Crisp bacon, spicy fresh jalapeno, and beer make this Bacon Jalapeño Football Fondue an absolute game day favorite and is everything comfort food should be.

This amazing warm cheese dip puts me at a loss for words.  Me, of all people!  Can you believe it?  I’ve been dreaming of making this and have been planning exactly what would go in the recipe for weeks now.  As you know, I’m a total food snob and won’t put velveeta into my feeding hole.  I won’t do it.  I apologize to all the velveeta lovers out there, but its disgusting.  I had to improvise with ingredients that I approved of that would give my Football Fondue a velvety creamy texture without having to add orange processed cheese log.  I realized that a combination of cream cheese and beer would do the trick.  I mean, I called it Football Fondue so that people would make it for their game day grub.  Why wouldn’t you use beer, am I right?  It turned out so wonderfully delicious that I devoured politely ate everything you see in the photo above, along with the ends of the baguette that didn’t make it into the photograph.  I was quite the pig, and I’m not ashamed to admit it.

I’ve made a few other game day treats.  I must tell you, I think the last time I’ve been to a football game I was in highschool (I refuse to admit how many) years ago, so the wonderful world of tailgating is something I enjoy vicariously through my friends who are big time football fans.  I am, however, plenty happy to make and serve up game day grub like damn good roast chicken, oven baked rosemary garlic fries, and chipotle aioli to just name a few, at our house for a regular old dinner. Are you ready for me to blow your mind?  The other night I wanted to make a quick and easy family dinner.  I pounded a few chicken breasts nice and thin and made some parmesan herb chicken.  The beautiful part of this story is that I made said chicken on the same day that I made my Bacon Jalapeño Football Fondue.  What happened next was pure magic.  I felt like I had died and gone to foodie heaven.

Bacon Jalapeño Football Fondue

Equipment

Ingredients 

  • 8 ounces bacon ends and pieces
  • 2 large jalapenos minced*
  • 8 ounces cream cheese
  • 16 ounces sharp cheddar grated
  • 12 ounces beer

Instructions 

  • In large stockpot or dutch oven, cook bacon ends and pieces. If cooking an entire 16 ounce package, you can save half the bacon for an omelet or to top a twice baked potato, or you can go all out and double the amount I suggest in this recipe.
  • Set bacon aside to drain, and discard all but 1 tablespoon of bacon grease.
  • Over medium heat, saute the jalapeno until fragrant, about 3-5 minutes. Reduce heat to low and add the cooked bacon, cream cheese, sharp cheddar, and beer. Continue to stir until all the cheese is fully melted.
  • Serve immediately. Football fondue is best kept warm up to the point of eating, so use a slow cooker on the warm setting and let people dip right in.

Notes

* you can definitely add more jalapeño if you want more heat.
