

Do you know what happens when you throw a whole chicken into your crockpot with ingredients like lemon, basil, onion, garlic, and olive oil?  You wait all day and then end up with the softest, most tender and flavorful chicken. Super easy. I always struggle to take photos of things like a whole chicken that’s cooked in a slow cooker because it basically falls apart when you try to lift it out. How is it possible to stage something like that to look pretty?  I was able to keep a few pieces from entirely sliding off the bone in order to get the one shot.

This is a super easy and healthy way to make chicken. You can definitely cook it this way and serve it up with some salad and mashed potatoes for an easy dinner. Go for it. I personally prefer to cook my chicken like this, though, when I want to shred it and eat it on salads or in other recipes that call for shredded chicken like these killer chipotle quesadillas. The best reason for cooking your chicken in the slow cooker, other than the fact that you throw a few things in a pot and get to walk in from a stressful day at work to the wonderful aroma of a home cooked meal, is that you can take all the meat off and then throw the skin and bones right back in with some carrot, celery, a bay leaf and water to make some insanely good homemade chicken broth.

Yields: 1 chicken
Ingredients
  • 1 onion, sliced
  • 1 whole chicken, rinsed with any insides removed
  • 1 lemon
  • 1 cup of fresh basil leaves
  • 2-3 cloves garlic, chopped
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt
Instructions
  1. Place sliced onions in your slow cooker and set chicken on top. Zest the lemon and add the zest to the slow cooker. Then slice it in half, squeeze all the juice over the chicken, and throw the lemon halves in. Add the basil leaves and garlic. Pour the olive oil over the chicken and then add the salt. Cook on high 4-5 hours or low for 6-8 hours. After its done cooking, remove the meat and be sure to put all the skin and bones back in along with some other ingredients to make slow cooker chicken broth.
