Thanksgiving is right around the corner. The second August rolls around, I’m all about everything-apple. From the second they are available at the farmers market up until I simply can’t stomach the sight of anything apple related (which usually happens by February or March), I can’t get enough crunchy tart juicy fresh apples, not to mention fresh apple cider, pie, apple brown betty, and even savory dinners with apple. The first time I had hot apple cider out of a crockpot was at a Thanksgiving dinner. The hostess had actually put butter in it. Although I wasn’t a huge fan of the fat that floated to the top, I have to admit there was something lovely about the decadent richness the fat added to that warm fall drink. I much prefer, however, to add a dollop of whipped cream at the end.

This classic fall drink, of course, can be made kid friendly simply by omitting the booze, which is exactly why I don’t add it to the crockpot. That, plus the fact that I wouldn’t want any of the alcohol to burn off! You can really use any kind of liquor you want too – rum, bourbon whiskey, whatever warms our belly. My husband is a whiskey lover so that was my liquor of choice, but feel free to set several choices out for your guests and see what they prefer!

Ingredients
  • 6 cups apple cider
  • 1 valencia orange, sliced
  • 4 cinnamon sticks
  • 20 cloves
  • 6 ounces whiskey
  • whipped cream
  • spices
Instructions
  1. Add cider to crockpot. Stud orange slices with cloves and add them to the crockpot along with the cinnamon sticks. Set temperature to high and heat for at least an hour.
  2. To serve, add a shot of whisky to a mug, then fill with spiced cider and top with whipped cream.

We are a family of pasta lovers. If dinner is made with pasta and a good sauce, chances are my entire family will devour it. We also love a good lasagna, but sometimes traditional lasagna is a heavy meal. I’m always looking for delicious meals I can toss in the slow cooker to have ready for all of us when we walk in the door after a long day of school and work. You can say that my slow cooker dinners have become somewhat of a tradition in our family. The four of us have always prized quality dinner time together, but I also feel like I get bonus points if I can prep something before I leave in the morning and have very little to do when we all get home before we sit around the table and talk about each others day.

If you have a favorite spicy Italian sausage you like to use, you can certainly use that in lieu of the pork and the seasonings. You can also lighten this meal up by using ground turkey. You brown the meat with the onions and mushrooms on the stove and then transfer it to your slow cooker. You don’t want to lose all of that wonderful flavor in the pan, so add some chicken broth and heat it up to release every spec of flavor from that pan. Now you’re ready to transfer that super flavorful chicken broth on over to the slow cooker. Now all you need is a delicious chunky pasta sauce to add before you can head out of the house to start your day. Just pour the entire bottle into the slow cooker and let all of those flavors combine while you go out and enjoy the day.

Ingredients
  • 1 pound ground pork
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fennel seed
  • 1/4 teaspoon red pepper flakes
  • 1 red onion, diced
  • 8 ounces mushrooms, sliced
  • 4 cups chicken broth
  • 1 (23 ounce) jar Pasta Sauce
  • handful raw spinach
  • 3-5 lasagna noodles, broken into pieces
  • 1/2 cup heavy cream
top with:
  • freshly grated mozzarella (whole milk recommended) and minced basil or parsley
Instructions
  1. In large saute pan, brown pork with spices over medium high heat. After it just begins to brown, add onion, stir, and allow to cook for several minutes. Add the mushrooms, stir, and allow to brown. When the sausage is nicely brown, crumbles, and begins to stick to the bottom of the pan, transfer everything to your slow cooker.
  2. Add chicken broth to saute pan and heat on high to release all that goodness that stuck to the pan. Transfer this to the slow cooker.
  3. Add the entire jar of pasta sauce.
  4. Cook soup on low for 7-8 hours or on high for 1-3 hours.
  5. minutes before serving, add spinach, lasagna noodle pieces, and heavy cream. Allow to cook until the noodles are al dente. To serve, top with mozzarella and minced herbs.

Can you believe its March already? I can’t. Not one bit. Some of you know I blog for fun and I have a full time bread & butter (get it? food reference?) career that has nothing to do with food blogging. Well, it turns out February is the busiest month out of the entire year at my real job. I won’t go into too much detail about what I do for a living because I tend to keep some things rather private because, of course, all the crazies out there look at soup recipe round up blog posts for personal information that they can use in all sorts of creepy ways, right? My point being that if you’re going to have a single month be crazy busy and stressful at work, February is pretty much ideal. I mean, its not summer time where I’d rather be outside grilling, at the park, on a hike, on a bike, at the coast, (and this list could go on and on and on).  Its not fall where we’re getting the kids settled into a new school year and I’m not in full blog mode which so happens to be early fall all the way through Christmas because that’s when everyone, myself included, likes to put on our comfy clothes and create masterpieces in the kitchen. Lastly, its not spring, when the days start to get longer, the flowers start to bloom, and I start to come out of my seasonal depression funk and remember that life ain’t so bad after all. No – if I could pick a single month that would be crazy hard and stressful at work, it would definitely be February, which is probably reason #43 why I love my full time career so much.

Now that you have all the background on how stressful my life was last month, you may 1) forgive me for the lack on new content on my site and 2) explore all these yummy soup recipes. Soup is what kept my family full with homecooked meals this past month when I was too tired and stressed out to think of anything new. I just took out the frozen turkey broth I had made after Thanksgiving and made my leftover turkey and wild rice soup.  I also used up some frozen beef stock that was in the freezer and made my favorite winter minestrone. Twice. Bottom line: soup is good food.

I long for the days of summer when everything you prepare is either cold or cooked on the grill. When the days are longer, everything just seems easier. Oh yes. This dinner was delicious. I love enchiladas. What’s not to love about melty cheese, spicy red chile sauce, tortillas? Nothing. That’s what. Oh, wait a minute. I know. They’re a royal pain in the but to make. Traditional enchiladas, that is. You see, corn tortillas are incredibly dry and pretty much make me gag. The only way I’ve enjoyed traditional rolled enchiladas is when I fry up the corn tortillas in oil to soften them. Well, not only is that a pain in the ass, but my thighs could live with a wee bit less oil, if possible.

So, I present to you a super easy and incredibly delicious way to make enchiladas! I basically cheated the entire process, that is, except for the part where I made the enchilada sauce from scratch, which I highly recommend. Otherwise, I cheated by using pre-shredded cheese, pre-cooked chicken, and tortillas that are a perfect blend between flour and corn. These tortillas are perfect because they are just the right size for my slow cooker, they taste like corn tortillas but have the texture of corn aka they don’t need to be soaked in hot oil in order to be swallowed without gagging. You know I love Trader Joe’s, and that’s where I got all of the ingredients (of course).

Now that I’m writing this post, I really wish I still had some of this leftover in the frig. Alas, we made enough for dinner that night and leftovers the next day, then it was gone.

Ingredients
  • 2 cups (or one 15 ounce can) enchilada sauce
  • 6 (8-inch) corn flour tortillas
  • 1 (15 ounce) can black beans, drained
  • 1 cup frozen corn kernels
  • 8 ounces cooked chicken breast (2 small breasts), shredded
  • 12 ounces Mexican blend cheese (combination of cheddar, jack, etc.), shredded
  • serve with olives, avocado, sour cream, cilantro, etc.
Instructions
  1. In a medium sized bowl, combine beans, corn, chicken, and about 1 cup of enchilada sauce. Stir to combine.
  2. Spread a thin layer of enchilada sauce on the bottom of the slow cooker.
  3. Layer one tortilla on the bottom. Top with a scoop of the chicken mixture and spread to create an even layer. Top with a handful of cheese. Continue to repeat the process and portion the ingredients such that you end up topping it off with a tortilla, the remaining enchilada sauce, and a big handful of cheese.
  4. Cook on high 1-2 hours or on low 4-6 hours.

Have you ever cooked a large hunk of meat in the crockpot with Dr Pepper? If not, you’re missing out. I have no idea why something like Dr Pepper + a roast + a slow cooker work so magically well together, but they do. All I did to make these carnitas was to throw a pork roast in the crockpot along with an onion, a bottle of Dr Pepper, a can of diced green chiles, and a spoonful of cumin. You can totally walk away at that point, but I prefer to rotate the roast a couple of times just to make sure all the sides get a chance to evenly bathe in the Dr Pepper bath.

Its like pure magic. The meat just falls off the bone and shreds beautifully. Then, the secret is to strain the liquid and cook it down until it becauseomes even more flavorful. This is a perfect recipe for tailgating because you can do all the work the day before the big game and then just crisp up the meat on a little burner right there in the parking lot. The smell alone will drive all the surrounding fans totally bonkers with envy.

I’m a simple girl when it comes to eating carnitas.  I start with some fresh corn tortillas and prefer to double them up for each taco for added support.

And a scoop of guacamole for good measure. YUM!  I’m a total game day fan because I really couldn’t care less about which team wins or loses. Heck – I don’t even understand most football rules. But the thing I love most about football is the game day grub. The idea of driving to a game and hanging out in the parking lot on a crisp cool autumn day with good friends all decked out in their favorite team gear with all of us standing around, laughing, having a good time, with an endless supply of delicious hot food… yeah, that’s my kind of day. Perhaps someday I’ll start caring about which teams play or even the technical aspects of the game, but in the meantime I’m happy being one of those fans who cares more about the food and the friends than the actual game.

Ingredients
  • 1 large onion, sliced
  • 1 (3-4 pound) pork shoulder roast
  • 1 (16.9 ounce) bottle Dr Pepper
  • 1 (4 ounce) can diced green chiles
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1 tablespoon vegetable oil
Instructions
  1. Place onion in slow cooker. Rinse roast and place on top of onion, fat side up. Add Dr Pepper, green chiles, and cumin. Set slow cooker to low and cook for 6 hours. If you're around, rotate the roast a couple of times do that the different sides are in the liquid for at least an hour. Be sure to start and finish the cooking process, however, with the fat cap up.
  2. After 6 hours, the roast should easily fall apart and the bone should separate from the meat. If it doesn't, allow roast to cook on low for another 2 hours.
  3. Transfer roast to cutting board and allow to cool enough to shred meat away from fat and bone.
  4. Meanwhile, strain crockpot liquid from solids and discard the solids. Transfer the liquid to a medium sized saucepan and add salt. Boil over high heat for about 15 minutes to reduce.
  5. When ready to eat, combine shredded meat with reduced liquid. To crisp up in a broiler, spread meat in a thin layer on a baking sheet and drizzle with oil. Broil on high for about 5 minutes. To crisp up in a frying pan, heat oil in large pan over high heat and then add meat. Do not stir. Allow to cook in hot oil for about 5 minutes.

This, by far, is the best chili I’ve ever made. Can you believe I’ve only ever made my chili with ground beef? Turns out, I’m all out of ground beef, but I did have a couple of sirloin steaks in the freezer. I combined those with my favorite cooking hot sauce along with some other ingredients… and pure magic happened. Everyone knows (or should know) that browning your meat first does amazing things for the flavor. I covered my cut up steak pieces with a light dusting of flour and then I cooked them for a couple minutes on each side in some screaming hot oil. There were all sorts of good things stuck to my pan so I did what any reasonable cook would do and I cracked open a can of amber ale beer and poured it in to loosen up all those delicious bits, then I added all of that into the slow cooker.

You have all of your basic chili components in here – beans, tomatoes, onions, and chili powder among a few other things. When you really want to call your chili Five Alarm Chili, then you add in 5 tablespoons of this hot sauce. If you’re not brave enough, you can make four alarm chili and add four tablespoons. And if you really like to sweat, you can make six alarm chili and… you get the idea.

This chili is downright perfect for tailgating. Just get everything in the crockpot the night before, let it cook while you sleep, and then take it to the parking lot bright in early to get it warmed up. It also works great during a busy work week. Ingredients
  • 1 medium onion, diced
  • 2-3 pounds steak, cut in 1-inch chunks (you can use stew beef, I used two sirloin steaks)
  • 1/2 cup all purpose flour
  • 4 tablespoons oil (I use avocado oil and use enough to generously coat bottom of pan)
  • 1 (12 ounce) bottle of amber ale
  • 3 tablespoons chili powder
  • 5 tablespoons hot sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1 tablespoon tomato paste
  • 1 tablespoon salt
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • 1 (15 ounce) can white kidney beans, drained and rinsed
  • 2 (28 ounce) cans unsalted plum tomatoes, with juice (break up tomatoes into pieces)
  • Garnish with freshly grated cheese, sour cream, and/or diced avocados
Instructions
  1. Add onion to the bottom of your slow cooker.
  2. Lightly coat steak with flour and shake off excess. Heat a heavy bottom large skillet or dutch oven over high heat and add oil. When oil is hot, add meat, ensuring enough space is in between pieces to properly brown. Allow to cook for just a couple minutes on each side to brown. I had to do this in two separate batches. Turn off heat when done. Transfer browned steak to slow cooker, placing on top of the diced onion.
  3. Add amber ale to pot and allow to sit for 5-10 minutes to dissolve all that good stuff that stuck to the pot. Scrape it with a wooden spoon and then add entire mixture to slow cooker.
  4. Add remaining ingredients all the way up to the garnish, stir, and set slow cooker to cook on low for 8-10 hours. Before serving, use a masher to smash the chili to shred the meat and smash up some of the beans. This will thicken everything to perfection. Top with garnishes and serve hot.

I told my husband I was making creamed corn and the reply was an epic “noooo”. You see, there are a few foods that I think scarred his developing mind. One of them was canned creamed corn. I’m not sure if he was served that nauseatingly sweet stuff from the can one too many times as a kid, but getting him to try this stuff was like pulling teeth. I have the same battle with him over anything that contains broccoli. I finally got him to try it after I convinced him that it tastes nothing like that garbage he knew so well growing up, and he couldn’t believe how good it tastes!This savory Decadent Slow Cooker Creamed Corn made from fresh corn tastes nothing like the stuff from a can and is so simple to make in your slow cooker. 

There are a few main differences from the creamed corn you may know.  For example, I just looked up the ingredients from a major creamed corn distributor and this is what they seal up in that can: Water, Corn, Modified Food Starch (Corn), Sugar, Sea Salt. Not too horrible, I suppose, but if I’m eating corn from a can I think I might want more corn than water, right?  Secondly, I don’t put any sugar in this corn. Corn is sweet enough. Why would you need to add sugar? Especially when you use fresh corn from the cob and then “milk” it to get every last ounce of natural sweetness. Finally, mine has a savory component with the addition of the cream cheese. I also love the fact that the crockpot added a few brown pieces around the edge that I scraped off and mixed in. Ingredients
  • 5 to 6 ears of fresh sweet corn
  • 1 teaspoon salt, plus more to taste
  • 3/4 cup heavy cream
  • 1/4 cup water
  • 4 tablespoons (1/2 stick) unsalted butter
  • 8 ounces cream cheese, cut into small pieces
  • Black pepper, to taste
Instructions
  1. Using a serrated edge knife, cut corn away from cob and add to slow cooker. Then, use knife to "milk" cob by extracting as much liquid as you can and add that to the slow cooker as well.
  2. Add remaining ingredients to the slow cooker and give it a stir to combine.
  3. Cook on low 4-6 hours. When done, stir, serve, and top with fresh thyme.

Let’s face it: quality time with the family sounds much more appealing than hours of cooking every night. Rejoice! Moms everywhere can save time by planning meals in advance and using leftovers creatively. My favorite way to make quick and easy delicious meals that can fit into my busy family’s schedule is to use the crockpot. That way I can also turn one night’s easy preparation into dinner for weeknights ahead to help make the back-to-school season a little easier.

Every time I use my slow cooker, I ask myself why I’m not using it more often. Most meals literally take a few minutes to throw together, plus I can do it in the morning and then walk into a welcoming delicious smelling kitchen. The absolute bonus is that 9 times out of 10 that I use the crockpot, I end up making enough food and the right kind of food to cook several more meals.

Take this bone-in turkey breast, for example. It took me no more than five minutes to throw everything together, walk away, and come home to the most amazing smelling kitchen. Don’t let the bone intimidate you – look at it as a free bouillon packet to add flavor. Everyone knows that the most delicious broths come about because of the goodness in the bones.  Cook your turkey slowly for the best taste and tenderness. That’s exactly the reason why I use the crockpot, aside from how easy it is. Then, all you have to do is slice up the meat, make up a delicious gravy with the liquid left in the slow cooker, and serve it up along side some potatoes and/or a salad for a tasty and satisfying dinner.

Ingredients
  • 1 large yellow onion, sliced thick
  • 1 double breasted bone-in turkey breast
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground pepper
  • 1 tablespoon olive oil
Instructions
  1. Place onion in the bottom of your slow cooker.
  2. Rinse clean the turkey breast and place on top of the onion, breast side up. Top breast meat with paprika, thyme, garlic powder, salt, and pepper. Drizzle olive oil over the top.
  3. Insert meat thermometer into thickest part of breast.
  4. Cover with lid and set the slow cooker to low for 4-5 hours. Continue to cook on low until internal temperature reads 165 degrees F.
  5. Slice turkey and serve for dinner, or save for future recipes including sandwiches, turkey and rice soup, or turkey pot pie.

Do you know what happens when you throw a whole chicken into your crockpot with ingredients like lemon, basil, onion, garlic, and olive oil?  You wait all day and then end up with the softest, most tender and flavorful chicken. Super easy. I always struggle to take photos of things like a whole chicken that’s cooked in a slow cooker because it basically falls apart when you try to lift it out. How is it possible to stage something like that to look pretty?  I was able to keep a few pieces from entirely sliding off the bone in order to get the one shot.

This is a super easy and healthy way to make chicken. You can definitely cook it this way and serve it up with some salad and mashed potatoes for an easy dinner. Go for it. I personally prefer to cook my chicken like this, though, when I want to shred it and eat it on salads or in other recipes that call for shredded chicken like these killer chipotle quesadillas. The best reason for cooking your chicken in the slow cooker, other than the fact that you throw a few things in a pot and get to walk in from a stressful day at work to the wonderful aroma of a home cooked meal, is that you can take all the meat off and then throw the skin and bones right back in with some carrot, celery, a bay leaf and water to make some insanely good homemade chicken broth.

Ingredients
  • 1 onion, sliced
  • 1 whole chicken, rinsed with any insides removed
  • 1 lemon
  • 1 cup of fresh basil leaves
  • 2-3 cloves garlic, chopped
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt
Instructions
  1. Place sliced onions in your slow cooker and set chicken on top. Zest the lemon and add the zest to the slow cooker. Then slice it in half, squeeze all the juice over the chicken, and throw the lemon halves in. Add the basil leaves and garlic. Pour the olive oil over the chicken and then add the salt. Cook on high 4-5 hours or low for 6-8 hours. After its done cooking, remove the meat and be sure to put all the skin and bones back in along with some other ingredients to make slow cooker chicken broth.
