These Buffalo Cauliflower Bites taste so much like traditional chicken wings, but are a healthy vegetarian version perfect for a light snack.I’ll admit, cauliflower has not been one of my favorite foods, but much like beets, broccoli, and squash, I have grown to like it throughout my adult years. After I made this recipe, I would actually dare to say that I loved it.

These Buffalo Cauliflower Bites taste so much like traditional chicken wings, but are a healthy vegetarian version perfect for a light snack.I paired my spicy and flavorful buffalo cauliflower bites with a rich and creamy blue cheese dressing as well as some cool, crisp celery sticks that helped mellow the heat from the hot sauce.  Overall, it made a healthy snack. I’m not going to lie – I love a good chicken wing. But, when you think about all that delicious skin that makes the chicken wing so wonderful, replacing it with something like cauliflower is often a good choice.

Even if you don’t like cauliflower (like, for example, my husband), you might be surprised to find how much you love this recipe!

Ingredients
  • 1 head cauliflower
  • 1/2 cup flour
  • 1/2 cup water
  • 1 T olive oil
  • 1 T garlic powder
  • 1/2 tsp salt
  • 2/3 cup (5ml jar) hot sauce (I prefer Frank's Red Hot)
  • 2 tablespoons butter, melted
Instructions
  1. Preheat oven to 450 degrees F. Heavily grease baking sheet with butter. Divide cauliflower into bite sized chunks.
  2. In a large bowl, combine flour, water, olive oil, garlic powder and salt until well combined. Add cauliflower and gently toss to coat each piece evenly. Transfer coated cauliflower to prepared baking and bake in preheated oven for 15 minutes, turning once halfway through cooking time. Remove from oven.
  3. In large bowl, combine hot sauce and melted butter. Add partially cooked cauliflower and gently toss to evenly coat. Return cauliflower to baking sheet and continue cooking for an additional 20-25 minutes, turning once, until pieces start to turn golden brown.
  4. Remove from oven and serve warm with blue cheese dressing and fresh celery sticks.

I talk about game day food all the time on my blog. Do I ever watch football?  Nope. Not ever, you ask? Nope. Not interested. There are two things I absolutely love about having football on the tv, however.  First is the food (so obvious, right?). What’s not to love about cheese, barbecue, dips, and drinks?  Nothing.  I love every single thing about game day food. I beg you have to know what the second thing I love about having football on tv, right?  Well, its the really cool overhead shots and the fact that they move that line on the ground with each play. Or each down.  Whatever.  I don’t know how it works.  It just blows my mind that they can make that line move under their feet.  I know its digital, but it sure looks real.

I have no idea who’s playing in this year’s superbowl.  I don’t know if its even been determined yet. The only thing I know is that good food and football watching go hand in hand.  Below you’ll find recipe ideas that will make any game day watching experience grand. Enjoy!

Even I couldn’t resist when I was making this. I made a very poor decision to make them when I was pretty hungry, and the result was me burning the roof of my mouth because I shoved one in my face a few minutes before I should have because I simply couldn’t wait.

Let’s just talk about how easy these are to make for a minute. All you have to do is cut the kielbasa into equal sized pieces. I always welcome math and geometry challenges in the kitchen when I’m cooking. Same thing with the dough, and there’s just something satisfying about cutting puff pastry with a pizza cutter. Call me crazy, but that was my favorite part.

Then you wrap each little piece of meat up with a strip of dough and bake. I don’t even bother with an egg wash. How else could I have called these two ingredient wrapped kielbasa bites, after all?

Ingredients
  • 1 (12 ounce) kielbasa
  • 1 pre-made puff pastry sheet
Instructions
  1. Cut kielbasa into 18 even sized pieces. Start by dividing in half, then each half into thirds, then each chunk into thirds.
  2. Cut puff pastry into 18 even sized strips. Do this by first rolling out puff pastry to flatten a bit but still maintain the square shape. Then, cut the square into three long strips, then cut each strip into thirds, and finally cut the length of each of those strips in half.
  3. Preheat oven to 400 degrees F.
  4. Wrap each piece of kielbasa with a strip of dough. If dough is not sticky enough to seal on its own, you may wet your fingers with water to help it seal. Put each piece, seal side down, on a baking sheet.
  5. Bake in preheated oven for 20-22 minutes, until golden brown.
  6. Serve warm with stone ground mustard. Any remaining appetizers can be stored in an airtight container in the refrigerator.

I picked up this package of Wright® Brand Bacon at the Kroger store near my house. I thought about simply wrapping the bacon around the chicken, but quickly came to the realization that I could make dinner a lot more interesting while using even more bacon if I did a bacon weave instead! More bacon is always the better choice.  I never limit myself or feel guilty when I indulge – in fact, I encourage you to do the same. Life is too short for only one piece of bacon.

There’s a trick to stuffing the chicken breasts so that the cheese doesn’t ooze out when you cook it. Lay the breast on a cutting board so that you open up the small piece with the chicken tender like a book. Be sure to keep this piece attached. Then, using a small, sharp knife, cut a pocket in the thick part of the breast, taking care to not cut all the way through. Use your fingers to reach in and make the pocket as big as possible without tearing it. Then, stuff your cream cheese and jalapenos in the center and use the chicken tender part to wrap around and seal the opening. Pretty cool trick, eh? In the photo below, the breast on the right has already been stuffed and wrapped.

Lay that stuffed sealed chicken breast on top of that lovely bacon weave that you made and then roll it on over. Tuck the ends of the bacon underneath as best as you can and secure  with toothpicks where needed.

Funny story (sort of) – I was planning on baking these in the oven but my lower heating element broke when I was preheating the oven. Awesome, right? Not really. Fortunately our barbecue was a few steps away and it was a gorgeous day to be cooking outside. Basically, you can cook these in the oven or the barbecue and they will turn out perfectly. I highly recommend using an internal thermometer so you know exactly when they are cooked. Although the bacon will be fully cooked and rendered by the time the chicken is cooked, it may not appear done as it won’t be dark and crispy.

If you prefer your bacon to finish off with a little sizzle and a beautiful golden brown finish, you’re going to want to pop it in the oven under the broiler for 5-10 minutes to finish it off. Just be sure to start this process at least 5 degrees before it reaches final cooking temperature and crack that oven door to get the nice brown without over cooking it, if needed. Fortunately – it was my lower heating element that broke so I was able to use my broiler without any issue.

I was worried my jalapenos were going to be too spicy because my fingers and nostrils were burning when I was cutting them, but by the time they cooked, it was perfect. I honestly can’t even begin to tell you how delicious this dinner was. It really was incredibly easy to make. I served it up with some smashed potatoes and sautéed fresh corn. These would be perfect for tailgating too! Just prepare them ahead of time, wrap tightly in plastic wrap to store in your cooler during transport, and then cook them up on the grill. The smell is amazing and you will certainly have everyone wishing you were their best friend at the game!

Ingredients
  • 1 pound bacon (12 slices)
  • 2 (about 1.5 pounds) large boneless skinless chicken breasts
  • 2-4 jalapenos, stems and seeds removed, chopped
  • 4 ounces cream cheese
Instructions
  1. To arrange the bacon in the basket weave pattern, lay four slices lengthwise. Then cut two slices in half to create four short slices. Weave the four short slices through the long slices.
  2. To stuff the chicken, pull the tender away from the main breast but leave it attached. Then, using a small sharp knife, create a pocket starting near the chicken tender. You want this pocket to be as big as possible without cutting all the way through the chicken.
  3. Divide the cream cheese and jalapenos evenly between the two breasts and stuff them in the pocket you cut. Then, take the attached tender and roll it over the opening to seal it.
  4. Place the stuffed breast on top of the bacon weave and roll it over so that the bacon is on top. Secure any loose pieces of bacon with a toothpick. Insert a meat thermometer into the thickest piece.
  5. Bake in a preheated 375 degree oven or grill for 50-55 minutes or until the internal temperature reads 160 degrees F. For the final few minutes of cooking, place the bacon wrapped breasts under the broiler to give them a nice brown. You want your final cooking temperature to reach 165 degrees F, so once you hit that, broil with the oven door open if you prefer more browning.
  6. Allow chicken to rest for at least five minutes. Slice with a serrated edge knife.

If there’s one thing my husband loves, it’s a good sandwich. Now, show him a sandwich like this that’s full of the things he loves – namely cured Italian meats like salami and prosciutto – and he’s one happy man. I try to make food like this right before asking for something that he might normally disagree with to see if it sways his decision!

In all seriousness, who doesn’t love a good sandwich, really? What’s not to love when you combine so many different flavors and textures in between two pieces of crusty bread.

One of my pet peeves when it comes to sandwiches, though, is either a sandwich that’s too big to bite (or if you’re successful, it’s not pretty) or a sandwich that has too much bread. One really must have the right bread to filling ratio. If you plan on using a nice crusty Italian loaf like I did, there’s a secret.

You must scoop the inside of the loaf out to make room for all the fillings. No need to waste all that delicious bread – just let it dry out and then run it through the blender or the food processor and turn it into bread crumbs. This way you have this wonderful void in which you can properly layer your filling ingredients without risk of dislocating your jaw while attempting to eat such a massive sandwich. Creative, right? Now keep in mind you have to choose a bread with a pretty tough outside to hold up to such manipulation, but once you do the end result is so incredibly worth it.

Now, one could assemble this sandwich and call it good, however I’m not that kind of girl. I’m a huge fan of chili. Rarely do you find such a comforting, filling meal that is not only really good for you (depending, of course, on how you make it and the toppings you choose) but so versatile in terms of how different it can taste depending on the recipe you choose. If you do an internet search for chili recipes, you’ll be overwhelmed by the choices. I’ve even made a handful of variations myself.

This Southwestern Chili, however, turned out quite different than the traditional chili recipes that I’ve made. I always start from my tried and true chili recipe and tweak it from there. In my opinion, a good chili must have meat, beans, tomatoes, beer, and a lot of flavor. Where you take it from there is entirely up to you.

For this variation I stuck with my Southwest theme by mixing in chorizo with my ground beef, using a Mexican beer rather than a wheat beer, incorporating black and pinto beans rather than traditional kidney beans, and for that added kick I mixed in some roasted Hatch green chile. Depending on the chili you use, this can take the spice level from moderate to “this will make your face sweat” spicy. We prefer the later.

When I think of tailgating, I think of food. If you follow my blog, you’ll know that I’m not really a team sports person. That doesn’t mean I don’t love tailgating parties and game day grub! The thought of getting together before a game and cooking up delicious food while enjoying the company of good friends puts a huge smile on my face. There’s just something about biting into a warm cheesy meat filled roll while you’re watching the game with friends. This is one of those recipes, in my opinion, that is so much better when you cook a whole turkey breast and then slice the meat yourself. I always cook a whole turkey on Thanksgiving and only on Thanksgiving. The turkey breast? That’s a regular staple in our house. Its just so easy to prepare and then we have the meat for our family dinner, to chop up for lunch salads, or for sliders like these.

There are two ways I like to prepare turkey breast. The first is in the slow cooker, and the photo above is from an older post of mine. For this recipe, I went to Fred Meyer (aka one of my favorite places to shop), bought a frozen turkey breast, can cooked it in my electric pressure cooker. My sliders are super simple and I even bake them up in a disposable aluminum tray for easy transport. Good sliders start with amazingly soft rolls. I picked these potato rolls up from the Fred Meyer bakery.

You can get as creative as you’d like, but I like to split the rolls, use some kind of spread (you can find something tasty in a jar or use something from the olive bar), cover it with those perfectly cooked pieces of turkey breast, and then top it with cheese. I chose provolone for these sliders but you can’t go wrong with so many different varieties.

You’ll notice that my once plain rolls are now covered in poppy seeds and garlic. That, my friends, takes these sliders from good to amazing. Enjoy!

Ingredients
  • 1 frozen turkey breast (I used a 2lb. breast)*
  • 1 (16 ounce) package soft rolls
  • 6 tablespoons of desired spread (anything from bacon onion jam, cranberry sauce, or mustard)
  • 6-12 ounces sliced provolone
  • 4 tablespoons butter
  • 1 teaspoon minced garlic
  • 1 teaspoon poppyseeds
Instructions
  1. To cook the turkey breast, use either a slow cooker or an electric pressure cooker.
  2. If using a slow cooker, follow the directions here.
  3. If using an electric pressure cooker, add one can chicken broth, one whole yellow onion (peeled and quartered) and two stalks celery (chopped) to the bottom of the electric cooker. Place completely thawed turkey breast on top. Cook on high pressure for 22-30 minutes (for 2-6 pound breast) and allow to release the pressure slowly once done. Insert an instant read thermometer and if it is not yet at 165 degrees F, continue to cook for several more minutes on high pressure.
  4. Once turkey has finished cooking, slice against the grain to desired thickness.
  5. Preheat oven to 350 degrees F.
  6. Set the rolls in a baking dish and split the rolls with a knife and remove the tops. Cover with spread, turkey, and cheese. Replace the tops of the rolls.
  7. Melt butter in microwave and add garlic and poppy seeds. Brush mixture on top of rolls.
  8. Bake in preheated oven for about 20 minutes until heated through.

Who doesn’t love shrimp? For that matter, who doesn’t love a tasty little two-bite appetizer? Well, if the general population is anything like my family, then they will love these tasty little treats.

This recipe starts with little tortilla rounds that you cut out from corn tortillas. Don’t throw away the scraps! Just put them back in the bag and fry them up for a different meal. Aren’t they cute?

The shrimp is amazing. Kind of crazy what a little butter, garlic, and spices can do to wild caught shellfish. Stack them up with some avocado and a squeeze of lime and watch them fly off the platter!

Ingredients
  • 15 corn tortillas (1 tortilla per shrimp)
  • 1/2 cup vegetable oil
  • 1 cup refried beans
  • 1 cup mild salsa
  • 1/2 large avocado
  • 10 ounces raw jumbo shrimp, shells and tail removed, deveined
  • 2 tablespoons oil
  • 1-2 cloves garlic, minced
  • 1 teaspoon chili powder
  • cilantro and fresh lime, for garnish
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
Instructions
  1. Using a round 3" cookie cutter or the rim of a glass, cut enough tortilla rounds for the amount of shrimp you have. Save tortilla scraps for another meal.
  2. In a heavy 9" skillet, heat oil over medium high heat. Once the oil is hot enough where a small piece of one of your scraps boils when added (this is a good way to test), add a single layer of rounds and fry on both sides until golden brown, 2-3 minutes per side. Drain on a paper towel.
  3. Add a small amount of beans to each tostada round. You can spoon them on, but I added them to a sandwich bag, snipped off the corner, and piped them on like I would frosting.
  4. Spoon a layer of salsa on top of the beans.
  5. Thinly slice the avocado and add some to each tostada.
  6. To cook the shrimp, discard the oil from the tortillas (just pour it out, no need to wipe the pan). Over medium high heat, melt the butter with the chili powder, cumin, and salt. Add the shrimp in a single layer and cook until the tops start to look a very opaque pink, 4-5 minutes. Turn them over and continue cooking another 2-5 minutes until cooked through. Remove from heat and place one shrimp on each tostada.
  7. These appetizers can be eaten cold or, if preferred, warm in 300 degree F oven for 10-15 minutes until heated through prior to serving.

  • 2 packages (8 ounces each) cream cheese, softened
  • 2 tablespoons ranch seasoning mix
  • 8 ounces (about 2 cups) sharp cheddar cheese, shredded
  • 1/2 cup beer (amber ale recommended, amount will vary depending on desired thickness of dip)
Instructions
  1. In the bowl of a stand mixer with the paddle attached, mix cream cheese, seasoning mix, and shredded sharp cheddar on medium speed until well combined, about 2 minutes.
  2. Add a small amount of the beer and mix on low until combined. Continue to add beer until you've reached desired thickness of dip.
  3. Dip is best served with crackers, pretzel rods, or fresh veggies.
