I’m all about easy cocktails. Sure, I’ve had some tasty treats that were more like a complicated chemistry experiment to create, but the busy-me loves the pour-it-into-a-glass-and-enjoy kind of a cocktail. I will tell you, though, that I’m not a huge beer fan, especially dark beers. I want to like them, but they are just too bitter for my liking. I love to cook with beer, but maybe someday when I grow up I’ll like drinking them. I do, however, love champagne. Before this drink, though, I had never opened a champagne bottle on my own. Perhaps my phobia has to do with the fact that I grew up in a little mountain community with an elevation of 6500 feet, but I am completely afraid of opening champagne bottles as well as those tubes of peel-and-pop biscuits. They scare the dickens out of me. I was so proud of myself when I overcame my fear and actually got this bottle open without hurting myself or having an anxiety attack.
I was also pleasantly surprised that I thought this drink was good. The champagne totally mellowed the bitterness of the beer. The entire drink was smooth and quite good. I served this one to my husband during dinner to accompany some bangers and mash and some Irish cheddar stout bread. I suppose I’m getting in the mood a wee bit early for St. Patrick’s Day. Get it? A wee bit? You just have to picture me saying that like an Irishman. Man, I’m funny.
- 5 ounces champagne
- 5 ounces stout (I used Guinness)
- Combine champagne and Guinness in a glass. Use a chilled glass if you can. Give it a stir and enjoy!
