Perhaps it’s because we get stuck in a rut where we just put the standard fixin’s on our burgers or we get bored dipping our fries in plain old ketchup. Ask anyone – fry sauce makes most things better. Its a proven scientific fact. Know what else people love? Bacon & jalapeno!

Much like peanut butter & jelly, chocolate + wine, and chips & salsa, bacon was pretty much made to be paired with jalapeno. Let me rephrase. Bacon is perfectly fine on its own. Rather, jalapeno was made to be paired with bacon. Yeah, that’s better.

I feel kind of funny giving you a recipe for fry sauce because it’s mayonnaise and ketchup. We don’t really need a recipe for that, now do we? I suppose the point of this post is more of an idea than a recipe. Because, after all, you can change the quantities of each ingredient and still have something delicious to dip your fries in or smother your burger in.

Speaking of burgers, this is actually a burger that is made of 50% grass fed ground meat and 50% ground up applewood smoked bacon. Yes, you read that right. I fed my family beef and bacon burgers for dinner on a white bun with french fries and fry sauce. Before you brand me as the worst mother ever, I’ll have you know that my kids each drank a glass of freshly pressed juice made from beet greens, apple, carrot, lemon, ginger, and pomegranate seeds before dinner. It’s all about balance, amIright?

Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons cooked crisp bacon, minced
  • 2 tablespoons fresh jalapeno, minced
Instructions
  1. Mix all ingredients together and serve immediately. Use as a dip for fries or onion rings or as a spread for sandwiches and burgers.

After I made this recipe, I would actually dare to say that I loved it.

These Buffalo Cauliflower Bites taste so much like traditional chicken wings, but are a healthy vegetarian version perfect for a light snack.I paired my spicy and flavorful buffalo cauliflower bites with a rich and creamy blue cheese dressing as well as some cool, crisp celery sticks that helped mellow the heat from the hot sauce.  Overall, it made a healthy snack. I’m not going to lie – I love a good chicken wing. But, when you think about all that delicious skin that makes the chicken wing so wonderful, replacing it with something like cauliflower is often a good choice.

Ingredients
  • 1 head cauliflower
  • 1/2 cup flour
  • 1/2 cup water
  • 1 T olive oil
  • 1 T garlic powder
  • 1/2 tsp salt
  • 2/3 cup (5ml jar) hot sauce (I prefer Frank's Red Hot)
  • 2 tablespoons butter, melted
Instructions
  1. Preheat oven to 450 degrees F. Heavily grease baking sheet with butter. Divide cauliflower into bite sized chunks.
  2. In a large bowl, combine flour, water, olive oil, garlic powder and salt until well combined. Add cauliflower and gently toss to coat each piece evenly. Transfer coated cauliflower to prepared baking and bake in preheated oven for 15 minutes, turning once halfway through cooking time. Remove from oven.
  3. In large bowl, combine hot sauce and melted butter. Add partially cooked cauliflower and gently toss to evenly coat. Return cauliflower to baking sheet and continue cooking for an additional 20-25 minutes, turning once, until pieces start to turn golden brown.
  4. Remove from oven and serve warm with blue cheese dressing and fresh celery sticks.

I adore salmon. In fact, I hadn’t realized how many salmon recipes I actually had on my own blog until I did a quick search. I suppose living in Portland, Oregon, has spoiled me. I also love little appetizers that can be enjoyed in two attractive bites or shoved entirely in my mouth when no one is looking. I love these little crostinis because they really couldn’t be easier to make, but they’re just so darn pretty! Doesn’t garnish make everything better?

I modeled this recipe after my smoked salmon dip which is the food equivalent to crack, in my opinion. Seriously, don’t put that stuff in front of me because I will shock and awe everyone around me when they see how much salmon dip I can consume.

Similar to my dip, this recipe has cream cheese, fresh dill, a little kick from fresh jalapeno, and lemon juice. If you’re eating salmon, you must have lemon and dill. That’s just a fact. Don’t even try arguing with me. I also do love me some capers with fish. All the flavors blend together oh-so-perfectly.

Yields: 2 dozen
Ingredients
  • 1 baguette, sliced 1/4 inch thick
  • 2 tablespoons olive oil
  • 5 ounces wild smoked salmon
  • 8 ounces cream cheese, room temperature
  • 1 jalapeno, minced
  • 4 sprigs fresh dill, stems removed and minced
  • 1 lemon, juiced
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon salt
  • Garnish with capers and more fresh dill
Instructions
  1. Preheat oven to 350 degrees F. Coat both sides of bread slices with olive oil. Arrange in single layer on baking sheet and bake in preheated oven for 15 minutes, turning after about 10 minutes. Allow to cool.
  2. Arrange toasts on a platter with a piece of salmon on top of each one.
  3. In a small bowl, mix together cream cheese, jalapeno, dill, lemon juice, garlic, and salt. Either spoon a small amount on top of each crostini or squeeze out of a plastic bag with the corner snipped off.
  4. Top with capers and additional dill.

Even I couldn’t resist when I was making this. I made a very poor decision to make them when I was pretty hungry, and the result was me burning the roof of my mouth because I shoved one in my face a few minutes before I should have because I simply couldn’t wait.

Let’s just talk about how easy these are to make for a minute. All you have to do is cut the kielbasa into equal sized pieces. I always welcome math and geometry challenges in the kitchen when I’m cooking. Same thing with the dough, and there’s just something satisfying about cutting puff pastry with a pizza cutter. Call me crazy, but that was my favorite part.

Then you wrap each little piece of meat up with a strip of dough and bake. I don’t even bother with an egg wash. How else could I have called these two ingredient wrapped kielbasa bites, after all?

Yields: 18 pieces
Ingredients
  • 1 (12 ounce) kielbasa
  • 1 pre-made puff pastry sheet
Instructions
  1. Cut kielbasa into 18 even sized pieces. Start by dividing in half, then each half into thirds, then each chunk into thirds.
  2. Cut puff pastry into 18 even sized strips. Do this by first rolling out puff pastry to flatten a bit but still maintain the square shape. Then, cut the square into three long strips, then cut each strip into thirds, and finally cut the length of each of those strips in half.
  3. Preheat oven to 400 degrees F.
  4. Wrap each piece of kielbasa with a strip of dough. If dough is not sticky enough to seal on its own, you may wet your fingers with water to help it seal. Put each piece, seal side down, on a baking sheet.
  5. Bake in preheated oven for 20-22 minutes, until golden brown.
  6. Serve warm with stone ground mustard. Any remaining appetizers can be stored in an airtight container in the refrigerator.

Have you seen Stranger Things on Netflix yet? If yes, I’m sure binge watched it just like we did. If not, boy do I envy you because you have hours of binge watching yet to come. I knew this show would be awesome right from the opening scene. Everything about that first episode brought me right back to the early 80s. The next day at work, I heard some co-workers talking about this awesome new show they started watching and low and behold, they were talking about the same show. One of the main things that really stood out in the show was how true to form they stayed to the time period, from the casting to the set design and wardrobe right down to the font of the title in the opening credits.  So many people were fascinated by the same thing they ended up making a very short documentary explaining their process in creating it. I’m pretty good at photoshop, but I know making my title look like the show’s would take some time and effort. When I searched for what the font was called, can you believe that the creative minds behind the title sequence actually made a website where you can type in whatever you want and it will create it for you?  Check it out!  http://makeitstranger.com  That alone saved me a ton of time and I know whatever I came up with wouldn’t look half as good.

Sometimes I share my husband’s post ideas with you. He rarely reads my blog (probably because he hears me talk about food non-stop and doesn’t need to read about what we just ate for dinner last night). My guess is that he’ll actually read this post because it was his idea. He comes up with a lot of crazy ideas, but every so often he thinks of something that I think is clever. He said “you should do something Halloween related but play off of Stranger Things. What could you do… Stranger Strings (like onion rings)…  We thought about it for a minute and came up with Stranger Wings because I could easily make chicken wings look like bat wings. Gross, but everything about Halloween should be a little bit gross and creepy, right?

I’m really not a fan of artificial coloring. In fact, I do my best not to buy any food that has any and am so happy to find more and more foods colored naturally with things like beet and tumeric. There are two exceptions where I make an exception – Halloween and Christmas. There are so many Halloween treats that just need to be colored orange or black and you can’t get away from coloring a few Christmas cookie frostings with some red or green (I am working on using only natural stuff this Christmas, though).  These wings simply wouldn’t look like bat wings if they didn’t have a little help from that food coloring.

I used one of my favorite marinades that’s a combination of soy sauce, toasted sesame oil, garlic, ginger, and green onions. I use it as a salad dressing, a marinade, heck – I almost want to put it in a glass and drink it – its that good.  I let these wings soak overnight. Not sure that’s necessary to really let the color do its magic, but I just ran out of time and had to cook them the next day. These would be so fun to set out at a Halloween party alongside some Vampire Cocktails, Witches’ Brew, Spider Cookies, and all those other spooky treats that make Halloween parties so much fun. Enjoy!

Ingredients
  • 6 whole chicken wings (I used a 1.81 pound package)
  • 1/2 cup soy sauce
  • 1/4 cup toasted sesame oil
  • 1 tablespoon packed brown sugar
  • 2 teaspoons fresh ginger, minced
  • 2 cloves garlic, minced
  • 5 green onions, minced
  • 1/2 teaspoon black food coloring
Instructions
  1. Combine all ingredients in a gallon sized resealable bag and marinate in refrigerator for at least an hour up to over night (I soaked mine over night).
  2. Line a baking sheet with parchment paper and preheat oven to 375 degrees F.
  3. Shake off excess marinade and line wings in a single layer on baking sheet. Discard marinade. Bake wings in preheated oven for about 45 minutes or until the meat is tender and begins to pull away from the bone.

Ingredients
  • 1 (17 ounce) package Pacific Foods Polenta
  • 2 tablespoons olive oil
  • 1 cup whole milk ricotta cheese
  • 2 heirloom tomatoes, sliced into small chunks
  • 10 fresh basil leaves, sliced into thin ribbons
  • Jacobsen Black Garlic Salt and freshly ground pepper
Instructions
  1. Remove polenta from package and use a sharp knife to cut 12 slices.
  2. Coat each slice with olive oil and grill over medium high heat for about 5 minutes each side. This can be done ahead of time or just prior to serving.
  3. Add ricotta cheese to a plastic bag and snip off the corner to easily pipe a layer onto the grilled polenta squares.
  4. Mix the tomato with the basil and spoon on top of the ricotta cheese.
  5. Season with salt and pepper, as desired.

Ingredients
  • 2 15-ounce cans of chickpeas, drained, rinsed, and dried
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons finely chopped fresh rosemary
  • 2 tablespoons finely chopped fresh thyme
  • 1/2 teaspoon kosher salt (more depending on preference)
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
Instructions
  1. Preheat oven to 400º.
  2. To best dry the garbanzo beans, lay out on a clean dish towel and allow to air dry completely. This may take up to a day however I took a fan and blew it over them because I didn't want to wait. The more moisture they have, the less crispy they will roast up, so be sure to dry them the best you can.
  3. Toss the chickpeas with oil, herbs, and seasoning. Spread on a large baking sheet and bake, uncovered, for 45 minutes, or until golden brown and crunchy.
  4. Serve immediately or store in an air tight container for a snack later.

Who doesn’t love shrimp? For that matter, who doesn’t love a tasty little two-bite appetizer? Well, if the general population is anything like my family, then they will love these tasty little treats.

This recipe starts with little tortilla rounds that you cut out from corn tortillas. Don’t throw away the scraps! Just put them back in the bag and fry them up for a different meal. Aren’t they cute?

Next, add some refried beans. The shrimp is amazing. Kind of crazy what a little butter, garlic, and spices can do to wild caught shellfish. Stack them up with some avocado and a squeeze of lime and watch them fly off the platter!

Ingredients
  • 15 corn tortillas (1 tortilla per shrimp)
  • 1/2 cup vegetable oil
  • 1 cup refried beans
  • 1 cup mild salsa
  • 1/2 large avocado
  • 10 ounces raw jumbo shrimp, shells and tail removed, deveined
  • 2 tablespoons oil
  • 1-2 cloves garlic, minced
  • 1 teaspoon chili powder
  • cilantro and fresh lime, for garnish
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
Instructions
  1. Using a round 3" cookie cutter or the rim of a glass, cut enough tortilla rounds for the amount of shrimp you have. Save tortilla scraps for another meal.
  2. In a heavy 9" skillet, heat oil over medium high heat. Once the oil is hot enough where a small piece of one of your scraps boils when added (this is a good way to test), add a single layer of rounds and fry on both sides until golden brown, 2-3 minutes per side. Drain on a paper towel.
  3. Add a small amount of beans to each tostada round. You can spoon them on, but I added them to a sandwich bag, snipped off the corner, and piped them on like I would frosting.
  4. Spoon a layer of salsa on top of the beans.
  5. Thinly slice the avocado and add some to each tostada.
  6. To cook the shrimp, discard the oil from the tortillas (just pour it out, no need to wipe the pan). Over medium high heat, melt the butter with the chili powder, cumin, and salt. Add the shrimp in a single layer and cook until the tops start to look a very opaque pink, 4-5 minutes. Turn them over and continue cooking another 2-5 minutes until cooked through. Remove from heat and place one shrimp on each tostada.
  7. These appetizers can be eaten cold or, if preferred, warm in 300 degree F oven for 10-15 minutes until heated through prior to serving.

I’m not gonna lie – this recipe was good. Like, really good. As in, I just made it and I already can’t wait to make it again.

The foundation of this recipe is Mezzetta peppers. I used both the Deli-Sliced Tamed Jalapeno Peppers as well as the Roasted Bell Peppers. Mezzetta truly is one of my favorite brands and I’ve loved every single one of their products that I’ve tried, from their pasta sauce to their olives to these peppers. Those roasted red peppers are darn near perfect – they have the perfect amount of charred roasted flavor and also have the perfect ratio of tasty oil marinate to tender flavorful peppers. They are the best I’ve ever had!

This recipe has two components – the roasted shrimp and the homemade aioli. So many aioli recipes have you combine ingredients with already made mayonnaise. I much prefer to make it myself. The components of a homemade aioli are egg yolks, lemon juice, garlic, and oil. I added some of the Mezzetta Jalapenos and even more of the Roasted Red Peppers and it created the most flavorful and delicious aioli. Keep in mind that this recipe makes quite a bit of aioli – much more than you need for the shrimp. That is a very good thing, however. We’ve been using it as a spread on our sandwiches and my-oh-my does it provide an insane amount of flavor. YUM!

For the shrimp, I used a recipe idea I found from the Mezzetta website. They recommended to use the brine from the red peppers, along with some fresh rosemary and garlic, to marinate the shrimp. This, alone, was a fantastic recipe. The shrimp had the perfect amount of flavor to eat on their own or on top of something like a salad. The rosemary made them especially visually pleasing.

Shrimp is so darn easy to cook. I highly recommend this recipe to serve for dinner, perfect for enjoying while dining al fresco, or as an appetizer. Either way, I guarantee people will love them and will be begging you for the recipe!

Ingredients
Aioli:
  • 6 large cloves garlic, peeled
  • 2 egg yolks, room temperature
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon kosher salt
  • 1/2 cup Mezzetta® Roasted Bell Pepper, drained and chopped (Reserve brine for marinade)
  • 1 tablespoon Mezzetta® Deli Sliced Tamed Jalapeno Peppers
  • 3/4 cup olive oil
Grilled shrimp:
  • 1 pound large shrimp, washed, deveined, tails left on
  • 3 cloves garlic, minced
  • 1 tablespoons fresh rosemary, minced
  • roasted red bell pepper brine
Instructions
  1. Place the garlic in a food processor and pulse until finely chopped, stopping to scrape down the sides as needed.
  2. Add the egg yolks, lemon juice, salt, roasted red peppers, and jalapenos and process until well combined. Scrape the sides.
  3. While the machine is still running, add the oil in a thin, steady stream until it is completely incorporated and the mixture is thickened.
  4. Taste and adjust the seasoning if necessary. Refrigerate until ready to use.
