I’m a huge fan of vanilla paste. When you add it to your favorite recipes, you get that intense vanilla flavor without any of the alcohol you get when you add extract. If you don’t have vanilla beans on hand, paste is a great alternative. I was at the farmer’s market last week and our local store, New Seasons Market, was giving away samples, along with the recipe, of a blackberry vanilla mocktail. First of all, that little two-sip sample they handed out was so refreshing on that gorgeous sunny day. Second, I watched them prepare the next batch and what were they using for the vanilla? This same exact vanilla paste. New Seasons is a high end grocery store located throughout the Portland metro area, and I knew that if they were using this product, it had to be a good one.

The base of this recipe is all of the ingredients, minus the seltzer water that gets added just before stirring. Pressing the blackberry puree through a fine mesh strainer is a serious pain in the butt, but well worth the effort to avoid seeds in your drink. These blackberries were destined to be used for something wonder. We picked them ourselves and my poor son got stung by a wasp on the berry farm! After that, I had to make him a special treat. The sweetened blackberry vanilla puree can be added to ice cube trays and frozen if you’d like. I also took the puree to a backyard party and we mixed it with lemonade. There are tons of options!

Ingredients
  • 2 pints fresh blackberries
  • juice from 3 lemons
  • 1 1/2 teaspoons vanilla paste
  • 2 tablespoons of honey
  • sparkling water
Instructions
  1. Puree blackberries in blender and strain through fine mesh strainer. I recommend using a silicon spatula to press as much of the fruit through. Discard the seeds.
  2. Add the lemon juice, vanilla paste, and honey to the puree. Stir well and taste. Add more honey if needed.
  3. Store this blackberry base in an air tight container in the refrigerator for up to five days until ready to use.*
  4. To serve, combine in a pitcher with sparkling water (amount depends on how strong you want the blackberry flavor) or allow each person to add puree to their ice filled glass and they can top with sparkling water.
Notes
* Puree can also be frozen in ice cube trays for later use.

When you add fresh ginger to anything, it gives it a real bite, but the flavor is quite energizing at the same time. When I made this drink, the ginger flavor really came through, but that was because I shredded up my ginger with my microblade instead of chopping it up with a knife. More surface area = more flavor. If you want the ginger to come across a bit milder, I recommend chopping it into larger pieces. Then you top with blueberry juice. Then, you have to make a critical decision: do you top with sparkling apple cider or do you top with sparkling wine? I suppose it depends greatly on who will be enjoying the cocktail/mocktail. If you’re undecided, you could always add a little of each and call it a day. Whatever tickles your fancy. Ingredients
  • 1/2 cup blueberries
  • 1 tablespoon ginger, minced (the smaller the mince, the more intense the ginger flavor)
  • 1 tablespoon sugar
  • juice of 1/2 lemon
  • 1 cup blueberry juice, chilled
  • 1 cup sparkling wine (or substitute sparkling apple juice), chilled
Instructions
  1. Mash blueberries with ginger, sugar, and lemon juice. Allow the flavors to blend for at least five minutes, then press through a fine mesh sieve to discard the solids.
  2. Divide the mixture between two champagne flutes. Top with blueberry juice, then sparkling wine.

I saw the most beautiful red and white layered drinks the other day while I had a 15 minute block of time to fill and I used it staring at food photos on the internet. I got the bright idea that I would make said red and white layered drink. It can’t be that hard to blend up something delicious that settles into perfectly uniform layers, right?  Well, I got the delicious part down, just not so much the layered part. Not to worry. Your mouth won’t care – I promise you. I still ended up alternating the pour of my red and white layers, they just mixed to together a little more than I had wanted. I’ll tell you one thing though: This drink was DE-LIC-IOUS. Oh my. I made it for my kids because it was a rare thing for me to make a delicious drink that wasn’t filled with booze, but I figured I’d better let the kids have something special once in awhile too. I will never admit, however, to the fact that any time they turned their heads I stole a sip of their drinks.

The combination of the pina colada flavors from the pineapple juice and coconut cream mixed with the fresh strawberries made tart by fresh lime juice and sweetened up with simple syrup – ugh. It was pure perfection. It was creamy and tropical and perfectly sweet. It made me feel like I was sitting on a white sand beach with warm clear water. Oh yes, this drink was tasty!

Ingredients
  • 3 ounces unsweetened coconut cream
  • 3 ounces pineapple juice
  • 6-7 large strawberries
  • 2 ounces simple syrup
  • 1 ounce fresh lime juice
  • lime
Instructions
  1. First, blend the coconut cream, pineapple juice, and a handful of ice until smooth. Pour into a separate measuring cup and set aside. Wash out blender.
  2. Second, blend together strawberries, simple syrup, lime juice, and a handful of ice.
  3. Alternate pouring coconut mixture with strawberry mixture into a large glass. Garnish with a fresh strawberry. Enjoy!
Notes
If you don't have simple syrup on hand, its easy to make. Just combine equal volumes of water and sugar in a saucepan and heat while swirling just until sugar dissolves. Cool before using and store in air tight container in the refrigerator.

This was sure a fun way to consume a watermelon.

I was at the grocery store like I am every week, and I started to daydream about summer produce. You see, its around late spring that I start to go into some serious withdrawl. The citrus and apples and pears of winter can only tide me over for so long. Then I start longing for the sun kissed fruit of the Pacific Northwest. The bounty of berries, melons, and tomatoes up here is incredible, but also sadly very short lived. I had to do something to tame my craving, so I bought a baby watermelon. Long story short, it wasn’t very good, so I through it in the blender. I do this every time a watermelon isn’t perfect and I end up making really good drinks like blended watermelon margaritas, watermelon gin fizz, watermelon mint agua fresca, and this watermelon limeade.

If you recall, classic lemonade is basically made from lemon juice, water, and simple syrup. I followed the same methodology for this drink, but instead of lemon juice I used lime and instead of water, I used watermelon juice. It was perfect!  If you find it needs to be diluted, just add a punch of ice, let it melt a bit, then stir. This is a perfectly refreshing drink for a hot summer day, and can easily be turned into a quick cocktail with a splash of your favorite booze.

  2. To make watermelon limeade, combine watermelon juice, lime juice, and simple syrup in a pitcher. Add ice. Serve immediately or allow ice to melt a bit, stir, and then serve.
Notes

This drink sure was a tasty treat. I made it for a few different reasons:

1) Cinco de Mayo is coming up and I love any excuse to make a margarita. ANY. Excuse.

2) With the exception of the sugar, this is basically a smoothie.

3) I had a bag of frozen mango in the freezer and I was tired of looking at it.

The end result was a creamy, smooth, sweet and tangy glass of tropical perfection. We have a vacation coming up where I plan to *gasp* not bring my computer. All I want to do is read a book (despite the abundance of grammatical errors on my blog, I will let you know that I do read… occasionally), swim in the ocean, savor every moment of watching my kids, and consume as many tropical pleasures as my body will allow. You’d better believe I’ll be making this, but if I’m in the tropics I will be using fresh fruit and a hefty splash of tequila.

  • 1 (16 ounce) package frozen mango
  • 1/2 cup freshly squeezed orange juice
  • 1/2 cup freshly squeezed lime juice
  • 1/2 cup simple syrup
  • 1/2 cup water
Instructions
  1. Combine all ingredients in blender and blend until smooth. If your mango is very frozen, you may need to add even more water to make it thin enough to drink, but I prefer this version and to let it melt as we drink it.
  2. Garnish with lime and enjoy. To make the adult version, just pour in some tequila and stir or blend.
