I’m a huge fan of champagne. Its one of those drinks that tastes wonderful and gives me quite the buzz. It took me a few years spanning from my early 20s to my early 30s, but I’ve finally perfected the rate and volume at which I can consume champagne to reap the maximum benefit without any of the horrible side effects. There’s another life goal I can scratch off the list!

You know I’m a fan of pomegranates. Its one of those wondrous foods that I completely adore, yet didn’t try until I was well into my adulthood. You know, like beets. I’m not sure I had even heard of a pomegranate, as a matter of fact, until I had been adulting for a good decade or so. Then, once I saw one, it probably took a few years before I found the courage to actually crack one open and extract the seeds.

Now everyone knows mimosas are a classic drink, and I enjoy them morning, noon, and night. Who says they have to be a breakfast drink? Not me. But a basic OJ + champagne cocktail is boring, if you ask me. My secret ingredient to an amazing mimosa is a splash of Grand Marnier. Then, you can totally play around with your creativity and make cocktails like this one. Why not try a grapefruit mimosa?  That’s another favorite.

The best part about this drink, in my opinion, are the pomegranate seeds soaking on top. If you ask me, a bowl of fresh pomegranate seeds soaking in champagne should be considered a complete meal.

Ingredients
  • 2 ounces pomegranate juice
  • 2 ounces orange juice
  • 1 ounce Grand Marnier
  • champagne
  • 10 pomegranate arils
Instructions
  1. In a champagne flute, combine pomegranate juice, orange juice, and grand marnier. Top with chilled champagne and continue to slowly add until the glass if filled. Add pomegranate arils (seeds) at the end.
  2. Serve and enjoy!

It is definitely cold and chilly in the Pacific Northwest where I live. I don’t usually get chilled just from cold temperatures. Its the rain plus the cold that shiver me to my core. When its cold and stormy outside, sometimes the one thing that sounds the best is a hot drink. Add a splash of booze and not only do you have a hot delicious drink, you have a hot delicious drink with just the right amount of wow to really make you smile.

When I was a kid, the only hot chocolate I knew was the powdered pouch where you just add water. Heck – I used to eat that stuff dry! Now, the taste of instant hot chocolate is pretty awful. Now I definitely feel its worth it to invest a few extra minutes and some higher quality ingredients to have a rich homemade cup of hot chocolate. I’m happy to say it tastes nothing like the instant kind and probably packs a lot more calories and fat – so worth it, my friends.

Homemade rich hot cocoa will put a smile on anyone’s face, but adding that splash (or in my case hefty pour) of coconut rum, and all things become right in the world. Ever eat a Mounds or Almond Joy candy bar?  It tastes like that, only better. When I drank this hot chocolate, I didn’t taste any booze. I only tasted chocolate coconut heaven. If you haven’t tried making your own homemade hot cocoa or adding coconut rum to your drink, you now have something new to try tonight!

  • 1 cup milk
  • 1 cup half-and-half
  • 3 ounces bittersweet or dark chocolate, finely chopped
  • 1-2 ounces coconut rum
  • whipped cream
Instructions
  1. In small saucepan over medium heat, heat milk and half-and-half until milk is almost to the boiling point. When milk starts to coat the bottom of the pan, you'll know its done.
  2. Remove from heat and add chocolate and rum. Stir until fully melted.
  3. Top with whipped cream.

Ingredients
  • 1 cup unsweetened cranberry juice
  • 1/2 cup granulated sugar
  • juice from one orange
  • 2 shots vodka
  • 12 ounces sparkling water
Instructions
  1. In a medium saucepan over medium heat, combine cranberry juice, sugar, and orange juice and cook until reduced by half while swirling occasionally, about 15 minutes.
  2. Store in refrigerator until ready to use.
  3. To make cocktail, combine sweetened cranberry syrup with vodka. Mix well. Divide between two ice filled glasses. Top with sparkling water.

Thanksgiving is right around the corner. The second August rolls around, I’m all about everything-apple. From the second they are available at the farmers market up until I simply can’t stomach the sight of anything apple related (which usually happens by February or March), I can’t get enough crunchy tart juicy fresh apples, not to mention fresh apple cider, pie, apple brown betty, and even savory dinners with apple. The first time I had hot apple cider out of a crockpot was at a Thanksgiving dinner. The hostess had actually put butter in it. Although I wasn’t a huge fan of the fat that floated to the top, I have to admit there was something lovely about the decadent richness the fat added to that warm fall drink. I much prefer, however, to add a dollop of whipped cream at the end.

This classic fall drink, of course, can be made kid friendly simply by omitting the booze, which is exactly why I don’t add it to the crockpot. That, plus the fact that I wouldn’t want any of the alcohol to burn off! You can really use any kind of liquor you want too – rum, bourbon whiskey, whatever warms our belly. My husband is a whiskey lover so that was my liquor of choice, but feel free to set several choices out for your guests and see what they prefer!

Ingredients
  • 6 cups apple cider
  • 1 valencia orange, sliced
  • 4 cinnamon sticks
  • 20 cloves
  • 6 ounces whiskey
  • whipped cream
  • spices
Instructions
  1. Add cider to crockpot. Stud orange slices with cloves and add them to the crockpot along with the cinnamon sticks. Set temperature to high and heat for at least an hour.
  2. To serve, add a shot of whisky to a mug, then fill with spiced cider and top with whipped cream.

I love tropical drinks. Wanna know why? Aside from the fact that they taste amazing, they completely transport me to a tropical island, even if its just for the few minutes it takes for me to guzzle down said drink. I had a pineapple that needed to be used up along with a lonely little lemon. Sure, I could have just sliced up the pineapple and called it good, but where’s the fun in that? Alas, the poor little pineapple and lemon looked rather bland all by their lonesome.

Enter one shot of whiskey. That shot glass only has an ounce of whiskey in it and I use a full 1.5 ounces in this cocktail. I like to round up. Now, doesn’t this picture below look more complete? Canned pineapple juice would work perfectly well. In fact, I highly recommend just buying juice. Is that what I did? Nope. I had the grand idea of juicing the fresh pineapple. Did it taste better? Probably. Was it worth the work and the mess it created? Probably not. Just buy the juice.

I’m not a huge whiskey fan, to be completely honest. I don’t know how, but my husband can drink it straight – along with just about any other type of booze. There is something, however, about a whiskey sour that I just love. If its made properly, there’s just the right amount of sweet versus tart and they perfectly compliment the take-your-breath-away intensity of the whiskey.

I’m a huge fan of vanilla paste. When you add it to your favorite recipes, you get that intense vanilla flavor without any of the alcohol you get when you add extract. If you don’t have vanilla beans on hand, paste is a great alternative. I was at the farmer’s market last week and our local store, New Seasons Market, was giving away samples, along with the recipe, of a blackberry vanilla mocktail. First of all, that little two-sip sample they handed out was so refreshing on that gorgeous sunny day. Second, I watched them prepare the next batch and what were they using for the vanilla? This same exact vanilla paste. New Seasons is a high end grocery store located throughout the Portland metro area, and I knew that if they were using this product, it had to be a good one.

The base of this recipe is all of the ingredients, minus the seltzer water that gets added just before stirring. Pressing the blackberry puree through a fine mesh strainer is a serious pain in the butt, but well worth the effort to avoid seeds in your drink. These blackberries were destined to be used for something wonder. We picked them ourselves and my poor son got stung by a wasp on the berry farm! After that, I had to make him a special treat. The sweetened blackberry vanilla puree can be added to ice cube trays and frozen if you’d like. I also took the puree to a backyard party and we mixed it with lemonade. There are tons of options!

Ingredients
  • 2 pints fresh blackberries
  • juice from 3 lemons
  • 1 1/2 teaspoons vanilla paste
  • 2 tablespoons of honey
  • sparkling water
Instructions
  1. Puree blackberries in blender and strain through fine mesh strainer. I recommend using a silicon spatula to press as much of the fruit through. Discard the seeds.
  2. Add the lemon juice, vanilla paste, and honey to the puree. Stir well and taste. Add more honey if needed.
  3. Store this blackberry base in an air tight container in the refrigerator for up to five days until ready to use.*
  4. To serve, combine in a pitcher with sparkling water (amount depends on how strong you want the blackberry flavor) or allow each person to add puree to their ice filled glass and they can top with sparkling water.
Notes
* Puree can also be frozen in ice cube trays for later use.

I started with dark red rhubarb. If you’re wondering if the rhubarb you’re buying is going to taste good, just make sure you see more red than green. Finding dark red juicy strawberries is a must. I cooked down the rhubarb with some sugar and then pressed it through a fine mesh strainer. Then, I blended this up with some fresh strawberries and fresh squeezed lemon juice and that was my base.

  • 2 to 2 1/2 cups fresh rhubarb, cut into half inch cubes
  • 1 cup sugar
  • 1 cup water
  • 2 cups (1 pint) strawberries, stems removed
  • 1 cup freshly squeezed lemon juice
To make the lemonade:
  • 3 cups water or sparkling water
  • ice
Instructions
  1. To make the rhubarb syrup, combine the rhubarb, sugar, and 1 cup of water in a medium saucepan. Cook over medium low heat until the rhubarb completely breaks down, 10-15 minutes. Press mixture through a fine mesh sieve trying to extract as much as you can, scraping the bottom of the sieve. Discard remaining solids.
  2. Chill rhubarb syrup in the refrigerator until ready to use.
  3. Process rhubarb syrup, strawberries, and lemon juice through blender on low speed for 20 seconds. There will be approximately 3.5 to 4 cups of base.
  4. To make lemonade, add water or sparkling water to base and serve over ice. Enjoy!

Well, if you ask me, the very best part of waking up is that first delicious sip of hot coffee. There’s nothing quite like it. I am such a coffee lover that sometimes nothing sounds better in the afternoon than a delicious hot cup of coffee… or even better – a latte. Problem is that I don’t have and espresso machine. Heck – I don’t even have one of those single serving (pricey) pod machines. We just have your basic coffee pot, but its not worth it to me to grind the beans, get the filter out, brew a pot, and then clean the whole thing for a single cup of afternoon coffee. Enter Folgers instant coffee… ta da!

Ingredients
  • 1 rounded teaspoon of instant coffee
  • 6 ounces foamy hot milk
  • 1 teaspoon flavored creamer. if desired
Instructions
  1. Add instant coffee to glass. If using creamer, add it to coffee.
  2. If you have a milk frother, heat and froth milk. If not, heat over medium heat on stove and whisk to manually froth. Combine hot milk with instant coffee, stir, and enjoy!
