I’m a huge fan of champagne. Its one of those drinks that tastes wonderful and gives me quite the buzz. It took me a few years spanning from my early 20s to my early 30s, but I’ve finally perfected the rate and volume at which I can consume champagne to reap the maximum benefit without any of the horrible side effects. There’s another life goal I can scratch off the list!

You know I’m a fan of pomegranates. Its one of those wondrous foods that I completely adore, yet didn’t try until I was well into my adulthood. You know, like beets. I’m not sure I had even heard of a pomegranate, as a matter of fact, until I had been adulting for a good decade or so. Then, once I saw one, it probably took a few years before I found the courage to actually crack one open and extract the seeds.

Now everyone knows mimosas are a classic drink, and I enjoy them morning, noon, and night. Who says they have to be a breakfast drink? Not me. But a basic OJ + champagne cocktail is boring, if you ask me. My secret ingredient to an amazing mimosa is a splash of Grand Marnier. Then, you can totally play around with your creativity and make cocktails like this one. Why not try a grapefruit mimosa?  That’s another favorite.

The best part about this drink, in my opinion, are the pomegranate seeds soaking on top. If you ask me, a bowl of fresh pomegranate seeds soaking in champagne should be considered a complete meal.

Yields: 1 cocktail
Ingredients
  • 2 ounces pomegranate juice
  • 2 ounces orange juice
  • 1 ounce Grand Marnier
  • champagne
  • 10 pomegranate arils
Instructions
  1. In a champagne flute, combine pomegranate juice, orange juice, and grand marnier. Top with chilled champagne and continue to slowly add until the glass if filled. Add pomegranate arils (seeds) at the end.
  2. Serve and enjoy!

This time of year, people are looking for amazing drinks that they can sip as 2014 slips away and we enter the new year. One can never go wrong with a nice glass of champagne, but why not make it even better? Champagne is a great mixer. Its dry and bubbly so it pairs beautifully sweet and sour, which this drink is. A little splash of vodka mixed in and the result is a lip smacking wonderfully delicious cocktail that will surely make you feel good. So go ahead, get your celebration on and make some of these wonderful drinks!

If you're looking for a fabulous party cocktail made with champagne and is easy to make for a crowd, this Citrus Celebration Cocktail is the perfect choice!

Yields: 8 servings
Ingredients
  • 1/2 cup sugar
  • 1/2 cup water
  • 3 lemons, washed
  • 1 bottle (750 milliliters) Champagne, chilled
  • 3/4 cup vodka, chilled
Instructions
  1. Use a vegetable peeler to remove strips of zest from the lemons.You can make long straight strips or make one long spiral.
  2. In small pot, make simple syrup by heating sugar and water over low heat until sugar is fully dissolved. Remove from heat, add lemon zest, and chill until ready to use.
  3. Juice lemons, set aside.
  4. Pour Champagne, vodka, lemon juice, and syrup into a punch bowl; stir. Keep punch bowl on a block of ice to keep the cocktail chilled. Serve glasses of punch with candied peels as garnish.
Notes
If making only one or two drinks, the proportions you can use are 3 parts champagne, 1 part vodka, 1 part lemon juice, 1 part simple syrup
