Your quest can finally be over. You have found it. The be all, end all, of cupcakes. Never again will you need to search for a chocolate cupcake recipe, only to be sorely disappointed by the results. The days of resorting to a boxed mix are in the past forevermore.

When I say these are the best damn cupcakes you will ever enjoy, I’m not kidding. My husband, who doesn’t like sweets all that much, can’t get enough. My kids, who ask for anything but cake on their birthdays (so strange, I know), think these are the best things that have ever come out of my oven.

Think about all the wonderful things you’d want in a chocolate cupcake. Moist? Most certainly. Taste? There’s cocoa, coffee, and sugar in these bad boys. What else could you ask for?  Rise and volume? Yes, and I believe this has to do not only with the mixing directions but also the baking process. There is no other way to describe them than heavenly.

As much as I’d like to showcase this cupcake, I’ll tease you for a mere moment with my perfect buttercream frosting. I could stare for hours at those luscious swirls!

Just look at all of those lovely little air bubble pockets. Those are what give this cupcake that soft, pillowy, fluffy texture, while at the same time the top leads to the slightest bit of sweet crunch on top. You’re totally starting to salivate, aren’t you?  I just know it!

These Heavenly Homemade Chocolate Cupcakes, made with cocoa and strong hot coffee, are the most decadent and moist cupcake you'll ever enjoy!

Yields: 12 cupcakes
Ingredients
  • 1/2 cup hot coffee (or 1/2 cup boiling water + 1 pack starbucks via instant coffee)
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 425º F.
  2. Place cupcake liners in muffin tin. Spray lightly with cooking spray.
  3. Combine hot coffee and cocoa powder. Mix well to dissolve and set aside.
  4. In bowl of stand mixer, combine flour, sugar, baking powder, baking soda, and salt with paddle attachment.
  5. In a separate bowl, combine milk, oil, egg, and vanilla. Mix well to combine.
  6. Add about half of the milk mixture to the flour and mix on medium high speed for 2-3 minutes until light and fluffy.
  7. Combine the chocolate mixture with the remaining milk mixture and add to the batter. Mix with batter on medium speed for about 30 seconds, scraping sides of bowl before turning mixer on.
  8. Distribute batter evenly to the 12 muffin cups. Batter will be very wet.
  9. Bake in preheated 425 degree F oven for 5 minutes, then reduce heat to 325 F without opening the oven door. Continue cooking at lower temperature for an additional 13-15 minutes until a toothpick inserted in the middle comes out clean.
  10. Remove from the oven and transfer cupcakes to a cooking rack as soon as they're cool enough to be touched.
  11. Prepare buttercream frosting according to instructions or your other favorite frosting... or just devour it plain!

I know. I know. Christmas is still over a month away and here I am posting Christmas cookies! Wanna know what’s even more weird? When you have a food blog, you make your Christmas cookies in October (if you’re organized) because you have to allow yourself time to edit the photos, write the post, and get it posted in time for people to actually see it before Christmas. Gone are the days when I do my Christmas baking the week before Christmas, while smelling my tree under the twinkle of the lights. Now, I just think of myself as being unusually proactive!

These little shortbread cookie bits are super fun for a few reasons. First, you get sprinkles throughout the dough as well as on top. Who wouldn’t love that? Second, you get a TON of cookies out of this one batch. Third, they’re small, so that mean’s they’re pretty much guilt free {sarcasm}. And lastly, you can change out the color of the sprinkles so that you can make these for any occasion! Think pink or blue or a combination of both for a baby shower, or just colorful sprinkles for a birthday.

This is what the little cubes of dough looks like. I prefer to cook on a stone and by the time they’re done cooking, they are evenly browned all around, not just on the bottoms.

The almond extract gives these little cookies the perfect flavor and the fact that they are eggless means you can eat the batter. Who am I kidding? Yields: 100 cookie bites
Ingredients
  • 1 cup unsalted butter, room temperature
  • 2/3 cup granulated sugar
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 5 tablespoons sprinkles, divided
Instructions
  1. Line a baking sheet with parchment paper.
  2. In the bowl of a stand mixer cream together butter and sugar until well combined. Mix in almond extract and vanilla. With mixer set on low speed slowly add in flour and salt and mix until combined. Add in half of the sprinkles (set remaining half in small bowl) and stir to combine.
  3. Press dough into a half inch thick layer on prepared baking sheet. Cover surface of dough with plastic wrap and chill in refrigerator for at least an hour (can be overnight).
  4. To bake, preheat oven to 350 degrees F.
  5. Cut dough into 1/2-inch squares using a large sharp knife. Gently press each cube into the bowl of sprinkles to get more to stick to the top. Set cubes on ungreased baking sheet (note: they won't spread much if the dough is cold so you can squeeze a lot on). Bake in preheated oven 8 - 12 minutes and cool baking sheet.
  6. Store completely cooled cookies in an airtight container at room temperature.

There’s this one New Year’s Resolution I make every single year and I have yet to fulfill it. At the beginning of each year, my goal is to send all of my relatives and close friends a birthday card on or before their birthday. I’m not talking about a quick Facebook “happy birthday” note on the day of because it showed up in your feed, nor am I talking about a belated email asking how they had a great birthday. I’m talking about a real genuine I-value-you-so-much-that-I-thought-ahead-to-make-you-feel-good-on-your-birthday card. So I came up with an idea.

Well, two ideas actually. First idea was to stock up on cards so that I had a supply at the ready. Second idea was to make cookies! All this thinking about birthdays made me want to throw together a quick fun little cookie that I could send in the mail with said birthday card. So what I’ve done is made a list of all the grandparents, brothers, sisters, husbands and wives of brothers and sisters, all nieces and nephews, and a couple of my dearest friends. I’m going to write each of their cards ahead of time, address the envelopes, and stick a forever stamp on it. Then, I’m going to put them in a box by date order. I’ve done something similar to this in the past and still failed because I forgot to get them in the mail. So here’s how I’ve remedied that issue: My husband is much more responsible and organized than I am with things like this. I’m putting little sticky notes on the cards saying when to mail them (which is about a week before the birthday) and I’m making it his job to pop them in the mail at the right time. I’ll do the ahead-of-time work and he’ll do the real-time work. Sounds like a good plan and division of labor, eh?

I have to admit, the cookies turned out pretty darn awesome. I already had the sprinkles in my pantry and the dough only took a few minutes to put together. This control-freak-in-the-kitchen kind of a mom even let her daughter make them because it was kind of a no fail recipe and there was no chilling of the dough or rolling out with a rolling pin required. Now, the only thing I need to decide is whether we’ll package these up and send them out with one of the cards or eat them all ourselves because getting the card in the mail is what counts <insert sinister grin>.

I dunno… perhaps I should give the cookies away. I’d be pretty thrilled to open up a card like this along with a stack of colorful cookies.

Yields: 30 cookies
Ingredients
  • 8 Tablespoons unsalted butter, softened to room temperature
  • 1 cup granulated sugar (I used ultrafine baking sugar)
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 cups cake flour (I'm sure all purpose would be fine too)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sprinkles, for rolling
Instructions
  1. Preheat oven to 350 degrees F. Line cookie sheet with parchment paper or silicone baking mat.
  2. In the bowl of a stand mixer using the paddle attachment, cream the butter and sugar together on medium speed until light and fluffy, about 3 minutes. Add the egg yolks, vanilla extract, and almond extract and beat until well combined for about a minute, scraping sides as needed. In a separate bowl, combine flour, baking powder, and salt. Mix into butter mixture until a dough forms. You may need to do the final mixing by hand as the dough will be thick.
  3. Roll dough into teaspoon sized balls and then roll dough balls in the sprinkles. Cookies will spread thin as they cook so make sure they're spread about 2 inches a part. Bake in preheated oven for 9-11 minutes and remove when set but not yet turning brown.
  4. Allow cookies to remain on hot baking sheet for a couple of minutes and then transfer to wire cooling rack. Store in airtight container.
