Perhaps it’s because we get stuck in a rut where we just put the standard fixin’s on our burgers or we get bored dipping our fries in plain old ketchup. Ask anyone – fry sauce makes most things better. Its a proven scientific fact. Know what else people love? Bacon & jalapeno!

Much like peanut butter & jelly, chocolate + wine, and chips & salsa, bacon was pretty much made to be paired with jalapeno. Let me rephrase. Bacon is perfectly fine on its own. Rather, jalapeno was made to be paired with bacon. Yeah, that’s better.

I feel kind of funny giving you a recipe for fry sauce because it’s mayonnaise and ketchup. We don’t really need a recipe for that, now do we? I suppose the point of this post is more of an idea than a recipe. Because, after all, you can change the quantities of each ingredient and still have something delicious to dip your fries in or smother your burger in.

Speaking of burgers, this is actually a burger that is made of 50% grass fed ground meat and 50% ground up applewood smoked bacon. Yes, you read that right. I fed my family beef and bacon burgers for dinner on a white bun with french fries and fry sauce. Before you brand me as the worst mother ever, I’ll have you know that my kids each drank a glass of freshly pressed juice made from beet greens, apple, carrot, lemon, ginger, and pomegranate seeds before dinner. It’s all about balance, amIright?

Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons cooked crisp bacon, minced
  • 2 tablespoons fresh jalapeno, minced
Instructions
  1. Mix all ingredients together and serve immediately. Use as a dip for fries or onion rings or as a spread for sandwiches and burgers.

I adore salmon. In fact, I hadn’t realized how many salmon recipes I actually had on my own blog until I did a quick search. I suppose living in Portland, Oregon, has spoiled me. I also love little appetizers that can be enjoyed in two attractive bites or shoved entirely in my mouth when no one is looking. I love these little crostinis because they really couldn’t be easier to make, but they’re just so darn pretty! Doesn’t garnish make everything better?

I modeled this recipe after my smoked salmon dip which is the food equivalent to crack, in my opinion. Seriously, don’t put that stuff in front of me because I will shock and awe everyone around me when they see how much salmon dip I can consume.

Similar to my dip, this recipe has cream cheese, fresh dill, a little kick from fresh jalapeno, and lemon juice. If you’re eating salmon, you must have lemon and dill. That’s just a fact. Don’t even try arguing with me. I also do love me some capers with fish. All the flavors blend together oh-so-perfectly.

Yields: 2 dozen
Ingredients
  • 1 baguette, sliced 1/4 inch thick
  • 2 tablespoons olive oil
  • 5 ounces wild smoked salmon
  • 8 ounces cream cheese, room temperature
  • 1 jalapeno, minced
  • 4 sprigs fresh dill, stems removed and minced
  • 1 lemon, juiced
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon salt
  • Garnish with capers and more fresh dill
Instructions
  1. Preheat oven to 350 degrees F. Coat both sides of bread slices with olive oil. Arrange in single layer on baking sheet and bake in preheated oven for 15 minutes, turning after about 10 minutes. Allow to cool.
  2. Arrange toasts on a platter with a piece of salmon on top of each one.
  3. In a small bowl, mix together cream cheese, jalapeno, dill, lemon juice, garlic, and salt. Either spoon a small amount on top of each crostini or squeeze out of a plastic bag with the corner snipped off.
  4. Top with capers and additional dill.

Let’s face it – bacon makes just about every meal better. I think a bacon jalapeno pairing is one of the best flavor combinations in the world, so it only made sense to make a bacon wrapped jalapeno popper chicken breast for dinner. I picked up this package of Wright® Brand Bacon at the Kroger store near my house. I knew it would be perfect for this dinner because they do Bacon The Wright Way™Wright Brand Bacon is a great choice for any meal – breakfast, lunch, or dinner! I went with the Applewood Smoked flavor, but did you know they also make Hickory Smoked, Smoked Brown Sugar Bacon, Bourbon Barrel Smoked, and Oak Barrel Smoked?  If you’ve never tried Wright Brand, know that it is masterfully crafted for a richer bacon experience, thick-sliced, hand-selected & hand-trimmed, naturally smoked with wood chips, and is made from the best cuts of high-quality premium meat.

I thought about simply wrapping the bacon around the chicken, but quickly came to the realization that I could make dinner a lot more interesting while using even more bacon if I did a bacon weave instead! More bacon is always the better choice.  I never limit myself or feel guilty when I indulge – in fact, I encourage you to do the same. Life is too short for only one piece of bacon.

There’s a trick to stuffing the chicken breasts so that the cheese doesn’t ooze out when you cook it. Lay the breast on a cutting board so that you open up the small piece with the chicken tender like a book. Be sure to keep this piece attached. Then, using a small, sharp knife, cut a pocket in the thick part of the breast, taking care to not cut all the way through. Use your fingers to reach in and make the pocket as big as possible without tearing it. Then, stuff your cream cheese and jalapenos in the center and use the chicken tender part to wrap around and seal the opening. Pretty cool trick, eh? In the photo below, the breast on the right has already been stuffed and wrapped.

Lay that stuffed sealed chicken breast on top of that lovely bacon weave that you made and then roll it on over. Tuck the ends of the bacon underneath as best as you can and secure  with toothpicks where needed.

Funny story (sort of) – I was planning on baking these in the oven but my lower heating element broke when I was preheating the oven. Awesome, right? Not really. Fortunately our barbecue was a few steps away and it was a gorgeous day to be cooking outside. Basically, you can cook these in the oven or the barbecue and they will turn out perfectly. I highly recommend using an internal thermometer so you know exactly when they are cooked. Although the bacon will be fully cooked and rendered by the time the chicken is cooked, it may not appear done as it won’t be dark and crispy.

If you prefer your bacon to finish off with a little sizzle and a beautiful golden brown finish, you’re going to want to pop it in the oven under the broiler for 5-10 minutes to finish it off. Just be sure to start this process at least 5 degrees before it reaches final cooking temperature and crack that oven door to get the nice brown without over cooking it, if needed. Fortunately – it was my lower heating element that broke so I was able to use my broiler without any issue.

I was worried my jalapenos were going to be too spicy because my fingers and nostrils were burning when I was cutting them, but by the time they cooked, it was perfect. I honestly can’t even begin to tell you how delicious this dinner was. It really was incredibly easy to make. I served it up with some smashed potatoes and sautéed fresh corn. These would be perfect for tailgating too! Just prepare them ahead of time, wrap tightly in plastic wrap to store in your cooler during transport, and then cook them up on the grill. The smell is amazing and you will certainly have everyone wishing you were their best friend at the game!

Ingredients
  • 1 pound bacon (12 slices)
  • 2 (about 1.5 pounds) large boneless skinless chicken breasts
  • 2-4 jalapenos, stems and seeds removed, chopped
  • 4 ounces cream cheese
Instructions
  1. To arrange the bacon in the basket weave pattern, lay four slices lengthwise. Then cut two slices in half to create four short slices. Weave the four short slices through the long slices.
  2. To stuff the chicken, pull the tender away from the main breast but leave it attached. Then, using a small sharp knife, create a pocket starting near the chicken tender. You want this pocket to be as big as possible without cutting all the way through the chicken.
  3. Divide the cream cheese and jalapenos evenly between the two breasts and stuff them in the pocket you cut. Then, take the attached tender and roll it over the opening to seal it.
  4. Place the stuffed breast on top of the bacon weave and roll it over so that the bacon is on top. Secure any loose pieces of bacon with a toothpick. Insert a meat thermometer into the thickest piece.
  5. Bake in a preheated 375 degree oven or grill for 50-55 minutes or until the internal temperature reads 160 degrees F. For the final few minutes of cooking, place the bacon wrapped breasts under the broiler to give them a nice brown. You want your final cooking temperature to reach 165 degrees F, so once you hit that, broil with the oven door open if you prefer more browning.
  6. Allow chicken to rest for at least five minutes. Slice with a serrated edge knife.

I’m not gonna lie – this recipe was good. Like, really good. As in, I just made it and I already can’t wait to make it again.

This red pepper marinated Grilled Shrimp with this scratch made Roasted Red Pepper Aioli makes the perfect flavorful summer appetizer or dinner.

The foundation of this recipe is Mezzetta peppers. I used both the Deli-Sliced Tamed Jalapeno Peppers as well as the Roasted Bell Peppers. Mezzetta truly is one of my favorite brands and I’ve loved every single one of their products that I’ve tried, from their pasta sauce to their olives to these peppers. Those roasted red peppers are darn near perfect – they have the perfect amount of charred roasted flavor and also have the perfect ratio of tasty oil marinate to tender flavorful peppers. They are the best I’ve ever had!

This recipe has two components – the roasted shrimp and the homemade aioli. So many aioli recipes have you combine ingredients with already made mayonnaise. I much prefer to make it myself. The components of a homemade aioli are egg yolks, lemon juice, garlic, and oil. I added some of the Mezzetta Jalapenos and even more of the Roasted Red Peppers and it created the most flavorful and delicious aioli. Keep in mind that this recipe makes quite a bit of aioli – much more than you need for the shrimp. That is a very good thing, however. We’ve been using it as a spread on our sandwiches and my-oh-my does it provide an insane amount of flavor. YUM!

For the shrimp, I used a recipe idea I found from the Mezzetta website. They recommended to use the brine from the red peppers, along with some fresh rosemary and garlic, to marinate the shrimp. This, alone, was a fantastic recipe. The shrimp had the perfect amount of flavor to eat on their own or on top of something like a salad. The rosemary made them especially visually pleasing.

Shrimp is so darn easy to cook. I highly recommend this recipe to serve for dinner, perfect for enjoying while dining al fresco, or as an appetizer. Either way, I guarantee people will love them and will be begging you for the recipe!

Ingredients
Aioli:
  • 6 large cloves garlic, peeled
  • 2 egg yolks, room temperature
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon kosher salt
  • 1/2 cup Mezzetta® Roasted Bell Pepper, drained and chopped (Reserve brine for marinade)
  • 1 tablespoon Mezzetta® Deli Sliced Tamed Jalapeno Peppers
  • 3/4 cup olive oil
Grilled shrimp:
  • 1 pound large shrimp, washed, deveined, tails left on
  • 3 cloves garlic, minced
  • 1 tablespoons fresh rosemary, minced
  • roasted red bell pepper brine
Instructions
  1. Place the garlic in a food processor and pulse until finely chopped, stopping to scrape down the sides as needed.
  2. Add the egg yolks, lemon juice, salt, roasted red peppers, and jalapenos and process until well combined. Scrape the sides.
  3. While the machine is still running, add the oil in a thin, steady stream until it is completely incorporated and the mixture is thickened.
  4. Taste and adjust the seasoning if necessary. Refrigerate until ready to use.

Wanna hear a funny story? I’ve been a mom for almost a decade now, but before I was pregnant I didn’t like anything spicy or pickled. I think back to my eating habits and boy were they boring! Jalapeno poppers come in all shapes and sizes. I haven’t consulted wikipedia on the subject yet, but I think the traditional jalapeno popper is breaded and deep fried. The thought of that sounds absolutely tantalizing, but also a lot of work. Plus, boiling grease scares me – a fear that I hope to someday get over. Thus far, I have only made wrapped jalapeno poppers, jalapeno popper potato bites, and jalapeno popper chicken flautas – all baked and of course made with bacon.

A good popper starts with fresh jalapenos. I have no idea how to know whether they are spicy or mild until I cut into them and find out when my fingers start to burn. If you can tell whether one is spicy before you cut into it, please let me know.

  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons Ranch Seasoning Mix
  • 8 ounces bacon (okay to use ends and pieces), cooked & crumbled
  • 2 green onions, thinly sliced
  • 1 1/2 cups sharp cheese, shredded and divided
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a medium sized bowl, mix together cream cheese, seasoning mix, bacon, green onions, and half of the shredded cheddar. Mix well to combine.
  3. Fill each well of the halved jalapenos with the mixture and then top with additional shredded cheese.
  4. Place on baking sheet and bake in preheated oven for about 30 minutes, or just until the tops start to turn golden brown and the cheese mixture starts to bubble.
  5. Serve warm.

For this recipe, I wanted to merge two of my favorite game time recipes – jalapeno poppers and chicken flautas – to create one ultimate game time appetizer. This was a raging success! Not only was this recipe insanely easy to make, my husband deemed it one of his top 5 favorite things I’ve ever made.  You see, I do a lot of cooking, hence having the food blog, so having a new recipe land in his top 5 is no small feat.

The key to having this recipe not only be outrageously delicious, but easy to make, is in the tortillas. I’ve been buying these TortillaLand tortillas at Costco now for years. If you’ve never enjoyed these, you’re in for a serious treat. You see, you buy these tortillas completely uncooked and you cook them yourself at home. That means that they are not only fresher tasting tortillas, but they are so much easier to work with than those standard tortillas that are already cooked that tear when you roll them and generally taste a bit dry in my opinion. These are downright delicious.  They are made with five simple ingredients – wheat flour, water, canola oil, salt, sugar – and offer a great taste and texture that I’ve never been able to find in any other kind of tortilla. I’ve used these TortillaLand tortillas in everything from burritos to desserts to these flautas.  Trust me, once you try them you’ll be wishing you had found them earlier in life. These flautas couldn’t have been easier to prepare. I bought pre-cooked chicken breasts. Of course, you can use leftover rotisserie chicken or even cook the breasts on your own. I even cheated a little and used pre-shredded cheese.

Because the tortillas aren’t yet cooked, they roll up very well. No breaking or tearing here. Only a tight little flauta.  You know, I debated whether I should call these taquitos or flautas and the trusty internet told me that taquitos are typically made with corn tortillas and that flautas are typically made with flour, otherwise there really isn’t a difference.  Hmmm.  You learn something new every day!

I used a canola oil spray on the baking sheet as well as on the tops of the tortillas and they browned up to lovely perfection. You’ll also know when they’re done because the jalapeno cheesy middle will want to start bubbling and oozing out. Oh yes.

Ingredients
  • 4 chicken breasts, cooked and shredded
  • 8 ounces cream cheese, softened
  • 4 jalapenos, stems and seeds removed, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 2 cups Mexican blend shredded cheese (cheddar, jack, etc.)
  • 16 TortillaLand tortillas
  • oil spray
Instructions
  1. Preheat oven to 425 degrees F.
  2. In a medium sized bowl, combine chicken, cream cheese, jalapenos, salt, cumin, garlic powder, and shredded cheese.
  3. Divide the chicken mixture evenly between the 16 tortillas and roll tightly.
  4. Generously spray baking sheet with cooking spray and place rolled flautas in a single layer with the seam side down on greased pan. Spray tops of flautas with more cooking spray.
  5. Bake until cheese is melty and tortillas begin to turn golden brown, about 10-15 minutes.
  6. Serve warm on their own or with guacamole or fresh toppings like cilantro or additional jalapeno, if desired.

This recipe starts by drying your olives. The pastry won’t stick well if its wet, so pat those babies dry. I like to pulse the dough mixture in the food processor so that its evenly mixed. Its similar to pie dough with the added goodness of sharp cheddar and parmesan, but its not as fragile, so its really hard to mess this one up folks.

Then, you divide the dough evenly between all of your stuffed olives and you wrap them up in cute little balls. Bake them in a hot oven and the wonderful smells that flow out of your oven will make your mouth water.

Ingredients
  • 1 (10 ounce) jar Mezzetta jalapeno stuffed olives
  • 4 ounces (about 1 cup) sharp cheddar, shredded
  • 2 ounces (about 1/2 cup) parmesan, shredded
  • 1 cup all purpose flour
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon white pepper
  • 4 tablespoons (half a stick) butter, softened
Instructions
  1. Drain olives. Reserve liquid if you'd like to make a spicy dirty martini, otherwise discard. Lay olives out on a towel and then use a separate towel or paper towel to give them a gentle squeeze to dry them off.
  2. Use a food processor to pulse cheeses with flour and spices. I used the processor to shred the cheese too. Add the softened butter and pulse to combine.
  3. Transfer the dough mixture to a bowl and squeeze together. Add one teaspoon of water at a time to dough, then use hands to mix together. Continue to add water and mix until dough forms a ball without crumbling. Be careful not to add too much water (I probably added about 4 teaspoons).
  4. Divide the dough evenly so that you have the same amount for each olive (the amount of dough worked out perfectly for my 25 olives). Smash each portion of dough in between your hands to form a flat disk and then use that flattened dough to fully wrap your olive.
  5. At this point, you can freeze them for later, or you can cook them up.
  6. Set wrapped olives on a nonstick or parchment lined baking sheet and bake in preheated 400 degree F oven until golden brown, about 15-20 minutes.
  7. Serve them hot and watch them disappear!

These may very well reside in my top ten favorite things to eat. If you’ve visited my blog before, you know I love bacon + jalapeno. I have at least half a dozen bacon jalapeno recipes on my blog, and I’ve only been doing this blogging thing a little over a year now. Some things are just meant to be together, and those two ingredients are soulmates. Well, when you pair this combo with sharp cheddar, butter, and creamy potato, you will find yourself moaning with pleasure after each bite. I started this recipe by making my twice baked potatoes which I always make ahead and then heat up over the fire while camping. Only difference was that instead of refilling the potato skin, I filled half a jalapeno, and that was a stroke of pure genius.These spicy Twice Baked Potato Jalapeno Poppers are packed with spicy flavor, crisp bacon, and melty cheese. Ingredients
  • 4 large russet potatoes, scrubbed clean and dried
  • 4 tablespoons butter, sliced
  • 1/2 cup sour cream
  • 1 cup sharp cheddar, shredded
  • 1 (16 ounce) package bacon ends and pieces, cooked
  • salt and pepper to taste
  • 16 jalapenos, split lengthwise, seeds and veins removed
Instructions
  1. Preheat oven to 400 degrees F. To cook the potatoes, place directly on the oven rack and cook for 30 minutes. Turn, pierce with fork a few times, and continue cooking for another 30 minutes. They should feel soft when gently squeezed at this point. If the potatoes are still hard, cook for another 15 minutes, check for softness again, and either remove from oven if soft or continue rotating, cooking and squeezing. Allow potatoes to cool enough to handle.
  2. Remove the peel from the potatoes and discard. Add cooked potato to a large bowl.
  3. Combine potato with butter, sour cream, and cheese until well combined. Season with salt and pepper to taste. When the mixture is seasoned enough that you want to grab a giant spoon and eat the entire bowl right then and there, then you're ready to fill the jalapenos.
  4. Scoop the mixture into the halved jalapenos. I found it easiest to squeeze the amount I wanted to fill into an egg shape and then pressing it into the jalapeno. The filling will create a mound over the edge of the pepper.
  5. Smash the cooked bacon pieces into the top of each potato mixture.
  6. At this point, they can either be refrigerated to cook later or you can heat them up now.
  7. If at room temperature, broil on low until golden brown, 5-10 minutes. If removing from the refrigerator, heat in preheated 400 degree F oven until heated through and then broil until golden brown.

Our family sure does love breakfast burritos. Both my husband and I pretty much get one from the cafeteria at work every day, pending which cook they have working the grill. Often times he will request I make up a batch of breakfast burritos so that he can just reheat them when he’s hungry and because I’m that kind of wife, I will… about 75% of the time. Even my kids love breakfast burritos. I mean, what’s not to love? You’ve got everything you love about a homemade breakfast wrapped up tightly in an edible wrapper. For most people, making a breakfast burrito is a no-brainer, but I’m just going to tell you how I do it in case it gives you some ideas that you may not have tried before.These filling and tasty Ultimate Breakfast Burritos are the perfect make ahead breakfast for any busy work week or weekend camping adventure.

First off, the eggs must be “set but wet”. I made that term up. I’m thinking I should copyright it. Why am I telling you to make slimy cafeteria style eggs for your burritos? Because when you heat them up on the grill, you’re going to inevitably cook the insides as you warm everything up, and the only thing worse than undercooked eggs are overcooked eggs.

The next thing I like to do is use foil squares. I buy a box at Costco. Can you just use a regular box of foil and unroll each piece? Yes. But I feel like I have a process down when I use my special foil squares. You know I’m weird like that. I like to get all assembly line on my burritos, otherwise it just ends up being too much work. The other trick is to find some really good tortillas. For this batch I tried two different brands. The ones with the dark spots won me over as far as stretchability and softness. I can’t stand it when my tortilla tears, and I really push them to the limit.

I always use freshly grated sharp cheddar or some kind of cheddar blend because I like how it melts. The pre-grated stuff never melts exactly how I like. I’ve also found that I prefer to use the rectangle hash browns. Seasoned breakfast potatoes don’t give the burrito the crunch I like and lose hash browns are just too hard to make. There. I admit it. I can’t make lose hash browns. They are my nemesis because I either burn them or I add too much or too little oil. Next thing you do is get your son to write everyone’s names on their burritos. That way you know you’ll get the one with the jalapeno and extra bacon. We love to take these burritos camping because we just heat them up inside their foil on the grill or over the fire grate, rotate occasionally to heat through, pour on some (also warmed by the fire) hatch green chile salsa, and BAM! You have the most satisfying no-mess camping breakfast. That tortilla gets so wonderfully crisp on the outside and everything you put on the inside is perfectly hot and steamy.   • 8 hashbrowns, cooked
  • 8 large soft flour tortillas
  • 2 jalapenos, seeded and diced
  • 2 cups sharp cheddar, shredded
  • green chile salsa, optional
Instructions
  1. These directions are for making your breakfast burritos ahead of time.
  2. Start by cooking your bacon ends and pieces according to the post instructions. Set cooked and drained bacon aside.
  3. To make your eggs, whisk together eggs and a couple tablespoons of water until very light and fluffy. Using large saute pan, melt butter over medium low heat and cook eggs while stirring very infrequently until "set but wet". Imagine cafeteria scrambled eggs that are too underdone to eat. Set aside.
  4. Assemble your burritos by placing each flour tortilla on a square of foil. Top each with a cooked but cooled hash brown rectangle, along with equally divided portions of bacon, jalapeno, cheese, and scrambled egg. Wrap by folding in ends and then rolling up. Wrap tightly with foil. Store in an airtight container in the refrigerator.
  5. When ready to cook, place foil wrapped burrito over hot grill or campfire grate, rotating until heated through. Tortilla will get nice and crispy, cheese will melt, and eggs will be perfectly cooked. Top with salsa and enjoy!
